    I made it today!! Really best pancake recipe.. my husband said better than Mcd's. I converted it to grams and used oil instead of butter. total I made 5 big, 6 small pancakes. Thank you!!!
    • 120g All purpose flour
    • 115g Cake flour
    • 1 tsp Baking soda
    • 1 tsp Baking powder
    • ½ tsp Salt
    • 280g Greek yogurt
    • 245g Milk
    • 1 tsp Vanilla Extract
    • 2 Eggs, white and yolks separated
    • 15g Oil
    • 35g Sugar

    For those not familiar with "cake flour" (vs. other flours), it's about the level of protein and amount of gluten. For example, cake flour: low protein, less gluten, and has the softest texture. All Purpose flour: medium protein and moderate gluten. Bread flour. high protein, more gluten, and it has the hardest texture. The texture rating is based on how light and airy the end product is or should be. For example, you want vanilla cake light and airy, but you don't want your bread to have the consistency of vanilla cake. Also, some products, (like chocolate cake, carrot cake, and banana bread), will not end well if you use "cake flour" in the recipe. I'm not able to go to the stores in my area and purchase "cake flour." Ordering it online can cause shipping to be rather pricy also.
    Here is a substitute for "cake flour,"
    1. Measure out 1 cup of All Purpose flour and then remove 2 tablespoons.
    2. Measure out 2 tablespoons of cornstarch and add it to the flour.
    3. Sift the flour and cornstarch two times.
    Do not pack your "cake flour" into your measuring device when you're ready to use it. Sifting your mix aerates the flour and gives it an airy volume.

      Oh nice 👍...thank you for educating me ! Absolutely right, when I shop , cake flour is not in the shelf.stress baking ! Never knew so many people are becoming culinary skilled.... my recipe book has been expanding , now need another binder. Yea ..I am ole school. I can’t stand reading recipe from iPad screen .it doesn’t stay on the whole time . I need that paper version . It looks so good 😊. Gotta try tomorrow as a treat for my hubby . He loves blueberry pancakes.
      Btw , your little cutie pie is sooooo smart ! 🤔 hmmmm....let me test it with a small piece first😁😁😁. Then oh wow 😯, yummmmm.... the WHOLE thing goes it ! G😂😂😂

      So helpful, thanks so much for the clarification! I should also add that you CAN just use all purpose flour for this, and I did for years, but the cake flour will make it more tender so it's my new go-to.

    So we made this last night for dinner here in London, UK. 4 children have declared these the best pancakes they ever had! They were very fluffy and so easy to make and cook. I doubled the recipe and all were gone as soon as I cooked them. Thank you, this will definitely become a firm favourite in my house. The children are already asking for them again this morning :)

      Pailin's Kitchen what is whole milk yogurt? Is that the same as plain yogurt?

      @@tanjessica7032 Whole milk yogurt means that the yogurt has at least 2.8% natural fat level in it - not being skimmed off fat.

    Oh my god oh my god oh my god oh my god THESE ARE THE BEST PANCAKES. I just made them and I had to come back here to tell everyone that they neeeeeed to make these. SO fluffy and actually pretty healthy considering there are only 3 tablespoons of both sugar and butter. Even so, they have the perfect sweetness and fluffiness and tastiness that I am going write up a recipe to pin on my fridge right away as well. Thank you so much Pailin, this is the first recipe of yours that I have tried and will definitely revisit this channel.

    I made this pancake twice so far, it is really the best tasting pancake I have tried making so far. Only used all purpose flour. Light, fluffy, and not too sweet. Recipe is easy to follow, ingredients are simple and common. Thanks for posting.

    If you're having trouble with the meringue, there are several factors. Keep the eggs at room temperature for an hour before you begin. It's easier to separate an egg if they're cold, but not easy to beat the whites, so let them sit an hour to get to room temperature before trying. Add 1/4 teaspoon of cream of tartar (malic acid) to help give it lift. You can also use lemon juice, but you would need to use 1/2 teaspoon of it instead of the 1/4 of cream of tartar. Do not over-beat your eggs either. One of the best ways to ensure that you are not over-beating your eggs is to do it by hand and also beat them in a copper bowl. Lastly, humidity has a deleterious effect on the ability to beat your egg whites. It will make it impossible to achieve stiff peaks. It will remain fluid. It's the same when making divinity. Still, nice recipe for pancakes, but those are the only suggestions I can make for ensuring you get stiff peaks on your beaten eggs whites if you're having problems with it. Thank you for sharing.

    It's the best pancake I have ever had..very fluffy and melt in the mouth soft..I had halved the recipe and made cake flour with whole wheat flour. Used only this and no all purpose flour at all yet the result was awesome..my family loved it

    You truly have your act together in the kitchen. During the past lock down pandemic I was having a hard time finding regular flour. There was plenty of bread flour double 00 flour. I mixed half 00 flour with reg flour and didn't mix the end mixture a lot, just till blended to find it worked out just fine. My picky wife loved the pancakes.
    I found by mistake sour milk works great also. I don't throw away sour milk now.
    I use it instead of making butter milk and it works great results without the smelly rotten milk smell .

    Flipping is easier on a griddle. Great recipe by the way. I make my own Butter milk with regular Milk and 1 tbsp of vinegar or lemon juice and let it sit for 5 minutes. Also cake flour is same way, 1 cup AP flour and replace 1 tbsp of the AP with cornstarch.

    Made these twice already. They're the best homemade pancakes we've ever had. Simple to make. My son even reheated some in the toaster for dinner. It's a keeper. I used all AP flour, buttermilk & full fat yogurt.

    I’ve been watching your channel since the days of your tiny San Francisco apartment with the electric stove, and this is probably the most relaxed and relaxing episode I’ve ever seen. Really enjoyable to see in these stressful times. I actually found a bag of ap flour in the store and will make this for the kids. (As an historical side note, the late, great Anthony Bourdain disparaging referred to electric ranges as ‘Suzy Homemaker stoves,’ from a tacky 1970s era girl’s toy. Glad you have a proper gas range now!)

    Your baby is way toooo cute! Love his little fingers picking up the pancake. And don’t forget the Asian can’t-read-emotion when he approved (loved) of the pancake; didn’t show it with a smile, just stuff the whole darn thing in his mouth like you would take it away from him any second lol I will have to try this pancake recipe with my kids.     The very first thing you do before addressing any other ingredients is put egg whites, bowl, and beaters in the freezer. Go back to your recipe. Usually by the time you need to make the meringue the egg whites will have just begun to freeze around the edge of the bowl. Plug the beaters back into the mixer and make perfect meringue every single time.

    These are the best pancakes. So light, fluffy, & delicious. I tried your waffle recipe & it was very good but i used this batter in my waffle maker & they came out way better! Crispy on the outside & warm & fluffy in the middle. My wife & 4 yr old daughter love them too. Thank you! -Stan

    I once read on a baking blog somewhere that adding cream of tartar or lime juice to egg white help with fluffing up and stabilize it. I have been using this every time I make Japanese fluffy pancakes and chiffon cake.

    Loved the video Pai ! If you are serious about your pancakes (and have a family) you HAVE TO buy a square (or rectangular) griddle. Easily fits 4 pancakes at a time and much easier to slip your flipper under and to flip your pancakes. Our family has had the same trusty square cast iron griddle for 3 generations now and it still makes the best pancakes. Your recipe is very very similar to the Japanese "hot cake" recipe I learned (and love) while travelling in JP (big, fluffy, light & a tiny bit sweeter than traditional Cdn. pancakes). Yum !

    It’s sooo easy to replicate buttermilk by using 1 TBLS of an acid of choice (fresh lemon juice or vinegar, white or apple cider) add to one cup of milk in glass jar. Let set for 10 minutes whilst you prep, etc, cover jar tightly, shake shake shake, you now have lovely buttermilk. I’ve used it for years when out of buttermilk and it yields same results. 😋

    Yes. Finally. My mom used to put fruit flavored yogurt (she like Yoplait) on her pancakes. I've tried it and I love it. You are the first person that I have seen use yogurt as a pancake topping. Yeah.

    So I totally didn't have yogurt or cake flour but still wanted to try these so I made some modifications because quarantine!! Let me tell you, I'm the kind that just buys boxed pancake mix. I made these with 2 cups of all purpose flower and instead of the yogurt I used more milk. I did a total of 2 cups of a combo of milk and half and half (being adventurous here) and they taste AMAZING!!!! HOWEVER, I didn't get that fluffiness that she got and I figured I wouldn't but what the hay. 💁 I don't regret it one bit, they are absolutely yummy, but I will be on the lookout for cake flour and grab some yogurt the next time I'm at the store.     Looks lovely. Your baby is adorable. I love babies.
    Try this replace up to 1/3 if the flour with Buckwheat flour use a whole tablespoon of vanilla and definitely go with Dark Maple syrup & not the grade A Fancy go with Grade B, though they don't call it B anymore. They call it dark or robust.
    If you'd like to lighten it up a little and want to avoid lactose try Kefir.

    My favorite pancake trick is using 50/50 water and coconut milk as your liquids and then add little bit of green curry paste to neutralize the intense coconut flavour. It won't taste like coconut and it won't taste like curry. It'll just end up being a lovely slightly spicy pancake. It's sooooo delicious.

    I like to dip into maple syrup as I go too (or bring my tiny squeeze bottle to the table and drizzle every few bites) , so it's fun to see someone else do this too. I've also really appreciated having extra time in the morning for breakfast (no commute and let's be honest, less fuss with getting dressed and groomed for work). Coincidentally also just recently went to the trouble of whisking the egg white whisking for nice crispy and light waffles.

    I was using the same mixer and I had problems making meringue. So I went back to a regular 2 whisks electric mixer. I don’t know if that is your problem but I never had anymore problems making meringue. I hope it helps you!!
    BTW your pancakes are really EPIC as you call them TY.
