I know I may get destroyed in the comments but I put short ribs in my chili recipe and they are amazing. Getting one of those chunks on a spoon of chili or on some cornbread is delicious.
I made something like this a few weeks ago when the weather started to dip a bit, only instead of short ribs, I used beef cheeks. HIGHLY recommended. Thanks for all the good recipes, Matt!
Made short rib risotto a couple of weeks ago. Braised in beef stock and red wine for 10 hours in the crock pot. So good that i am making the same for my extended family for Christmas Eve dinner.

Super yummy! I add mushrooms with mine & eat it over polenta instead of taters. MC garlic & herb is what i use most of all- mostly as a late add on or finishing dusting- always gives another layer of flavor

I love smoked braised short ribs. Chef Michael Chiarello did a wine braised short rib recipe in similar fashion. He cold smoked his ribs for a few hours before browning and then braising. Thanks Matt, love your recipes

Looks great! My son gave me his recipe and cooking process for his short ribs about two months ago. It’s a little different but really similar and they are great with garlic mashed potatoes and garlic green beans! Awesome way to have them! Cheers!

Good one Matt, I love wine braised short ribs. Over mashed taters or polenta....it's awesome! For a change of pace, I sometimes will either smoke them first for a couple of hours, and then pan sear and press on. Or sear them on the grill( but you loose the pan scrapings ). Either adds a little smoke flavor. Pretty hard to go wrong with short ribs.🍻

I’ve been wanting to try braised ribs on the smoker for a while…no excuses now! I like to make extra braising liquid and keep it in the freezer. Add a tablespoon or so to mushrooms when I’m cooking them for steaks. Mmmmm so tasty
It’s definitely a delicious recipe. I would just save my pellets and cook on my oven. Blanco is one of the few MC seasonings missing in my pantry. Keep it up, Matt.

Our family LOVES Meat Church seasoning blends. My favorites are Voodoo and Blanco, and when I mix them together, I call it The White Witch. It’s literally good on everything. You should try it in a video!! My husband would flip! Lol!

My wife has been making roast just like that for years The only difference she does is adds a table spoon or two of flower to the vegetables before the wine Makes more of a gravy for the potatoes later My favorite meal ever

Looks great. I use a similar recipe with osso bucco but smoke the meat for a couple of hours before the braise. I just sourced a couple of racks of Argentinian beef plate ribs. Will give this a try with one of the racks.
I love your down-home way of running the channel. I also run a pellet grill, just to convenient to not take advantage of the technology. The turkey spice pack was excellent, nothing but positive comments this year. Will be making beef short ribs for sure. Thank for the videos.

Get a top sirloin roast and cut it into even chunks. At least, those roasts go on sale here a lot and is great for braising

Mushrooms would be a great addition to this as well. Those short ribs have gotten expensive in my area, but I might have to make some of these soon.

Its a standard irish stew. Use any beef you want but it has to be chunky. i do stout instead of wine. The ribs seem to look more plateable though.🙌🎯

To reiterate what some other folks have said, a couple hours of smoke on the short ribs before braising would likely make it even better.
