    This is what I’ve been doing since watching Dr. Bright’s interview with Steak and Butter Gal(80/20). I make a fatty latte everyday to get my fats in. High fat so beneficial for women.

      I do the fatty latte except with bone broth. I add about 6-7 TBSP butter salt and heat it and drink. Oh and today I added 1 raw egg yolk. Yum.

      I love bone broth but have to go easy with it , but I bet 1-2 a week I can do this! I do add raw egg to my drinks at times with Mct oil /powder with EVO.

    Made with 2 sticks butter. Cooked in oven... 400 degrees for 55 minutes... checked each 10 minutes, as not sure about timing... crispy, crunchy ... yummy!

    Made these! 1 pounds of 80/20 hamburger and 2 sticks of butter. I made 12. Just ate one and it was delicious 😋

      Made them with 1 pound medium ground beef but instead tried it by adding 1/2 cup bacon 🥓 fat made 8 I think I would prefer the butter,my next batch will be with butter

    Hi Anita. Your channel just keeps getting better with each new video! Thank you for your efforts. How about some recipe tips for prepping carnivore/keto portion-size bites and meals that defrost quickly? There are demanding days when I am literally too physically exhausted to cook anything at all. Those are the dangerous times when it's too easy to reach for carbs... esp. when you have non-keto family that eats all that forbidden stuff and it's in the pantry.

      I feel that pain because I do have a pretty hectic life! And I consider this beef butter cup to be exactly that, it's an 80/20 grab and go meal! (Well I would probably grab 2 to make a meal) But yes, I can go over some things I do and keep in the fridge that help me!

    Beef and butter gal did a vid on nausea after eating a fatty meal. I was getting that, so I stopped adding butter to my warm meats. Turns out, I need to drain the fat from my ground beef and eat my butter in solid form, problem solved. These would be perfect for me, and even better I can put some in a cooler when I am running errands or doing a day trip. Thanks!!!

    After watching you cook meats you are in my head. I had some lamb blade chops (cheap cut).
    I grilled them like a steak they were not tender. So I decided to cooked them in my cast iron enamel Dutch oven at 250 degrees for 3 hours. Minimal seasonings. I Followed your beef short ribs and beef back ribs recipe. They were falling off the bone tender! Thank you 😃

      I really like that magic formula of 3 hours, 250-300 degrees for so many things like ribs, chuck roast, most fatty juicy cuts! I never get tired of it, lol!

    Oh Anita, you are a true gem for sharing the ‘how to’s” with regard to seeing these actually being made! I also truly appreciate your macro breakdowns of your recent foods (especially for the 80/20), as this stuff is not necessarily ‘easy’ to calculate or even come up with! Seeing the macros was oooo every reassuring and so too was seeing our Canadian Regular Ground Beef featured on your video (hahaha, right?). It really made this lifestyle a bit easier to understand, using our own locally raised beef. BTW, I found mine at Save On too! Love your smile, your genuine caring and sharing! Ps...If you feel like doing it, I would love to see what an 80/20 day of eating looks like, with these cute snowflakes/meat-tallow bombs included in the daily menu along with a meat serving!     Interesting! 2 sticks of butter would be yummy, but butchers often give out beef fat for pennies, and that'd be cheaper! :) might have to render it in a batch 1, but maybe cut it up small and just toss it is there and it'd render perfectly along with the ground beef fat, and you'd have those crispy little bits of fat and collagen that are so good.
    Tried the browned butter bites, and wow, are those good! I still couldn't possibly eat a quarter-pound of butter per day that way, but 2-3 T worth is pretty easy to enjoy.

      @@susankitchin325 Yes, I rarely eat an entire stick of butter in one day because I also count the fat in the meat I am eating! If you watch my Tuesday Talk that comes out later today I show pictures and explanation of some of my days from last week! Every day I am eating at lest 80% or more fat, sometimes adding butter to get there!

    These sound wonderful! Thank you for sharing. I can't wait to try them. Please know though that meat should not be frozen right away while it's still hot. I've actually gotten food poisoning from putting leftovers away just after cooking. It needs to come down to room temperature first.

      I did mine for 25 min but the true answer is 'until crispy' because we all have different air fryers and sizes of baskets that will make a difference.

    Please help. There is 800 calories in a stick of butter. If I eat a stick a day how do I stay in my 1300 cal limit or do u not count calories on a high fat diet. Thanks so much for all you do

      You have to first figure out your minimum protein requirement. This will be different for everyone so find a chart or a calculator. It is based on your ideal goal weight. So mine turned out to be about 75g protein per day. I use that as my starting point to do my macros. Also I don't always have a whole stick in a day because some of the foods that I eat already are close to the 80/20 ratio. Watch my Tuesday Talk that is coming out today around noon PST. I show pictures of some of my meals this past week so you can get an idea. If you are going to try the high fat carnivore (which is what this is!) then don't worry at this point about the 1300 calories. I am currently eating in the 1500 cal range.

    Hi! I just made a batch using what I had on hand. Lean ground beef and butter. I upped the butter to keep the 80 Fat:20 Protein ratio.
    Instead of breaking it down with a fork I used my hand blender. It came out so creamy (instead of crunchy) it reminds me of butter bites. Yum!
    Might try liver next...

    So the 80/20 is per meal, not as a whole for your day? I mean I guess if you're OMAD it would be, but if 2-3 meals, each meal should be 80 fat, 20 protein?

      It doesn't have to be per meal and it doesn't have to be exact. I find it easier right now while I'm getting the hang of this to make it per meal. There's no way I would ever be able to do this OMAD, it was hard enough to do it 2MAD so that is why I am doing 3 meals right now.

    I made one of the other versions, and I believe you did the demonstration, it’s the one with crumbled bacon top, and butter browned separately from the beef. I don’t have a silicone mold, so I used a cupcake pan with papers, and that’s the way I’ll do it from now on. I actually halved the recipe to see if suited me, and Im very happy with it. You’re a gem!

    I’ve never given any consideration to micros, because I’m not keto, but anytime someone gives numbers about ground beef, they’re talking fat to protein. The hardest thing going carnivore is getting enough fat. Many years of warnings against fat, cooking and eating to avoid fats, has been a “forget what I’ve learned”.

    I think the best way to explain the 80/20 is daily 2500 calories 80 percent of the calories must be just fat, then the remainder of calories is protein 20 percent. Course that if i'm understanding it correctly...lol

I tried Carb Manager briefly, but I couldn't really get it up and running. Ive been "eyeballing" it, but would much rather collect some data! Any tips would be SO appreciated!!

    I made them with 1/2 suet, 1/2 butter for added nutrients and keep them a little more firm. Used my Instant Pot mini air fryer and put it all right in the bottom w/o the shelf/basket like you did. Tasty!

    The brain and nervous system are made from lots of fat. The obsession with low fat is affecting people's mental function, and fat-soluble vitamin deficiency. I know parents who give their children low fat foods, and think they are giving them a healthy diet! In the UK the family doctors (GPs) call them "muesli mums" when the children fail to thrive. In our food aid charity we often have a hard time with parents who won't accept full fat milk for their children. Not relevant to this fab recipe, but worth repeating.

    These are great! One question... when inputting recipe in carb manager, I just put my beef and butter in? What about the grease from the burger? Or is that part of the beef?

      Counting macros can get really insane which is why carnivores generally don't. The macros in most trackers assume the fat is part of the beef. I just don't worry about these details anymore, it's too complicated!

    I think if I had that silicone pan I would remove the solids (strain into a 4 cup Pyrex measuring cup), pour the liquid fat into each muffin cup and then put some solids into each one making sure they sink into the liquid fat and then freeze it. I will try this at some point. It looks so good!

      Yes, I agree, that would be better than what I did, lol! I was just too excited to finally have a reason to use Christmas themed molds and then as I was doing it I realized I should have just used my muffin pan, lol!

    so, is cold fat an acquired taste? Is it just culturally icky to me, or what? I like fatty meats and frozen butter, but I have to be intentional about eating the gushiest parts of meat, because I know I need it. Will it get better? 5 months keto/3 mos carni

      Well I've always really liked cold hamburgers out of the fridge, so maybe? Maybe it's like cold pizza, my kids loved it but I hated it! I wouldn't try to eat these frozen, but I'm ok with them straight from the fridge. You could also leave out at room temp for a couple hours then eat?

    Anita I have some silly questions. Do you freeze them or only partially freeze them to get the fat to harden. Also do you freeze them and then allow them to defrost.       No silly questions! I freeze them just to get them hard quickly! After that you can either keep in the fridge to use up within a few days or keep in a baggie in the freezer to grab them for work or travel! I am taking one to work with me today with a couple boiled eggs and butter for a meal!

    Labs are not always what determines if you will die from heart attack or stroke . My grandmother had just been to the doctor her labs were all within normal range and she was bragging about how great they were. She died two days later of a massive heart attack .

      I keep them in the freezer and take one out in the morning to soften. They are quite delicious cold but then I also love cold burgers from the fridge. The amount of butter in there just adds to the great taste.

    Mine came out at 400F for about 30min., starting with frozen patties, in a cast iron pan, checking and "smooshing" every 10min. Used 2 sticks of butter, could have use more, I think, 'cause I used a regular 12 muffin tin. Tx KW! (P.S.: Made my cast iron pan very happy :)

      I prefer them cold from the fridge (not the freezer!). Some have told me they like them at room temp. Heating is not the best option as the fat that is warm and liquid makes some people feel queasy and the colder firmer fat is easier to digest.

      Yes! This is what I've done, I have it in chronometer. I use Carb Manager for the screen shots because I can get nice clear screen shots from it.

      I usually take a couple out at night for using the next day. But if that doesn't work for you, once these are hardened in the freezer, you can leave them in the fridge for up to a few days and then just eat them anytime!

    I think this is similar to pemmican. Amy at carnivore's Angel reviewed a carnivore bar and it's pemmican she said. I've never had it but she said it was fantastic so i want to try and make it... Or this. The bars aren't in my budget. Pemmican uses dried or dehydrated meat, i think. Are you familiar with it?
