Back home in South Alabama, we made something similar, but my family does have a great-great from Spain who made landfall in 1542. Only big difference is we use Black Eyed Peas. I roll the balls around in a mix of bread crumbs and a hard aged cheese like Parmesan, Asagio or Romano or all three. It forms a nice crust that soaks up the sauce even more. Also add a bit of minced shallots along side the garlic in the sauce.
Hi! That looked awesome! I made cod burgers today. I mixed the mashed, cooked cod with chopped up carrot, onion and asparagus. Salt, peppar, ground cummin and paprika. Then i formed them into burgers and fried off. Thank you for all the inspiration from your channel. Your channel helps me a lot when I cook. It's a great inspiration. HOWEVER, I wanted to tell you that I made last week's creamy garlic spinach pasta and quite liked it! I normally would have skipped past any recipe with "creamy" in the title, but I must have watched it for the algorithm, and heard "yogurt". Sold! Also, thanks for putting most of the nutrition info up, as it made it easier for tracking macros, etc (I adapted sodium).
@mirandamom1346 or try small red beans, I like those. Cannelini will work, too. I just flash back to being forced to eat those huge dry things when I was young. My mom would let me pick them out. But my siblings, when they babysat, forced me to eat them

Prep Tip: After mixing all the ingredients for the meatballs let it test for 30 minutes. This gives the mix time to fully absorb and distribute the moisture and seasoning flavor. Then rolling will give a more ‘meaty’ consistency.

My husband also doesn’t love kidney beans. I’m thinking I could substitute cannellini beans.

Agreed. A couple hours even better. Also, a better gauge if the mixture seems wet to allow the bread crumbs to fully hydrate.
