My mother in law, who passed away many years ago, used to make maple fudge squares. A baked shortbread bottom with maple fudge poured over top and allowed to set. Cut into small squares, they were amazing with a cup of tea! :) Your recipe reminds me of hers, so I think I will take a stab at it. Thank you!

I don't know if anyone has said this or not, but the reason you don't scrape the pan is because there may be stray sugar that recrystalized on the bottom or sides, and if you scrape those into your fudge mixture before cooling, the whole thing will seize up and turn into a block of sugar again. :)

I hope that in directing people to it, fewer people will ask questions that are clearly printed in the description box and it will save me some time in the long run.

Well, i was able to use them on pancakes the first day, but now its getting thicker, and crystalizing. I am wondering what to do with the 1 litre that I have left. Wonder if I can make fudge with it, and if you know of any good recipes or ways to use it for such a recipe. Maybe I have no choice but to make maple candy with it as someone mentioned to me. any help would be appreciated.
Oh don't worry I fixed it. Basically it was really stiff and hard to beat, so I put it into the microwave for about 30 secs-1 min on high, then took it out, beat for about a minute and it worked! Tasted great btw! Thanks for the recipe!

I have made candied apples before and the clean up was pretty simple, boiling water in the pot to dissolve the candy. Is it the same for other sweets??? Thank you.
Keep beating for another ten at least. If it doesn't change, you probably didn't cook it to the right temperature. Did you use a thermometer? Making fudge is one of the more challenging kinds of candy to make.
mine isnt like that consistency at all. ive been mixing it for about 15 mins and its still at the beginning texture, in a big ball, not very liquidy, really tough :( what do i do?
Is this like sucre a crème? If so I know that my mom has been trying for over 25 years to make that one that my grand-mother used to make and even know she still never gets it lol!! Its always to soft or too hard. Although my dad puts it on toast when its turns out soft lol!!!

The ingredients list says butter is for applying to bowl, but the written instructions say to add it to the boiling mixture. The video doesn't show you adding to the boiling mixture. Please clarify what to do with the butter.

That looks really good. I have been hoarding a pint of real maple syrup. This recipe looks good as I wanted one with some butter in it. I never made the old kind of fudge because my arm got too tired beating it. I wonder if I can use the dough hook on my stand mixer? I don't know why not as you didn't beat it all that vigorously. Yes, I googled and evidently you can use a dough hook. They also have some for portable mixers; that might work too but stop if it's straining your mixer. Use two and take one out if it seems like too much.

It is completely a personal preference! I like the the texture of the crystals in fudge, but not too much.

You cant use whipped cream that is already whipped (fluffy). If it says whipping cream on the package and it is liquid you should be okay :)

Susan Gray the butter is used to line the bowl you pour the fudge into it doesn’t go into the pot at any time

Does it matter what kind of brown sugar? I noticed at the store that there are light and dark kinds.
I think you could use either of them, it will just change the final colour of the fudge I think

Light brown is fake. You need the real dark kind. Or you need to put in extra melassis.
Tbh medium brown produces such a DIVINE flavour it compliments the maple syrup super well
