If you're ever interested in how the US butchers goes, you should look up bearded butchers. SUPER informative and do amazing butchery videos for our style of cuts like the thors hammer and the tri-tip. love watching butchery videos it really is an art!
I wish butchers would leave more fat on the meat. Someone once told me that fat adds flavour and I find that true. Alot of meat I get today that has been trimmed way to far is often tough, tasteless and hard to chew once cooked.
How long were the heifers hanging in the fridge before been cut up? I think they shouldn't mince the meat so much, like to feel a bit more bite in sausages and burgers

We call it rib eye im butchering 50 years I also do the killing and bone and roll the meat
