    I made something like this a few weeks ago when the weather started to dip a bit, only instead of short ribs, I used beef cheeks. HIGHLY recommended. Thanks for all the good recipes, Matt!

    I know I may get destroyed in the comments but I put short ribs in my chili recipe and they are amazing. Getting one of those chunks on a spoon of chili or on some cornbread is delicious.

      Ribs are good for EVERYTHING!
      They are the most awesome straight up smoked, but anything made with rib meat is delicious.

    Made short rib risotto a couple of weeks ago. Braised in beef stock and red wine for 10 hours in the crock pot. So good that i am making the same for my extended family for Christmas Eve dinner.

      Get a top sirloin roast and cut it into even chunks. At least, those roasts go on sale here a lot and is great for braising

    I love smoked braised short ribs. Chef Michael Chiarello did a wine braised short rib recipe in similar fashion. He cold smoked his ribs for a few hours before browning and then braising. Thanks Matt, love your recipes

    Thanks for going out of your way to make these videos, I've made a few of these meals for my family and they've loved em!
    Ironically enough, raised to use a wooden spoon too! Which back in the days of being an ornery kid, didn't make them my favorite item ever.

    Looks great! My son gave me his recipe and cooking process for his short ribs about two months ago. It’s a little different but really similar and they are great with garlic mashed potatoes and garlic green beans! Awesome way to have them! Cheers!

    Super yummy! I add mushrooms with mine & eat it over polenta instead of taters. MC garlic & herb is what i use most of all- mostly as a late add on or finishing dusting- always gives another layer of flavor

    Classic recipe for short ribs and mashed potatoes! What could be better? Maybe start with a plate of short ribs and smoke it? Braise in red wine is never wrong. Smoker? Oven? Crockpot? Instantpot? All good! Looking forward. to more week night recipes!

    I’ve been wanting to try braised ribs on the smoker for a while…no excuses now!
    I like to make extra braising liquid and keep it in the freezer. Add a tablespoon or so to mushrooms when I’m cooking them for steaks. Mmmmm so tasty

      Its a standard irish stew. Use any beef you want but it has to be chunky. i do stout instead of wine. The ribs seem to look more plateable though.🙌🎯

    Good one Matt, I love wine braised short ribs. Over mashed taters or polenta....it's awesome! For a change of pace, I sometimes will either smoke them first for a couple of hours, and then pan sear and press on. Or sear them on the grill( but you loose the pan scrapings ). Either adds a little smoke flavor. Pretty hard to go wrong with short ribs.🍻

    My wife has been making roast just like that for years
    The only difference she does is adds a table spoon or two of flower to the vegetables before the wine
    Makes more of a gravy for the potatoes later
    My favorite meal ever

    I love your down-home way of running the channel. I also run a pellet grill, just to convenient to not take advantage of the technology.

    Our family LOVES Meat Church seasoning blends. My favorites are Voodoo and Blanco, and when I mix them together, I call it The White Witch. It’s literally good on everything. You should try it in a video!! My husband would flip! Lol!

    Just so you are aware but in an Italian household wooden spoons are used on the kids for attitude adjustments so I am dealing with a little trauma from that but I do love a good braised short rib. I usually put mine over some polenta.

    It'd be really interesting to see you cook in a kitchen that doesn't involve a pellet/offset. An oven, stove top, a griddle, etc. I know some of your fans don't have any access outdoors.     Looks great. I use a similar recipe with osso bucco but smoke the meat for a couple of hours before the braise. I just sourced a couple of racks of Argentinian beef plate ribs. Will give this a try with one of the racks.

    We used to make a dish call beef brasato in the Italian restaurant it's pretty much this. Boneless beef short ribs so good

    Drool! I've been looking at the shortribs at the meat counter for the last couple of months. this took me over the edge and will make this tomorrow! and i have a tub of Blanco in the cabinet. Oh.. btw, have started seeing all your rubs at my local publix in ATL. Love it, and it makes me excited to see you expanding and getting the precious shelf space! cheers

    i love your videos ive done a few of your recipes and they all turned out amazing have you ever done a smoked stuffed round stake if now would love to see one

    Looks awesome. Sometimes i’ll shred it off the bone & make a short rib ragu over egg noodles.

    Extra level, make your short ribs the night before. Reheat by searing off in a pan already fully cooked. Really tasty and get a nice crust on the rib

    Just had short rib for the first time in my life two days ago at a wedding, it was one of the best things i've ever eaten in my life, it says it is brandied mushroom and caramelized onion ragu and I think it's an original recipe because I can't find it anywhere, so tender you could eat it by spoon and the flavor was amazing.
    For anyone in Texas it is from Hank's in downtown Austin but only on their catering menu, lame I know.
    If anyone can find this recipe please reply.

    They look lovely Matt. Have you ever skipped the searing process and tried a few hours in the smoke at 250 and then putting into the braising stock?

    Looks amazing, I'd have done hot buttered egg noodles as the starch, but that's just personal preference
