I made this cake and it's amazing, here are a few pointers for those who are interested: Substitutes for stout - sparkling water (for airier texture), water or milk For 3 6-inch cake tins half the batter For 3 10-inch tins times the batter by 1.5 Check in the ingredients that the mayo you use doesn't have savoury elements like paprika, garlic or mustard seed that would ruin the flavour of the cake. If you're using extra strong espresso remove a little bit before using as the espresso will overpower the chocolate. I'd personally skip the chocolate chunks, it doesn't add anything to the cake and ruins the soft texture with random crunches. Chocolate swiss meringue buttercream is the best for this recipe, none of that super sweet American buttercream. Callebaut is an amazing and super rich chocolate powder to use, they do chocolate chips too (the 54% tastes amazing melted into the buttercream). I used simple syrup a couple of times doing this recipe and it just weighed down the cake and made it dense. Cake recipe in grams: 180g - Flour 120g - Dutch processed cocoa powder 1tsp salt 1.5tsp baking soda 0.5tsp baking powder 400ml milk 1tbs vanilla 1tbs espresso powder 226g unsalted butter 300g sugar 3 eggs 1/2 cup mayo Swiss meringue in grams: 4 large egg whites 300g caster sugar 400g butter 180g chocolate Hope this helps someone who wants to make this A M A Z I N G cake.

For a thicker layer for a 6 inch cake I would advise 3/4 batter which is as follow: 135g flour 90g cocoa 3/4 tsp salt 1tsp + pinch baking soda 1/3 + pinch tsp baking powder 300ml stout or other subsititute 3/4 tbsp vanilla 3/4 tbsp espresso powder 169g unsalted butter 225g sugar 2 eggs 1/3 cup + 1tbsp mayo Hope this helps!

I made the cake exactly to the recipe for my friends birthday, it was fan.tas.tic. Everyone really enjoyed it. I did, however, change the icing because I’ve never been impressed by basic buttercream, the texture and balance is usually off. I made a chocolate cream cheese frosting, which is now also my ride or die choc frosting: 12 oz cream cheese 12 tbsp (3/4 cup) unsalted butter 3 cups powdered sugar (more if desired) 3/4 cup Dutch cocoa (also more if desired) 1 tsp salt 2 tsp vanilla 1/2 tsp instant coffee or expresso powder (^this recipe will make exactly enough for this three layer cake) Cream butter + cream cheese. Sift in sugar + cocoa, fold in then mix. Add salt, vanilla, coffee and mix until smooth and silky. I also recommend adding a crumb coat when frosting your cake if you want it to look ultra profesh. (And warning: don’t eat too much. Your guts will thank you for having self control)

I made this cake 3 times now on 3 separate occasions. One of those times i made cupcakes instead and it came out just as good. 1. I definitely did NOT taste the beer or coffee in the end so I’m uncertain why people have commented that. 2. It is veeeeery rich so this cake will feed a lot of people. My husband loves chocolate and one small slice was plenty for him. 3. The mayo did weird me out at first but it definitely brings a moisture into the cake i had never before achieved. So definitely don’t forgo it. Stick to the recipe and you’ll be more than happy with the results.

Mayo is just eggs, oil, and some acidic liquid, which are all common in cakes to begin with, so I wouldn’t be surprised if mayo was even in every cake lmao

Vaishnavi Chavan It doesn't say in the video, but most recipes use unsalted butter so i think you should just use that. You could also use a small pinch of salt in your frosting so it doesn't taste too sweet :)
This is for anyone wanting to make cupcakes with this recipe (which I highly recommend). Make the cake batter the same way. The oven temp will be the same too. This makes a little more than 30 cupcakes, so you could half the recipe if you’d like less. Make sure not to overfill the cupcake liners as the cake needs a little room to rise (otherwise they’ll sink in the middle a little bit). I think a little less than 2/3 of the full is safe. Check them after 15-20 minutes. A toothpick should come out with moist crumbs. If it’s wet, give it a few more minutes. Hope this helps someone! :)
I have used mayo in other baked goods and its unlike anything to give that spectacular moisture. but I just made this today with all the recipes' secret ingredients (i did use a double chocolate stout)...O.M.G. literally, the best chocolate cake you will EVER make at home. hands down. super super worth your time and money

Splendid Fangirl sweetheart, once alcohol is "cooked", its gone. it gives flavor but the effect is all evaporated. LOTS of food have alcohols and you dont even know it or taste it or feel it because it evaporates. BUT, if you're still adamant about using stout, you can always use a chocolate soda or drink.
This is the best chocolate cake ever that I made. Let me start by saying that I've been baking cakes since a long time by referring TH-cam videos but never ever has my cake turned out to be so soft, fluffy and delicious. I just followed the recipe and I added few variations in the cake as found in comments section below (which really helped me a lot).list of the variations that I did: 1) Instead of adding 1.5 cups of stout, I added 1 cup of stout(Guinness draught stout since it was written on the cover that it has hints of coffee and chocolate) and half cup of coffee decoction(I didn't have Instant coffee powder or espresso powder instead I had Indian filter coffee powder which I boiled with water for 5 min). 2) I used Hershey's Special dark cocoa powder instead of Dutch processed cocoa 3) I used Ghirardelli's semi sweet chocolate chips instead of dark Chocolate chunks. 4) I had 0.5 cup of extra sugar in the dry ingredients 5) Since I had a 9' cake tin, I baked 2 layers instead of 3. 6) For icing, I just used 1 cup of butter instead of 1.5 and 3 cups of sugar instead of 5. Just want to add a note that don't hesitate to add Mayonnaise coz as shown in the video, the mixture turns creamy as soon as you add it so it really adds a texture to the cake. Happy baking guys!!

Arpita Chatterjee I never tried making this cake without stout so I don't know how you can substitute stout. I read in one of the comments that buttermilk can be used to substitute stout although I cannot guarantee the results since I have not tried it by myself.
i baked this cake yesterday !! I replaced the stout with milk and I recommend lessening the sugar bcos for me its too sweet, and dont forget to beat the butter for the buttercream so it doesnt freeze so hard in the refrigerator !!
Made this today. This is honestly the best chocolate cake I’ve ever eaten. For the people that don’t drink alcohol replace the stout with sparkling water. Seriously! It’s amazing. Bake for exactly 35 minutes and chill in the fridge before icing so it’s sturdy. Delicious!

I made this cake today. The only issues were finding a Dutch processed cocoa powder that was dark enough to color the cake, and pulling out the parchment from underneath sort of pulled out a portion of the cake, but it was surprisingly fixable. It turned out EXACTLY like the video’s cake. You can definitely taste all the flavors of the ingredients. Originally I thought that the girl was being super extra with her “ journey of flavors “ but this cake was actually bomb because of all the ingredients. I thought too that it was too involved for a potentially lackluster output. It definitely was not. It is very balanced and actually VERY easy to follow! I love these types of videos; crosses between tasty shorts and informational videos. Keep this stuff up!! 😃

Christhella prjx hi If you’re using 9 inch pan you just double the measurements of your ingredients. Then for buttercream the icing sugar 2-3 cups is enough. Because powdered sugar is too sweet rather than the granulated sugar. Goodluck :)

@@konradjanulis9939 You might be right. However, the mix includes ingredients like stout, espresso, and dutch processed cocoa powder. When I made the cake, it had a very dark and rich chocolate flavor. I think if it had less sugar, it would be way too bitter. Plus the recipe makes three individual cakes so it's not like all the sugar is going into one cake.
I just made this for thanksgiving and it was amazing, everyone loved it, I would change a few things though 1. Don't put in the chocolate chunks 2. Use good quality pans(mine burnt it a little) 3. Bake a little bit longer after toothpick comes out clean, (I could still taste the beer a little bit) 4. Only use 4 cups of powdered sugar for the buttercream, and add a little bit more cocoa powder than recommended, also dont put it in the fridge 5. Use 1 cup of stout and 1/2 cup water instead of 1 1/2 cup of stout
Just made this. I used milk instead of stout as a previous comment stated and it was still the best cake I’ve ever had. So moist and flavorful. I didn’t use espresso powder either. Also for the buttercream frosting. I was low on powdered sugar and only had about a cup of it and it was still plenty...The recipe makes way too much frosting in my opinion.
it's me i used buttercream. It’s amazing. I didn’t measure anything, just used maybe about a cup of powdered sugar, a block of unsalted butter, roughly measured maybe a quarter cup or so of cocoa powder and a tablespoon of milk and it was great. Whenever I make buttercream I don’t measure anything and it always turns out fine.
I've made this cake yesterday for a party and everybody went crazy. It's very chocolatey and really moist, it's absolutely amazing. I used Heineken 🙈, because stout it's not easy to find, but I added a bit more of espresso powder and the result has been crazy. Thanks Tasty ❤ it made my night 🎇
I just made this cake and from all of the chocolate cakes I have made I would truly say this is the ultimate chocolate cake. The taste and texture is phenomenal and this is now going to be my to go to chocolate cake. The only substitute I made was instead of stout I used buttermilk and it came out so delicious! Chocolate cake is really my favorite. I've tried a lot of recipes and this is so far the best. I came across recipes with espresso powder and mayonaise but this is the first time i used stout. The stout for me is the game changer as it gave a deep flavor to the chocolate cake and i recommend not to omit or replace this. Im having problem though with the buttercream frosting as it always comes out grainy so i just replaced it with chocolate ganache and it still tastes good.
OK, so i made this a few times now: 1. i divided the recipe in half (used 2 eggs instead of 1.5), and used 2, 6" pans. if you're using 2, 6 inches like me, around 315g batter in each pan will work nicely 2. i used 1/4 cup of sour cream + a little less than 1/4 cup mayo (again I divided the recipe in half) 3. it domed. so I've realized that the shorter/ smaller the height of the pan is, the less likely it domes. (so i hv a 6x2in pan, and a 6x3in pan. the 6x3 domed a lot more than the 6x2. if you used 8in pans (that are like 8x1in) then your cake shouldn't dome basically at all). 4. used chocolate swiss meringue buttercream (you don't need a lot of frosting, since I only did 2 layers. if you want, you can multiply this recipe by 2). *CHOCOLATE SWISS MERINGUE BUTTERCREAM RECIPE:* -1/4 cup egg whites -75g white sugar (or about 1/2 of 3/4) - you can add up to 100g (1/2 cup sugar), but no more than 1/2 cup - 1 stick (1/2 cup) butter (softened, but still kinda hard) -1/4 cup cocoa powder -optional splash of vanilla INSTRUCTIONS: 1. whisk together egg whites + sugar over a double broiler 2. wait till the egg white/sugar mix gets to 140F (60C). 3. whip (use mixer) the eggs/sugar for around 10 min. (until the mix becomes thick and cool) 4. proceed to add the butter in tablespoon sized pieces into egg whites 5. keep whipping. YOU MUST ADD ALL THE BUTTER. incorporate the butter 1 piece at a time, mixing thoroughly in between 6. add the vanilla + cocoa powder and keep whipping until fully incorporated. *note: this does not make a lot of buttercream. I found it was the perfect amount for 2, 6 inch cakes. if you are making the og recipe, please double this recipe. I don't advise using the american buttercream, since the cake would be far to sweet. i personally don't like to have super sweet stuff, so this cake is more chocolate than sugar*
@@annienriquez_ using an 8 inch pan means it probably won't dome at all. 8 inch cakes are generally not cut in half (since they're so thin), but if u want really thin cake layers- you could try that? I would just use the recipe I provided above on 2, 8 inch pans (since when I used 6 inch pans, my cake layers were very thick). also, if you only have 1 , 8 inch pan- then i would recommend not cutting the cake in half and just smearing frosting on top.
@@annienriquez_ but also idk if half the og recipe would even fit in a single 8 inch. you can try it? i think that if the batter hits nearly the top of the pan, u can probably cut it in half. Although be careful since your cake it going to need longer to cook.

I made this cake today..actually came out pretty good and it was super moist (sorry for using the word) even without the icing..had to skip the icing because I messed that up as I did not have icing sugar..but the cake was really good
Tip: if you don't want a dry cake, mix water with some espresso and spill on every layer of cake before putting cream. Also, I recommend using ganache instead of butter cream.
This cake is already super moist, so if you do add any type of syrup/ extra liquid to your cake, do so in small amounts with some type of brush of squirt bottle. This is not a tres leches cake where all that liquid is going to be soaked up; if you poured everything on top like that, the cake would fall apart. Even then, I don't believe that any type of soaking would be need unless you plan on storing the cake in the fridge, which could then dry out the cake a bit.
Mil Vil you can also use a simple syrup becuase water can make the cake crumbly. It does work of course but a simple syrup is way better. You boil the same amount of water and sugar and then let it cook then put it on the cake layers
I tried this and it works! Was my very first time baking a chocolate cake, and it came out yummy and moist, even after 3 days. I didn't want three tiers, so I used half of the ingredients and baked a one layer cake in a 9 inch pan. GUYS. I made this. It’s amazing!!! The only thing I changed.... instead of milk in the buttercream frosting, I used baileys. Probably one of the best chocolate cakes I’ve ever made!!!! ❤️❤️❤️❤️
The flavor won't be as decadent. When I tried it the coffee, stout and dark chocolate combo all made sense. It created a simple, decadent and not overly sweet cake. Better than anything I could've bought at a grocery store or bakery to be honest. I suppose there's no harm in trying. But maybe adjust the sugar. Milk chocolate tends to have a higher concentration of sugar than dark.

I made this cake a few days ago and it was amazing (my dad even said it was the best cake he's ever eaten)! But next time I will reduce the amount of stout, as you could definitely taste it in the finished cake. I also added a bit more cocoa powder and a bit less sugar in the buttercream since I thought it would be too sweet with that amount of sugar, it turned out perfect!
dadang diding the purpose of stout is the bicarbonate in it, it’s bubbly and gives a better taste, but in the recipe they used too can use sparkling water too I’m pretty sure

I just made this according to the recipe. No joke, this is the best chocolate cake I've ever had. It's not especially sweet, but it is immensely flavorful. It tastes like chocolate instead of sugar. The person who made this was not kidding around when she said this was tested over and over again. Make this exactly as the video describes. You will be shocked by how amazingly good this is.

I have seen mayo used before but what makes this cake standout is the stout. Guiness is the best known. I have used the beer in a rich and gooey brownie. It made the difference. Also adding the espresso.
Mayonnaise is literally just eggs and oil, two key ingredients for good cake. My dad’s Nonnie (grandma in Italian if anyone doesn’t know) used to do it all the time.
Mayo is a pretty well known cake ingredient actually.. Mayonnaise bottles used to have a recipe for mayonnaise cake on them years ago, never tried it but it makes complete sense when you think about it.. eggs, oil, salt etc

Recently made this cake. Two things to pay attention. 1. STOUT, make sure you don't use EXTRA STOUT. Swap for milk or water if you don't like taste. 2.Mayonnaise choose one that is plain (NO Garlic, herbs, etc). Otherwise VERY MOIST cake

Made this cake today and it's pretty outstanding. I think it's a little too salty so I'd cut back on the salt in the future (by just a bit) but yeah, everything else seems just about right. I couldn't find dutch processed cocoa in my area so I used Hershey's special dark (which is half and half, dutch and natural) and it worked out just fine for me. Made a raspberry filling and a whipped cream frosting and yeah. Pretty darn amazing :) Totally recommend for anyone that is looking for a very rich and satisfying chocolate cake experience. Used bread flour, upped the baking powder, cut the sugar in half, used hazelnut baraco coffee, and it still was the best chocolate cake I’ve ever made. I made it today for my sister's birthday, it was extraordinary! The batter is beautiful and the cake is velvety and has a complex and very deep flavor. I used only two thirds of the sugar and was perfect. I don't think it can be as good without the fruit so don't skip it.
For anyone who doesn’t have 8 inch pans: this recipe works just as well using two 9 inch round pans! Same bake time too. It worked just fine for me :) I also used half the amount of stout & substituted warm water for the rest of the liquid, it cut down on the stout flavor being too strong, and helped the espresso to disolve!

I made this cake today and I was very hesitant, however it turned out beautifully. My family and friends loved it! The cake has a beautiful dept of flavour and was extremely moist and delicous. Will make this again next week for the birthday of a friend.
I made this cake and it's amazing, here are a few pointers for those who are interested:
Substitutes for stout - sparkling water (for airier texture), water or milk
For 3 6-inch cake tins half the batter
For 3 10-inch tins times the batter by 1.5
Check in the ingredients that the mayo you use doesn't have savoury elements like paprika, garlic or mustard seed that would ruin the flavour of the cake.
If you're using extra strong espresso remove a little bit before using as the espresso will overpower the chocolate.
I'd personally skip the chocolate chunks, it doesn't add anything to the cake and ruins the soft texture with random crunches.
Chocolate swiss meringue buttercream is the best for this recipe, none of that super sweet American buttercream.
Callebaut is an amazing and super rich chocolate powder to use, they do chocolate chips too (the 54% tastes amazing melted into the buttercream).
I used simple syrup a couple of times doing this recipe and it just weighed down the cake and made it dense.
Cake recipe in grams:
180g - Flour
120g - Dutch processed cocoa powder
1tsp salt
1.5tsp baking soda
0.5tsp baking powder
400ml milk
1tbs vanilla
1tbs espresso powder
226g unsalted butter
300g sugar
3 eggs
1/2 cup mayo
Swiss meringue in grams:
4 large egg whites
300g caster sugar
400g butter
180g chocolate

135g flour
90g cocoa
3/4 tsp salt

1/3 + pinch tsp baking powder
300ml stout or other subsititute
3/4 tbsp vanilla
3/4 tbsp espresso powder
169g unsalted butter
225g sugar
2 eggs

I made the cake exactly to the recipe for my friends birthday, it was fan.tas.tic. Everyone really enjoyed it. I did, however, change the icing because I’ve never been impressed by basic buttercream, the texture and balance is usually off. I made a chocolate cream cheese frosting, which is now also my ride or die choc frosting:
12 oz cream cheese
12 tbsp (3/4 cup) unsalted butter
3 cups powdered sugar (more if desired)
3/4 cup Dutch cocoa (also more if desired)
1 tsp salt
2 tsp vanilla
1/2 tsp instant coffee or expresso powder
(^this recipe will make exactly enough for this three layer cake)
Cream butter + cream cheese. Sift in sugar + cocoa, fold in then mix. Add salt, vanilla, coffee and mix until smooth and silky.
I also recommend adding a crumb coat when frosting your cake if you want it to look ultra profesh.
(And warning: don’t eat too much. Your guts will thank you for having self control)

(1 1/2 cup of milk + 1 teaspoon of instead coffee = stout ) then i added in the one tablespoon of instant coffee and vanilla

1 cup butter (235 g)
1 ½ cups sugar (300 g)
3 eggs
½ cup mayonnaise (120 g)
4 oz dark chocolate (115 g), chopped
BUTTERCREAM:
1 ½ cups butter (350 g), softened
1 tablespoon vanilla extract
½ cup dutch processed cocoa powder (60 g)
5 cups powdered sugar (600 g)

fresh fruit, to decorate
Recipe:
Grease and line three 8-inch (20 cm) cake tins with parchment paper.
In a large bowl, sift together the flour, cocoa powder, salt, baking soda, and baking powder. Set aside.
In a large glass measuring cup, combine the stout, vanilla, and espresso powder. Set aside.
In a large mixing bowl, cream together the butter and sugar until it is light and fluffy, about 5 minutes, scraping down the sides occasionally to ensure all the ingredients are being evenly creamed together.
Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next.
Add the mayonnaise and beat until the mixture is smooth and creamy.
Preheat oven to 325˚F (160˚C).
Alternate adding the prepared dry and wet ingredients to the batter. Starting with about ⅓ of the dry ingredients, beat until incorporated. Then add ⅓ of the liquid ingredients, mixing until the batter comes together. Continue until all the wet and dry ingredients have been incorporated.
Using a rubber scraper, fold the dark chocolate chunks into the batter.
Distribute the batter evenly between the 3 prepared cake tins.
Bake for about 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Place the cakes on a cooling rack and leave to cool for about 10-15 minutes, until the outside of the pan is cool enough to touch.
Once the cakes have cooled, loosen the edges using a butter knife. Then place a large plate over the tin and invert to release the cake from the pan. Remove the parchment paper from the bottom of the cake and slide the cake back onto the cooling rack to cool completely. Repeat for the remaining two layers.
While your cakes are cooling, prepare the buttercream.
In a large bowl, beat together the butter and vanilla.
Gradually add in the cocoa powder, powdered sugar, and milk, continuously beating until all the ingredients have been incorporated and the frosting is light and fluffy.
Frost and decorate to your liking.
Slice and serve.

I made this cake 3 times now on 3 separate occasions. One of those times i made cupcakes instead and it came out just as good.
1. I definitely did NOT taste the beer or coffee in the end so I’m uncertain why people have commented that.
2. It is veeeeery rich so this cake will feed a lot of people. My husband loves chocolate and one small slice was plenty for him.
3. The mayo did weird me out at first but it definitely brings a moisture into the cake i had never before achieved. So definitely don’t forgo it.

Mayo is just eggs, oil, and some acidic liquid, which are all common in cakes to begin with, so I wouldn’t be surprised if mayo was even in every cake lmao

Salted or unsalted butter for frosting
Vaishnavi Chavan It doesn't say in the video, but most recipes use unsalted butter so i think you should just use that. You could also use a small pinch of salt in your frosting so it doesn't taste too sweet :)
This is for anyone wanting to make cupcakes with this recipe (which I highly recommend). Make the cake batter the same way. The oven temp will be the same too. This makes a little more than 30 cupcakes, so you could half the recipe if you’d like less. Make sure not to overfill the cupcake liners as the cake needs a little room to rise (otherwise they’ll sink in the middle a little bit). I think a little less than 2/3 of the full is safe. Check them after 15-20 minutes. A toothpick should come out with moist crumbs. If it’s wet, give it a few more minutes. Hope this helps someone! :)

LOTS of food have alcohols and you dont even know it or taste it or feel it because it evaporates. BUT, if you're still adamant about using stout, you can always use a chocolate soda or drink.
This is the best chocolate cake ever that I made. Let me start by saying that I've been baking cakes since a long time by referring TH-cam videos but never ever has my cake turned out to be so soft, fluffy and delicious. I just followed the recipe and I added few variations in the cake as found in comments section below (which really helped me a lot).list of the variations that I did: 1) Instead of adding 1.5 cups of stout, I added 1 cup of stout(Guinness draught stout since it was written on the cover that it has hints of coffee and chocolate) and half cup of coffee decoction(I didn't have Instant coffee powder or espresso powder instead I had Indian filter coffee powder which I boiled with water for 5 min). 2) I used Hershey's Special dark cocoa powder instead of Dutch processed cocoa 3) I used Ghirardelli's semi sweet chocolate chips instead of dark Chocolate chunks. 4) I had 0.5 cup of extra sugar in the dry ingredients 5) Since I had a 9' cake tin, I baked 2 layers instead of 3. 6) For icing, I just used 1 cup of butter instead of 1.5 and 3 cups of sugar instead of 5. Just want to add a note that don't hesitate to add Mayonnaise coz as shown in the video, the mixture turns creamy as soon as you add it so it really adds a texture to the cake. Happy baking guys!!

Made this today. This is honestly the best chocolate cake I’ve ever eaten. For the people that don’t drink alcohol replace the stout with sparkling water. Seriously! It’s amazing. Bake for exactly 35 minutes and chill in the fridge before icing so it’s sturdy. Delicious!

I made this cake today. The only issues were finding a Dutch processed cocoa powder that was dark enough to color the cake, and pulling out the parchment from underneath sort of pulled out a portion of the cake, but it was surprisingly fixable. It turned out EXACTLY like the video’s cake. You can definitely taste all the flavors of the ingredients. Originally I thought that the girl was being super extra with her “ journey of flavors “ but this cake was actually bomb because of all the ingredients. I thought too that it was too involved for a potentially lackluster output. It definitely was not. It is very balanced and actually VERY easy to follow! I love these types of videos; crosses between tasty shorts and informational videos. Keep this stuff up!! 😃

Christhella prjx hi If you’re using 9 inch pan you just double the measurements of your ingredients. Then for buttercream the icing sugar 2-3 cups is enough. Because powdered sugar is too sweet rather than the granulated sugar. Goodluck :)

When I made the cake, it had a very dark and rich chocolate flavor. I think if it had less sugar, it would be way too bitter. Plus the recipe makes three individual cakes so it's not like all the sugar is going into one cake.

I would change a few things though
1. Don't put in the chocolate chunks
2. Use good quality pans(mine burnt it a little)

Just made this. I used milk instead of stout as a previous comment stated and it was still the best cake I’ve ever had. So moist and flavorful. I didn’t use espresso powder either. Also for the buttercream frosting. I was low on powdered sugar and only had about a cup of it and it was still plenty...The recipe makes way too much frosting in my opinion.

it's me i used buttercream. It’s amazing. I didn’t measure anything, just used maybe about a cup of powdered sugar, a block of unsalted butter, roughly measured maybe a quarter cup or so of cocoa powder and a tablespoon of milk and it was great. Whenever I make buttercream I don’t measure anything and it always turns out fine.

I've made this cake yesterday for a party and everybody went crazy. It's very chocolatey and really moist, it's absolutely amazing. I used Heineken 🙈, because stout it's not easy to find, but I added a bit more of espresso powder and the result has been crazy. Thanks Tasty ❤ it made my night 🎇

I just made this cake and from all of the chocolate cakes I have made I would truly say this is the ultimate chocolate cake. The taste and texture is phenomenal and this is now going to be my to go to chocolate cake. The only substitute I made was instead of stout I used buttermilk and it came out so delicious! I say give it a try!

Chocolate cake is really my favorite. I've tried a lot of recipes and this is so far the best. I came across recipes with espresso powder and mayonaise but this is the first time i used stout. The stout for me is the game changer as it gave a deep flavor to the chocolate cake and i recommend not to omit or replace this. Im having problem though with the buttercream frosting as it always comes out grainy so i just replaced it with chocolate ganache and it still tastes good.
OK, so i made this a few times now:
1. i divided the recipe in half (used 2 eggs instead of 1.5), and used 2, 6" pans. if you're using 2, 6 inches like me, around 315g batter in each pan will work nicely
2. i used 1/4 cup of sour cream + a little less than 1/4 cup mayo (again I divided the recipe in half)
3. it domed. so I've realized that the shorter/ smaller the height of the pan is, the less likely it domes. (so i hv a 6x2in pan, and a 6x3in pan. the 6x3 domed a lot more than the 6x2. if you used 8in pans (that are like 8x1in) then your cake shouldn't dome basically at all).
4. used chocolate swiss meringue buttercream (you don't need a lot of frosting, since I only did 2 layers. if you want, you can multiply this recipe by 2).
*CHOCOLATE SWISS MERINGUE BUTTERCREAM RECIPE:*
-1/4 cup egg whites
-75g white sugar (or about 1/2 of 3/4) - you can add up to 100g (1/2 cup sugar), but no more than 1/2 cup
- 1 stick (1/2 cup) butter (softened, but still kinda hard)
-1/4 cup cocoa powder
-optional splash of vanilla
INSTRUCTIONS:
1. whisk together egg whites + sugar over a double broiler
2. wait till the egg white/sugar mix gets to 140F (60C).
3. whip (use mixer) the eggs/sugar for around 10 min. (until the mix becomes thick and cool)
4. proceed to add the butter in tablespoon sized pieces into egg whites
5. keep whipping. YOU MUST ADD ALL THE BUTTER. incorporate the butter 1 piece at a time, mixing thoroughly in between
6. add the vanilla + cocoa powder and keep whipping until fully incorporated.
*note: this does not make a lot of buttercream. I found it was the perfect amount for 2, 6 inch cakes. if you are making the og recipe, please double this recipe. I don't advise using the american buttercream, since the cake would be far to sweet. i personally don't like to have super sweet stuff, so this cake is more chocolate than sugar*

@@annienriquez_ using an 8 inch pan means it probably won't dome at all. 8 inch cakes are generally not cut in half (since they're so thin), but if u want really thin cake layers- you could try that? I would just use the recipe I provided above on 2, 8 inch pans (since when I used 6 inch pans, my cake layers were very thick).
also, if you only have 1 , 8 inch pan- then i would recommend not cutting the cake in half and just smearing frosting on top.

I made this cake today..actually came out pretty good and it was super moist (sorry for using the word) even without the icing..had to skip the icing because I messed that up as I did not have icing sugar..but the cake was really good

Tip: if you don't want a dry cake, mix water with some espresso and spill on every layer of cake before putting cream.
Also, I recommend using ganache instead of butter cream.
I was surpirsed why no cake wash/ sugar syrup!!
This cake is already super moist, so if you do add any type of syrup/ extra liquid to your cake, do so in small amounts with some type of brush of squirt bottle. This is not a tres leches cake where all that liquid is going to be soaked up; if you poured everything on top like that, the cake would fall apart. Even then, I don't believe that any type of soaking would be need unless you plan on storing the cake in the fridge, which could then dry out the cake a bit.
Mil Vil you can also use a simple syrup becuase water can make the cake crumbly. It does work of course but a simple syrup is way better. You boil the same amount of water and sugar and then let it cook then put it on the cake layers

I tried this and it works! Was my very first time baking a chocolate cake, and it came out yummy and moist, even after 3 days. I didn't want three tiers, so I used half of the ingredients and baked a one layer cake in a 9 inch pan. One major change i made was use much less sugar in the buttercream frosting, I only used 1 cup and I felt it was still too sweet. Giving below the measurements i used,
Cake
3/4 cup flour
1/2 cup cocoa powder
1/2 tsp salt
3/4 tsp baking soda
1/4 tsp baking powder
3/4 cup milk
1/2 tbsp vanilla
1/2 tbsp espresso powder
1/2 cup butter(100 g)
3/4 cup white sugar
2 eggs
1/4 cup mayonnaise
Buttercream
3/4 cup butter(150g)
1/2 tablespoon vanilla extract
1/4 cup cocoa powder
1 cup powdered sugar
2 - 2 1/2 tbsp milk
GUYS. I made this. It’s amazing!!! The only thing I changed.... instead of milk in the buttercream frosting, I used baileys. Probably one of the best chocolate cakes I’ve ever made!!!! ❤️❤️❤️❤️

The flavor won't be as decadent. When I tried it the coffee, stout and dark chocolate combo all made sense. It created a simple, decadent and not overly sweet cake. Better than anything I could've bought at a grocery store or bakery to be honest. I suppose there's no harm in trying. But maybe adjust the sugar. Milk chocolate tends to have a higher concentration of sugar than dark.

I made this cake a few days ago and it was amazing (my dad even said it was the best cake he's ever eaten)! But next time I will reduce the amount of stout, as you could definitely taste it in the finished cake. I also added a bit more cocoa powder and a bit less sugar in the buttercream since I thought it would be too sweet with that amount of sugar, it turned out perfect!

I just made this according to the recipe. No joke, this is the best chocolate cake I've ever had. It's not especially sweet, but it is immensely flavorful. It tastes like chocolate instead of sugar. The person who made this was not kidding around when she said this was tested over and over again. Make this exactly as the video describes. You will be shocked by how amazingly good this is.

I have seen mayo used before but what makes this cake standout is the stout. Guiness is the best known. I have used the beer in a rich and gooey brownie. It made the difference. Also adding the espresso.

Recently made this cake. Two things to pay attention.
1. STOUT, make sure you don't use EXTRA STOUT. Swap for milk or water if you don't like taste.
2.Mayonnaise choose one that is plain (NO Garlic, herbs, etc).

Made this cake today and it's pretty outstanding. I think it's a little too salty so I'd cut back on the salt in the future (by just a bit) but yeah, everything else seems just about right. I couldn't find dutch processed cocoa in my area so I used Hershey's special dark (which is half and half, dutch and natural) and it worked out just fine for me. Made a raspberry filling and a whipped cream frosting and yeah. Pretty darn amazing :) Totally recommend for anyone that is looking for a very rich and satisfying chocolate cake experience. I think it would make a great cake for Valentine's day or something too.
edit: Made it for the second time today for a birthday. I made it with unsalted butter and skimped on the added salt and oh my gosh SO MUCH BETTER. Turned it into a 6 layer black forest gateau with chocolate mousse and whipped cream filling, and kirsch soaked cherries, and blueberries, and a chocolate ganache drizzle. Stunning.

Thanks for this Tasty. I baked this for my birthday today. Used bread flour, upped the baking powder, cut the sugar in half, used hazelnut baraco coffee, and it still was the best chocolate cake I’ve ever made. The texture is out of this world and the flavor has so much depth. My family and neighbors loved it 😁

I made it today for my sister's birthday, it was extraordinary! The batter is beautiful and the cake is velvety and has a complex and very deep flavor. I used only two thirds of the sugar and was perfect. I don't think it can be as good without the fruit so don't skip it.

For anyone who doesn’t have 8 inch pans: this recipe works just as well using two 9 inch round pans! Same bake time too. It worked just fine for me :) I also used half the amount of stout & substituted warm water for the rest of the liquid, it cut down on the stout flavor being too strong, and helped the espresso to disolve!
