Mini Pecan Pies - Best Pie Ever

  • The Best Pecan Mini Pie Recipe
    Ingredients
    2 C. Pecans, broken
    1 1/2 C. Corn Syrup
    1 C. Sugar
    1/4 C. Butter
    4 Eggs
    2 teaspoons Vanilla Extract
    1/4 teaspoon Almond Extract
    3/4 teaspoon Salt
    2 Pie Crusts (we used store bought)
    8-10 Mini Pie Tins
    Instructions
    Preheat oven to 350°F
    Bring sugar and corn syrup to a boil for two minutes, stirring to ensure sugar is dissolved. Remove from heat and add butter and salt. Stir until smooth.
    Set filling aside and roll out 2 pie crusts. Roll them fairly thin and use the mini pie pans as a template. Add 1/2 - 1 inch margin to ensure a good fit. You can re-roll scraps.
    Crimp or trim edges as desired. Prick bottom of crusts with a fork to prevent bubbling.
    Be sure to let crust chill in fridge for 20 minutes after handling.
    Once pie crusts are chilled, beat your eggs and mix into filling until smooth again. Stir in pecans.
    Fill your crusts with pecan filling until almost full and bake on a cookie sheet for 23- 28 minutes.
    Let cool and Enjoy!
    These freeze very well in an air tight container or zipper bag.

    I make pecan pies a lot. But this recipe is, hands down, the best I've ever made. I made the whole pie. This will be my "go to" pecan pie from now on. That little touch of almond and salt made such a difference

    When I was a kid I used to keep the minis you get at the convienience store in my bag when rabbit hunting in the fall. I love these, nice video.

    I have been looking for the perfect pecan pie recipe and found the exact recipe you use on line last year, but I use 1 1/2 cups of pecans...my son and son in law loves this version..I'm gonna try the half white and brown sugar combo next time...as well as doing the minis...thanks for sharing...

    Love those but how long did you bake them at 350⁰

      Twenty minutes. I think our oven runs a little low, so maybe check them at 16 minutes to see if the filling has puffed up. If so, and the crust is golden, they are done. They will fall back into place as they cool.

    Hi! Can I use this recipe for a 9 inch pre made crust? If yes, how long should I leave it in the oven? Thanks!

      Great question. Absolutely, you can use it for a 9 in pie. I still bake it at 350 , but let it go for around an hour. At 50 min I check to make sure I don't need to cover the crust with foil in case it starts to get dark. It's usually fine. If it hasn't begun to puff up slightly in the middl (it will come down when it cools), I let it go another 5-10 min. If you go by thermometer, you're looking for 200 f inside.     May I ask where you purchased your many tins and how deep they are

      Hi! We got ours at a local cake decorating store. If you're in the Phoenix area check out abc cake supply. They also have them on Amazon. I think ours are 3 1/2 or 3 3/8 inch across and 7/8 inch deep.

    So I’m making them NOW. And in the written recipe I don’t see when I’m supposed to put the vanilla’s in? So I added it to the egg mixture before stirring it into the corn syrup mixture. I hope that’s OK. I’m going to go back and watch the video And see if I can see where I’m supposed to put the vanilla in. I doubt that it matters at one point but just in case lol!

      Awesome! They are worth the effort. You're right- add the vanilla with the eggs after cooking the sugar.. really anytime is fine, but that's when we add it. Sorry about any confusion. 😊

      @@paulandbenny Thank you for the fantastic recipe! They turned out fantastic! I mean taste was LOL! I I am 60 years old and I have never baked! Can you believe that? I just did not have the confidence. TH-cam is taking a lot of the intimidation factor out of it and therefore I have experimented a bit more. Your channel has the same affect. Not to mention you’re so personable and likable and it comes across on the screen. So anyway, they don’t look as pretty as yours but they really do taste fantastic and I would like to thank you again for making it’s so enjoyable. Merry Christmas to you You both!

      We got them at our local cake supply store in Phoenix: www.cakearts.com/ The ones we used were 3.5 inches but they have other sizes too.
