BEANBALLS (VEGGIE BALLS)
Servings: 10-12
Difficulty: Medium
Cooking time: 15-20 minutes
Prep time: 15 minutes
400g boiled red beans or any bean works great
8 mushrooms
2 red onions
2 cloves of garlic
1 tsp cumin
1 egg
2 tsps meatball mix (etsy.me/3ZdvF3V)
1 tsp black pepper
8-9 tbsp breadcrumbs
1 levelled tsp mustard
1 cup boiled corn
½ bunch of parsley, chopped
1 tsp salt
• Pulse mushrooms and one of the red onions in a food processor. Pulsing is important for the chopping otherwise they can get puree.
• Brown the chopped mushrooms and onions in a large pan with 3-4 tbsp olive oil and a pinch of salt, for 10-12 minutes on high heat. Then, set aside to cooldown.
• Chop the other red onion and garlic in the processor without making a puree, add red beans, breadcrumbs, and pulse again. Add boiled corn, mustard, cumin, meatball mix, salt and black pepper and give it a last mix.
• Add egg, parsley and cooled red onion-mushroom mixture in and knead. If the mixture feels soft and sticky, feel free to add breadcrumbs or rest the mixture for a couple of hours if you have time.
• Wet your hands and shape the mixture into balls or long finger shaped meatballs. Shallow fry in sunflower oil or any cooking oil.
• You can enjoy your vegetarian meatballs, which are crispy outside, soft and juicy inside with garlic yoghurt and salad!
Refika’s Köfte Spice Mix
80 gr salt- 3 tbsps
80 gr ground cumin- 5,5 heaped tbsps
40 gr sweet paprika- 2 heaped tbsps
40 gr chili paprika -2 heaped tbsps
20 gr garlic powder- 1 heaped tbsp
12 gr nutmeg- 3 small nutmegs, grated
13 gr ground coriander- 1 heaped tbsp
7 gr dry mint-2,5 tsps
7 gr oregano- 2 tbsps - บันเทิง
If you are vegan or lacto-vegetarian, you can replace the egg by boiling 1T of flax seeds in 4 of water, until it becomes the consistency of egg whites, and then strain the seeds. Or just add a few tablespoon of chickpea flour!
if you use ground flax seed there's no need to strain

Looks great. For a vegan alternative leave out the egg and add a bit of chickpea flour and a splash of liquid for the texture.
Reporting back: prepared this 10 days ago. Easy and delicious!! 👌🏻I did let the mixture cool in the fridge for a couple of hours before forming the beanballs. It was a tad too "crumbly" and not that easy to shape. - will need to practice this more to perfect it. I had 3 beanballs that couldn't fit in the pan: put those in the fridge and fried them a few days later. I think that's the move: they were holding together better & were even yummier than the first batch. This is going in my rotation for sure!

Many years ago Marks & Spencer used to do a vegetarian, vegan ism wasn't heard of, bean burger using those exact ingredients and I, a dedicated meat eater, have longed to taste them again and now you have given me the recipe. my husband likes to eat vegan style...and our son just asked for more bean recipes. This is delicious! I make flax egg with 1T ground flax seeds stirred with 4T boiling water. No need to strain, because it adds fiber. Thank you.

I made these, they are awesome. I recently went vegan and have been missing kofte, I didn’t use an egg or any replacer they didn’t need it, they held together fine. 😊

I usually add vegetable based beef stock. My favourite is from an Australian company called Massel.

Hi Refika, I am hosting a BBQ next Sunday (weather permitting, live in UK and it has rained for 6 weeks!!!) My theme will be Cypriot and to be fair a lot of it is Greek but I would also like to add some Turkish as IMO their cuisine is very similar (hope I am not offending anyone by saying that) I want to make burgers do you think I could turn your kofta mixture into a burger as I will have several veggies. I would cook the first on a pan and finish them off on the BBQ as I know from experience veggie burgers have a habit of falling apart on the Barbie. What do you think?

Awesome recipe. Our people copied many recipes during Ottoman time and for us the Kofta is like a hamburger and these would be for us kebache. Thanks for such a great recipe, I am a vegetarian now and nice to have something similar but vegetarian!

Love all your cooking videos ! you seem to be a natural in knowing what spices go together and food combinations. I am sure it’s past down generation after generation and you can see and feel your Devine connection with each dish you create. I am from an English back ground and I live in Canada …food was simple, plain and boring growing up 😅…. Salt, pepper and maybe garlic LOL . However I have a great love for tasty food and exotic spices from any country . I do try to cook a variety of international foods, as well as feed them to my children, who now have a love for cooking and adventure in trying new recipes. Thank you so much for all your recipes, especially vegetarian recipes. .. as I am now eating a plant based diet and loving it. I have made your hummus love it! ( I did not know to take the skin off the chickpeas 👍) I will be making your Kafta (I usually buy it from our Lebanese grocery store ) but you have made it look “do able “ and we love it 😊 . Also just wanted to say thank you for being “ waste conscience “ as my grandparents, and so many generations before us had many food shortages and reused, reduced and recycled before it was “fashionable” …therefore I am so grateful for the abundance of food we have, I also try to be very conscience of waste and using everything .
