I made something like this a few weeks ago when the weather started to dip a bit, only instead of short ribs, I used beef cheeks. HIGHLY recommended. Thanks for all the good recipes, Matt!
I know I may get destroyed in the comments but I put short ribs in my chili recipe and they are amazing. Getting one of those chunks on a spoon of chili or on some cornbread is delicious.
Made short rib risotto a couple of weeks ago. Braised in beef stock and red wine for 10 hours in the crock pot. So good that i am making the same for my extended family for Christmas Eve dinner.
I'm a huge fan of the Blanco seasoning. I've been putting it on *EVERYTHING* this year. Stocking stuffers for everyone! This looks amazing, can't wait to try it out.
I love smoked braised short ribs. Chef Michael Chiarello did a wine braised short rib recipe in similar fashion. He cold smoked his ribs for a few hours before browning and then braising. Thanks Matt, love your recipes
Matt I just wanted to say thanks for all of these amazing recipes you share. 80% of my rubs are Meat Church. Not because I'm a fanboy, but because your quality is unmatched. Not sure what your professional background is, but the quality of food you make in your videos is top notch. Thank you and god bless (Eagles fan, so I must love your stuff for real hah)
Matt, Thanks for going out of your way to make these videos, I've made a few of these meals for my family and they've loved em! Ironically enough, raised to use a wooden spoon too! Which back in the days of being an ornery kid, didn't make them my favorite item ever. Anyhow, I think you and Chef Cuso should have a cook off, you guys are my favorites out of the TH-cam World 🌎, and I've learned a lot from both of you.
It's 9AM and I am now craving this LOL! Def adding to the list. And you do always respond/engage with us, and I appreciate it. Also - the Hickory rub has quickly crept up in my go to rubs. Did direct heat ribs with it last weekend, a total success.
Looks great! My son gave me his recipe and cooking process for his short ribs about two months ago. It’s a little different but really similar and they are great with garlic mashed potatoes and garlic green beans! Awesome way to have them! Cheers!
Another home run Matt. I have guests coming to my house for the holidays and this is going to be a smash hit. I have a Recteq pellet grill and can let this go all day so we can eat it for dinner. Thanks again for everything that you and your crew do.
Super yummy! I add mushrooms with mine & eat it over polenta instead of taters. MC garlic & herb is what i use most of all- mostly as a late add on or finishing dusting- always gives another layer of flavor
Matt, you were reading my mind when you said make this for your wife! I’ll get to this in a few weeks when we have time away from sports. I’m really liking these videos where you’re cooking with alcohol, as the depth of flavors the food gets is usually incredible. Happy Holidays!
Classic recipe for short ribs and mashed potatoes! What could be better? Maybe start with a plate of short ribs and smoke it? Braise in red wine is never wrong. Smoker? Oven? Crockpot? Instantpot? All good! Looking forward. to more week night recipes!
Small world. Just made a version of this this last weekend. It’s comfort food season! Great stuff Mr Pittman your “Every man” style of video content is top notch!
I have watched your channel for a while and have used your seasonings and tips in a lot of recipes. My wife meal preps for our busy family and this looks like a great recipe that we could prep and turn into to dinners and lunches for our week. I look forward to trying this one.
I’ve been wanting to try braised ribs on the smoker for a while…no excuses now! I like to make extra braising liquid and keep it in the freezer. Add a tablespoon or so to mushrooms when I’m cooking them for steaks. Mmmmm so tasty
LOL! At 10:36 "You could gum that!" This was hard to watch in the middle of the day at work - my mouth is watering so bad now! Excellent Video - Thanks!
Good one Matt, I love wine braised short ribs. Over mashed taters or polenta....it's awesome! For a change of pace, I sometimes will either smoke them first for a couple of hours, and then pan sear and press on. Or sear them on the grill( but you loose the pan scrapings ). Either adds a little smoke flavor. Pretty hard to go wrong with short ribs.🍻
OMG MP, brings back memories of a kid when mom would braise a chuck roast and have veggies in there as well served over mashed taters!! Awesome vid, as always! Love the content.
My wife has been making roast just like that for years The only difference she does is adds a table spoon or two of flower to the vegetables before the wine Makes more of a gravy for the potatoes later My favorite meal ever
New subscriber by way of your grilled salmon video from 3 years back. Made that for the family on new acquired pellet grill and as you said, we weren't mad at it. Lookin forward to many more of your recipes. Hoo-yah!
It’s definitely a delicious recipe. I would just save my pellets and cook on my oven. Blanco is one of the few MC seasonings missing in my pantry. Keep it up, Matt.
Ok, that's another one I'm going to HAVE to make, looks delicious! I made the Magnum Loads for deer camp and they were a HUGE hit, so I'm sure this one will be a family favorite, too.
Thanks for the idea! I am looking for ideas for Christmas dinner that isn't your typical protein. Short ribs are hard to beat. This made it into the top 2. My other one right now is pork belly burnt ends.
I love your down-home way of running the channel. I also run a pellet grill, just to convenient to not take advantage of the technology. The turkey spice pack was excellent, nothing but positive comments this year. Will be making beef short ribs for sure. Thank for the videos.
Our family LOVES Meat Church seasoning blends. My favorites are Voodoo and Blanco, and when I mix them together, I call it The White Witch. It’s literally good on everything. You should try it in a video!! My husband would flip! Lol!
Just so you are aware but in an Italian household wooden spoons are used on the kids for attitude adjustments so I am dealing with a little trauma from that but I do love a good braised short rib. I usually put mine over some polenta.
@ Agreed! I first noticed it a few months ago in a video he did in his shop (maybe the video about what seasonings pair well with what meat) and that was the first time I saw his Submariner. I was used to his smart watch in most videos.
Perfect dinner for colder nights, i've done similar stuff with beef cheeks and works awesome! Hopefully I can come visit the best bbq supply store again in january. Keep up the good work!
So glad you posted this. I made my first batch of these over the weekend and they turned out great. My restock of your seasoning will land today. I have some leftover uncooked ribs in the freezer. I think we'll make your recipe this weekend. Keep up the tasty work. Oh yeah - is it possible for me to get a Dickies shirt with a "Matt" patch on it? - I'm a Matt too.
It'd be really interesting to see you cook in a kitchen that doesn't involve a pellet/offset. An oven, stove top, a griddle, etc. I know some of your fans don't have any access outdoors. I'm an apartment cooker myself and adapt these recipes. You always say adapt it. It'd be cool to see you adapt it yourself! Happy Holidays
Hey Matt! Definitely giving this one a try! Thoughts on an outdoor kitchen build video? Maybe a walkthrough of your set up out there? I know I am not alone when it comes to looking for ideas to build out my outdoor kitchen. Thanks for another great video! Going to fly out to see you guys someday. 👍
Thanks Matt, great recipe that I will definitely try. Perhaps as a future video, would you consider some tips on how to maintain/winterize your pellet grill/smoker? Up here in Maine unfortunately BBQ can be seasonal (although the garage can be tempting!)
I always make red wine braised short ribs and the hubs devours them!! Love it. Looks absolutely delicious! I have your apron in the gold/tan color but now I need to go buy the blue one! Dang!
Looks great. I use a similar recipe with osso bucco but smoke the meat for a couple of hours before the braise. I just sourced a couple of racks of Argentinian beef plate ribs. Will give this a try with one of the racks.
Drool! I've been looking at the shortribs at the meat counter for the last couple of months. this took me over the edge and will make this tomorrow! and i have a tub of Blanco in the cabinet. Oh.. btw, have started seeing all your rubs at my local publix in ATL. Love it, and it makes me excited to see you expanding and getting the precious shelf space! cheers
i love your videos ive done a few of your recipes and they all turned out amazing have you ever done a smoked stuffed round stake if now would love to see one
Just had short rib for the first time in my life two days ago at a wedding, it was one of the best things i've ever eaten in my life, it says it is brandied mushroom and caramelized onion ragu and I think it's an original recipe because I can't find it anywhere, so tender you could eat it by spoon and the flavor was amazing. For anyone in Texas it is from Hank's in downtown Austin but only on their catering menu, lame I know. If anyone can find this recipe please reply.
Ribs are good for EVERYTHING!
They are the most awesome straight up smoked, but anything made with rib meat is delicious.
Destroyed? Oh, hell no! Short ribs make awesome chili!
Absolutely cant go wrong with ribs in chili!
Thanks for the idea!
Made short rib risotto a couple of weeks ago. Braised in beef stock and red wine for 10 hours in the crock pot. So good that i am making the same for my extended family for Christmas Eve dinner.
Get a top sirloin roast and cut it into even chunks. At least, those roasts go on sale here a lot and is great for braising
sounds delicious!
Short Rib Risotto... why have I not thought of that???
I asked my wife if I could use one of her bottles of wine. I'm assuming it was 'no' by the amount of f-bombs that came my way 😂
😂
lololololol - same here. You gotta pop it, take a cup and pour her one fast
There you go making the mistake of asking.
I’m guessing you didn’t get any that night either 😂
@zubazub66 Mhmm sure. Original. Starving for some attention?
I'm a huge fan of the Blanco seasoning. I've been putting it on *EVERYTHING* this year. Stocking stuffers for everyone! This looks amazing, can't wait to try it out.
THANK YOU!!!!! It's our #1.
Agreed! I never thought Voodoo should be looking over its shoulder! 😂
I love smoked braised short ribs. Chef Michael Chiarello did a wine braised short rib recipe in similar fashion. He cold smoked his ribs for a few hours before browning and then braising. Thanks Matt, love your recipes

Great addition to the menu! Mr. Meat Church you are a treasure!
HAHA, tell my wife that for me David. ;) Thank you!!!!!

I've been told that we're having the MIL over next week. This will be perfect for a nice hearty family meal. And the wine will help keep me calm. :)
I’ve been wanting to try braised ribs on the smoker for a while…no excuses now!

haha, thanks!
Mushrooms would be a great addition to this as well. Those short ribs have gotten expensive in my area, but I might have to make some of these soon.
Good idea!
Its a standard irish stew. Use any beef you want but it has to be chunky. i do stout instead of wine. The ribs seem to look more plateable though.🙌🎯
I will give it a shot. You've never let me down. Another awesome cook and love Al the rubs🫡

I’m so glad you’re making those memories come back to life!
Looks great! I’ve been wanting to make this dish for some time now. I have Blanco too. Might be time to make it!

Blanco is the best. I really enjoy your recipes. Wooden kitchen utensils all day.
Cheers to that!

Bro, you're my hero.I'm gonna try this tonight. Thanks for the great content
Enjoy!!!
Having friends over for New Year's Eve. This will be the dish!! Thank's Matt!
That looks Delicious! I am going to make this when the Family comes for Christmas!
ENJOY!!!
Blanco seasoning a really good. Our family buys The Gospel seasoning by the truckload. It is absolutely the best seasoning there is. Well done!
Great cook, love me some short ribs. I appreciate you putting these on my mind.
New subscriber by way of your grilled salmon video from 3 years back. Made that for the family on new acquired pellet grill and as you said, we weren't mad at it. Lookin forward to many more of your recipes. Hoo-yah!

Love braised beef ribs! Winner! Winner! Winner!
That looks incredibly delicious!!!
I make braised short ribs every Christmas. Sooo good.
That is awesome!
It’s definitely a delicious recipe. I would just save my pellets and cook on my oven. Blanco is one of the few MC seasonings missing in my pantry. Keep it up, Matt.

GREAT option!
Looks awesome, Matt! Love your recipes and MC rubs!!!!
I love you!!!!!
Matt you should hold a “Meat and greet” at your store! Love following your recipes I use a ton of them on a monthly basis!
@_NoynuR Doubt that you do. You just want some attention, don’t you?
Creating a weeknight playlist would be amazing!
Excellent recipe, this is a definite must do!
I love your down-home way of running the channel. I also run a pellet grill, just to convenient to not take advantage of the technology.
The turkey spice pack was excellent, nothing but positive comments this year. Will be making beef short ribs for sure.
Thank for the videos.
I really appreciate you taking the time to comment Tommy. Great feedack. THANK YOU! -Matt
Blanco is amazing on my 2nd bottle gonna do the short ribs for sure thanks for the great video and seasonings
Our family LOVES Meat Church seasoning blends. My favorites are Voodoo and Blanco, and when I mix them together, I call it The White Witch. It’s literally good on everything. You should try it in a video!! My husband would flip! Lol!
Interesting!!!!!! I think I will do that. Thanks for the tip.
Just so you are aware but in an Italian household wooden spoons are used on the kids for attitude adjustments so I am dealing with a little trauma from that but I do love a good braised short rib. I usually put mine over some polenta.
I am making this next week for sure!
Keep me posted!
Digging the Yacht-Master II Matt!
He’s shown a few nice watches. I wish he’d do a video showing his growing collection.
@ Agreed! I first noticed it a few months ago in a video he did in his shop (maybe the video about what seasonings pair well with what meat) and that was the first time I saw his Submariner. I was used to his smart watch in most videos.
Looks great! Have to make it!
To reiterate what some other folks have said, a couple hours of smoke on the short ribs before braising would likely make it even better.
That’s what I was thinking as I watched the video. I’m definitely making them.
I like the weeknight playlist idea.
Perfect dinner for colder nights, i've done similar stuff with beef cheeks and works awesome! Hopefully I can come visit the best bbq supply store again in january. Keep up the good work!

We do not sell them with my name on them but it's common for people to make them with their name.
I already know it's going to be good. I love braised meat. All that gravy😊
You got that right!
That looks delicious
We have a bunch of your seasonings, and love your blanco. That stuff is great on everything!!
I have all of your products and Blanco is my absolute go to on Omelets, Smash Burgers and Grilled vegetables.
@EthanJaceJacob I take a piss everyday, but I don’t post it on TH-cam.
Great content. We appreciate you Matt. My wife and I recreate your content and their all winners
That is so awesome to hear!!! Thank you Chad!!
Going to try this over the weekend! I'm on the Blanco kick.🐮
You are going to make some happy people!
Another great recipe! Thanks!
Love the video, would love to see your merchandise available in Australia.
Never cooked anything before outside of an offset. This will be the first thing I try this weekend.
I do those in a pressure cooker for an hour and twenty…of course Slammed with BLANCO! Thanks Matt
Looks damn good, this will be next on the menu. We just got back from Fredericksburg, we love ron yates winery as well. Gold top cheers!
Awesome stuff! Going to try this out
Thanks Matt, great recipe that I will definitely try. Perhaps as a future video, would you consider some tips on how to maintain/winterize your pellet grill/smoker? Up here in Maine unfortunately BBQ can be seasonal (although the garage can be tempting!)
Man I need Meat Church in the UK!
Seen your pooch there waiting for you to drop something. Was watching you like a hawk!
Made the beef party ribs, excellent recipe! Will try this one next. Keep up the great work!
I love that. Thanks for being here!
I always make red wine braised short ribs and the hubs devours them!! Love it. Looks absolutely delicious! I have your apron in the gold/tan color but now I need to go buy the blue one! Dang!

AWESOME!!!!!
Looks incredible! Love it. Anything on mashed potatoes. I don’t much of seafood on your channel. Throw some fish on those mashed potatoes.
We used to make a dish call beef brasato in the Italian restaurant it's pretty much this. Boneless beef short ribs so good
Delish!
Drool! I've been looking at the shortribs at the meat counter for the last couple of months. this took me over the edge and will make this tomorrow! and i have a tub of Blanco in the cabinet. Oh.. btw, have started seeing all your rubs at my local publix in ATL. Love it, and it makes me excited to see you expanding and getting the precious shelf space! cheers
I love all of this!!!!!!! -Matt
i love your videos ive done a few of your recipes and they all turned out amazing have you ever done a smoked stuffed round stake if now would love to see one
Looks awesome. Sometimes i’ll shred it off the bone & make a short rib ragu over egg noodles.
Extra level, make your short ribs the night before. Reheat by searing off in a pan already fully cooked. Really tasty and get a nice crust on the rib
I'm totally doing this
Just had short rib for the first time in my life two days ago at a wedding, it was one of the best things i've ever eaten in my life, it says it is brandied mushroom and caramelized onion ragu and I think it's an original recipe because I can't find it anywhere, so tender you could eat it by spoon and the flavor was amazing.
For anyone in Texas it is from Hank's in downtown Austin but only on their catering menu, lame I know.
If anyone can find this recipe please reply.
They look lovely Matt. Have you ever skipped the searing process and tried a few hours in the smoke at 250 and then putting into the braising stock?
Looks amazing, I'd have done hot buttered egg noodles as the starch, but that's just personal preference
Holy hell this looks amazing
REALLY good!
Another good one, I liked your dog
