Absolutely delicious! I added a few extra ingredients to mine... 1/2tsp cayenne pepper, 1/2tsp hot chilli flakes, 1tbsp flaked almonds. Then served with Parmigiano reggiano flakes and crusty bread! Nice stinging nettle soup! Thanks for showing how to harvest the nettles in a sustainable way, as well as how to prep them. Filling the sink with water was a good idea. Sauteing the garlic and onion in a bit of oil would really bring out the flavor. It's amazing how much leafy greens wilt down when added to boiling water. When I make Southern-style collard greens, at first it looks like they won't all fit in the pot...but then as they cook down, it is surprising how little is left. I think that adding the stinging nettles in stages was a great idea! Immersion blenders are great tools in the kitchen...secret weapons, almost. That soup looked amazing. Thanks for sharing. I never pick nettles at ground level 'cos dogs or other animal may have peed over them, always harvest from the tall ones snipping off the tops in the Spring, so good for you.
It's nearly August in the UK. There are nettles at the foot of my garden - can I still harvest them to eat?! I ask as you mention Feb to late June. Thank you!

But then recall my sister telling me she overheard a woman in the supermarket tell her grand daughter they couldnt have apple crumble as the crumble mix had sold out. Who on earth needs crumble mix? Its only 3 ingredients. 😂 So yes. Im sure there are lots of folk out there who cant even boil water. ❤❤ In fact ....er just have to go. My saucepan has boiled dry.......

That sounds like a nice mix. We used vegetable stock from the tesco store
