You can use allulose even when you're not using this for ice cream. It really depends on what recipe you're using this in. Allulose stays soft so if your recipe needs to crisp up Allulose would not be the best choice. Also Allulose is usually more expensive.

Spoon test for doneness method. After dipping spoon into the milk, turn over spoon. Run finger lengthwise down middle of spoon. If milk DIVIDE does not run back FROM 2 sides into whole spoon covered, it is done. Should look like a river between to banks of land.
I am thinking of making a keto version of 4 Ingredient Almond Joy Cookies. I can sub everything out very easily using low carb chocolate chips, unsweetened coconut flakes, and of course chopped almonds. Will these recipes for your sweetened condensed milk make the equivalent of 1 can of Eagle Brand? Or will I have some leftover? I have thought of using the thick part of canned coconut milk and add some sweetener but have not been brave enough to try it. LOL
That sounds delicious ! These recipes will make about 1 cup of sweetened condensed milk. A 14oz can of Eagle brand sweetened condensed milk is about 1 3/4 cups so you would have to make 2 batches of the keto condensed milk and measure out the amount you need. You can always use any leftovers in your tea or coffee it makes a great creamer substitute. 🙂
Only heat safe bowl without infusing plastic into your condensed milk is GLASS. Also Strainer should not be plastic. (Using stainless steel bowl will take longer to cool.)

You can use salted or unsalted but I would suggest using unsalted. You can always add salt if needed to whatever recipe you use this for.

Yes those should work. Coconut sugar does contain carbs and has a high glycemic index so it is not keto.

Why do you all put butter in it? What is the butter for? Do Borden corporation put butter in their condensed milk?
The butter makes it creamier and easier to pour. It can be made with out the butter but most likely will be too thick and won't "slide" out
