Most movement in maps, especially in Expert and Expert+ maps, comes from the wrist, while dramatic movements may include some arm movement, but primarily the wrist. To get that speed, you will need to have the muscle memory to not actually think at all during the faster portions of the map, and lots of muscle strength from playing lots of maps to be able to continuously mantain that speed for more than about 4-5 notes. In terms of his grip, from watching the video, he has his sabers straight as he is playing, and making circles with his wrist during the tunnel portions of the map. Personally, I will also, in certain situations, twist my hands so that i swipe with the sides of my saber if I need to just swipe up and down for a long time. But in 99% of maps, you will want to keep your sabers as straight as possible.

He can't score nearly as well as other players because of this and hes not that good at fullswinging fast songs, as someone already pointed out most movement is wrist based but bandoot uses alot of arm so cant score nearly as well as others. Maps like this arent too hard and can easily be fullswung in most sections, end section included. Best thing you can do is try and find a grip that you find most comfortable with your controllers and allows for good wrist movement, play around with the controller settings in game and saber tailor if you find you prefer a grip at a different angle to default and then practice practice practice and youll get used to fullswinging maps and your speed will continuously increase.
