So essentially, the heat causes the brass to transfer a little? Kind of like a light brazing of the part?
Will this method ruin a temper
It could definitely ruin a temper. I wouldn't use this method of you need your part to remain tempered
Hi! I tried this method on our front door handle, but not with a torch. I used a heat gun instead. Unfortunately it didn't worked out. Do you know why? Was it the heat gun? Or was the metal of the handle to soft? It felt like I scratched it more than brass plating it 😬

Well I'm not sure what type of material the door knob is made from but it could have been the heat gun, when using the torch you want to heat it untill the steel turns the yellow color right before blueing, that's when you apply the brass, also you need a pure brass brush! Good luck!
