    Eric and Ariel, we are big proponents that YT is at its best when information is shared for learning, rather than just entertainment. Of course you have both, but these episodes where you share some knowledge and ideas make this literally our favorite homesteading channel.     My absolute favorite way to eat canned salmon is in a cream cheese dip. Whip 8 oz of cream cheese, add 1 tbs of lemon juice, 6 oz salmon, garlic salt, garlic powder, black pepper, salt to taste, and fresh chives. Mix it all up, form it into a ball... and top it with crushed pecans. Pair with your favorite crackers and it makes the absolute best dip ever.

    I learn so much and really feel gratitude I found your channel.
    Learning how to prepare meals with preserved food (especially expensive proteins) with simple recipes
    helps to justify buying in bulk at Costco meat, fish, poultry dept.
    Especially for those financially struggling: loss of jobs, young families, single parents, welfare, soc. Security....

    It's good to see a video made by people who have actually done this many times before and perfected the method. There are WAY too many youtube videos of people "showing us how" to do recipes that they are literally atempting for the first time as they're filming it. Good job guys :)

    Another great video. I've watched your previous canning videos but your instructions tonight were clear, concise, and accurate. Sorry you has a couple of failures but seeing those in reality is so much better than reading a manual. You guys are a great team too! I love smoked salmon, especially wish I had tasted your candied salmon from last year. That looked so good.

    That looks so good. My favorite is salmon balls. Same as patties but roll them into balls. Serve with teriyaki sauce, or Alfredo, or tarter. I use dried mash potato flakes, egg, onion and celery. Also, roll the outside in dried mashed potato flakes for extra crispy.

    I love watching you prepare food to be self reliant. Why not mix the salt and sugar together then sprinkle it using just one container. That way there's no guessing on even distribution. Just a thought.

    Wow, first time I've seen you be so thorough on canning instructions and safety standards and I've watched all of your videos. It's good to see. That is a lot of nice, yummy fish.     I know most people toss the lids after opening a jar and using the contents but I was taught to wash the jar and lid after using the contents, flip the lid over and screwing on a band to keep the empty jar clean until next canning season. I admire your education regarding your process. My parents grew up during the Great Depression and many of their canning skills were learned at that time. One of my uncles used to smoke the salmon filets and without canning, they were kept in the unheated attic in cloth bags (maybe cotton pillow cases). Prior to eating, he would remove a filet and the meat would peel from the skin in thin sheets. Have you ever prepared fish that way? Regrettably, he died before I could learn all elements of his process and my mom didn’t know.

    just curious, since I am assuming it gets pretty cold at night in Alaska - were you not concerned about letting the jars sit outside overnight after coming out of the pressure canners? I thought drastic temperature changes could cause issues with sealing. Your very detailed instructions will be very helpful to new canners out there - I have 25 pounds of ground beef to process tonight, but won't be doing it outside :)

    Salmon spread one can canned salmon drain mash up ad mayo little mustard salt pepper sweet or dill Pickle a little onion mix slather onto a sailor boy cracker. A Sunday afternoon favorite at home.

    I love your channel and have watched every video multiple times. I have recently been rewatching all of them and realized that I had a recipe you might be interested in. I am sure you have made a million salmon cakes but this recipe makes far and away the best salmon cakes I have ever tasted. They are loaded with veggies and I know how much you like veggies so I think they might be up your alley.
    VEGGIE-LOADED SALMON CAKES
    INGREDIENTS:
    - 20 oz salmon, cooked or canned salmon (drained)
    - 1 small onion, sweet or red, minced
    - 2 stalks celery, finely diced
    - 1 small red bell pepper, finely diced
    - 1 small yellow bell pepper, finely diced
    - 3 Tbsp butter, unsalted
    - ½ cup mayonnaise
    - 2 tsp dijon mustard
    - 2 tsp Worcestershire sauce
    - 2 Tbsp capers, minced
    - 1½ tsp. Old Bay seasoning
    - 2 eggs
    - ¾ cup Panko breadcrumbs (more as needed)
    - ¼ cup parsley, chopped
    - salt & pepper, to taste
    - oil, for frying
    INSTRUCTIONS:
    1. Melt the 3 Tbsp of butter in a saute pan and cook the onion, celery, and bell pepper until softened. Season with sea salt and pepper. Let the vegetable mixture cool completely.
    2. Combine the cooled vegetable mixture with the salmon, mayo, Dijon, Worcestershire, capers, Old Bay seasoning, eggs, Panko, parsley, and sea salt and pepper to taste. Mix until completely incorporated. Start with ¾ cup of Panko and see if the mixture forms a nicely shaped cake. You can add up to 1 cup of Panko if needed.
    3. Let the mixture chill in the fridge for 30 minutes and shape into patties of your desired size.
    4. Heat a skillet with oil and fry the salmon cakes until golden brown on each side, about 3-4 minutes per side.
    NOTES:
    1. Be gentle with these when frying. The key to a good salmon cake is plenty of salmon and not as much filler (breadcrumbs). You can add more breadcrumbs but they do stay together with just ¾ cup (chilling them helps!). Just be gentle when handling the cakes, make sure your oil is nice and hot, and try not to flip them too much (just once will do).
    2. For the herbs, you can add all parsley or a combination of half parsley and half dill.
    3. Try topping these salmon cakes with a lemon yogurt sauce.

    If you haven't yet, you have to try it on pizza with whatever fresh veggies you like. I do it with home jarred tuna in oil that I jar with lemon, and I mix the oil with fresh garlic paste to season the crust.

    Wash the entire jar in warm soapy water, especially the canner with the broken jar. Your jars won’t be so cloudy. They will be beautiful. Good job.

    Oh my goodness, I'm freaking out at how many filets are there. I'm so jealous. I made a cardboard cold smoker but haven't used it yet. I'm excited. Needs to cool down here. Here in Michigan it's in the 90's the next couple days.

    Thank you .. I've been scared of pressure canning. You managed to explain it in a way I understand 👍 you cans are clear because vinegar works better then windex and is a disinfecting as well .

    So jealous. Growing up we fished Forks of Salmon in Northern California. Some we smoked completely and some we canned. So good. Your salmon filets are huge and look fabulous!

    I really appreciate the vibe and style of this video, normally I sit back and just watch in awe and excitement over the daily tasks and adventures you both encounter but this felt very much like a "How To" guide to canning that was super easy to understand and presented in a very natural/simple format for literally any one to understand from beginner to experienced canner.
    For someone like myself who has recently taken on canning (primarily inspired from your channel) this has really helped to answer a few questions I had and will be good to build experience off of.. You guys are the best!

    My experience, canning since about 1985 - the jiggler only has to pssst occasionally to make sure your temp is correct, in grandma's old house you could check it by just stomping on the floor, the psst would tell you it's still working; the thing that pops up is what stops you from opening the lid while there is still pressure inside. The "band" is always reusable but the "flat" where the rubber seal is must always be replaced. p.s. my son's name is Mason.

    I usually just make salmon salad (like tuna salad, only salmon); break it up with a fork, add chopped celery, onion pow, mayo (made with avocado oil), and some lemon juice. Can make into sandwich with some rye toast, swiss and lettuce, pickle etc or just eat the mix with a fork. LOVE canned salmon :) Thanks for sharing your doings .. so nice you two can catch and process together!

    We love using salmon for a spread. We take canned salmon, a brick of cream cheese at room temperature and a bit of smoke seasoning…stir it all up and serve with crackers. We usually use wheat crackers like triscuits.

    64 jars! Wow! You really got that butterfly technique down pat! So beautiful and my fave way to eat canned salmon would be a spinach and egg fettuccini with Alfredo sauce and mixed with sautéed garlic, mushrooms and green onions with peas added last dish with Parmesan cheese! Next would be in sushi with pickled veggies, macadamia nuts, avocado and black sesame seeds.

    Great timing you two. I just put 4 racks of Elk and Deer in the smoker. I use Apple, Apricot, Plum or Pear from our orchard. Depends on the brine and rub.

    Set a net with my dad a couple days ago. Then I smoked walleye and canned whitefish with my mom yesterday. This made me think of them lol Love your videos! ❤

    I do a wet brine with molasses, brown sugar and rock salt in a trash bag sitting on ice in a cooler for 24 hours, then a light wipe down to remove some, not all of the brine. really low temp smoke for 2-3 hours, and can with jalapenos like y'all do. -Greetings from Palmer!

    My favorite way is brining and canning. Basically the same as how you do it, but instead of smoking them, I just add a little bot of liquid smoke to the jar before canning. Tastes almost the same and saves a few steps in the process
