    Never thought to do this! What a great idea, thank you!!! I’ve been unable to find canned shrimp for quite some time, and ThriveLife has discontinued their shrimp. This will make it so I can make ‘shrimp burgers’ (they don’t sound good or healthy, but they’re shrimp fritters on a hamburg bun with tartar sauce or coleslaw) no matter what the future holds. Stay safe, strong and free.🇺🇸❤️

    What is the reason for cooking in the brine , since they are pre cooked and canned in hot water . ??

    • @limitedaxcess
      @limitedaxcess ปีที่แล้ว +4

      Because they weren't precooked, but deshelled and deveined, and that's what the Ball Blue book says to do, but I think it also clears the shrimp of bacteria, and imparts a flavor. I made a lemon based brine for the jarring and let me tell you yuuuuuuuuummmmmmmmmy!

    I am about to do this. I have big shrimp with their heads on fresh frozen by the aquaculture farm. I really want to keep the shrimp heads for their extra flavor. Maybe I'll have to make a shrimp boil of them and by draining off the heads separately. The flavors from these heads and the peelings make the best soups. Plus I get extra calcium and chitlin in my broth for nails, skin, cartilage enhancenent. Have you ever tried to save your shrimp juices after processing your shrimp? Am looking for shrimp soup recipes now.

    • @Anne.Pinkerton
      @Anne.Pinkerton 5 หลายเดือนก่อน +1

      I save the "juice" from crawfish and shrimp boils. Usually a couple of cups will do per bag and I vacuum seal that "juice" until I need it. It's great as a liquid in Shrimp 'N' Grits making the Shrimp have more of a "shrimp boil" flavor! I also boil those shells down for hours, strain and freeze!

    Question: I spent 25 years in Maryland and I make great steamed shrimp. Raw, I steam in beer(alcohol burns off); I layer in a screen colander shrimp, a sprinkle of celery seed and top with Old Bay seasoning (we use a good amount as we love it). Layer until colander is full. Lid on pot and when pink, it’s done. I know you need to pull the shells off but are you able to can the hot shrimp and can you use the juice from the steaming process??? Can this be water bath canned? Thanks!

    hi got a few questions,,
    1)what was the point of using vinegar or brining if you are only gonna end up rinsing the shrimp after wards?
    2)are you not over cooking them with 10 min in the boiling brine? seems like an unnecessary step before the psi canning process
    3)they are already cooked why not just add the seasoning you want to each jar of shrimp and then proceed with the canning process? anyways i would rather do this with raw shrimp because the long psi canning will overcook them since they already cooked way to chewy i would think would be the end result but maybe it works for you and they come out right idk
    4)would have been nice had you explained the canning process more and the ending how to let them cool and how the lids suck on etc
    thank you

      I think the vinegar/salt brine helps the shrimp. Using that brine would make it extra salty. She was using frozen shrimp so the hot brine helped thaw the shrimp. She had her jars heating up /sterilizing, so the food had to be hot to prevent the jars from breaking.
