You extract more flavors and kill harmful bacteria present on the raw fruit. Then when you put the baker's yeast doesnt compete with another microorganism to ferment the fruit.
There is a thumb rule of adding One to two litre of water per kg of fruit depending upon your choice and preference. So I think upto 1.5 litres of wine from 1kg of chopped pineapple. Add some fresh grapes to your fruit wine to make it bold. Use natural home made yeast or wine yeast for better results. General purpose or baker's yeast imparts some undesirable flavour, aroma and taste.

@@Lekshmitalks use only upto 70% of the capacity of your jar. There is a high probability that the must would overflow if you fill beyond this point. While in secondary stage you should fill up the jar leaving very little space on the top.

Pineapple ferments extremely quickly, not just for wine but for vinegar too. Too bad it cannot be grown in my zone.
