The crust will have pepper for sure, some people use a different spice mix. Corriendor is typical. The cooking method is smoking. Everybody uses different wood. I have heard cherry, apple, hickory, maple. Lot of options. It should have a smokey taste and a bit spicy. The black pepper taste should be there. It can taste a bit different every time. Most delis will have their own secret recipe. The Mike's version is pretty good.
I have had both versions. The Chipotle on Rosemary Parm is far superior. No pickles. The mustard and pickle version does not work for me. The meat taste gets lost. Pastrami is a meat the needs less, not more items on it.

the capistrami from capriotis is also good, they make it with tri colored slaw mixed with thousand island and I believe swiss cheese
That is more of a Rueben, not a Patrami sandwich. It probably is great. Never had it. Rueben is a classic.
