Excellent question :) Tapioca flour helps give the flatbread that perfect, soft, and chewy texture, similar to what you’d expect from traditional naan. It adds some elasticity, which is super important since almond flour can be a bit dense. Tapioca flour also acts as a binder, keeping everything together nicely, and helps the flatbread stay moist and fluffy instead of drying out. You can replace it with a gluten-flour blend (w/o xanthan gum) or all-purpose flour if you don't need it to be gluten-free. I hope this helps :)

You could also try replacing the tapioca flour with 1 tablespoon of coconut flour. It would add fewer carbs than the tapioca flour. I recommend trying a 1/2 batch of either one to test it :)

Mix the dough together and see if you get this same dough consistency as I get in the video. If the dough is too wet, add a little more flour at a time. They looks healthy and delicious. I would like to make it into soft and flexible naan bread. What is the approximate diameter would you recommend for each bread? Thank you for sharing.
Thank you! I made four 6" long naan breads with this recipe, and I think that's a great size. They were a little narrower than 6". Keep in mind that they are soft yet sturdy but do not have gluten like traditional naan bread. So they're not as 'pliable' and can tear when folded :)

If you use the bottom of a pan press it down on top of your parchment paper, it will flatten out your dough uniformly
