      Usually Mett, also known as "Hackepeter" is not pure grinded meat, it IS spiced with pepper and salt. (Zu Deutsch: Wäre Mett nicht gewürzt, wäre es ja nur Schweinehackfleisch)

      Butter muss genauso wie Pfeffer und Salz. Erstere kann man aber auch sehr gut durch Griebenschmalz ersetzen.

    have eaten Mett for decades. Germany has very high hygiene standards in its meat . So I eat raw pork here with no worries. Something I would NEVER do any where else.

      Ein Kilo Mett??? Wir sind eine dreiköpfige Familie (der Lütte ist knapp 5) und wir schaffen ein Pfund zum Abendbrot. Bei 20 Brötchen würde ich mit 2 kg rechnen - aber hey, ich gehöre ja auch zu den Mett-Fans 😍

      Lidl UK sells Brötchen and their „Country Loaf“ comes very close to a Roggenmischbrot / Sauerteigbrot. I get lean minced beef with that to eat it raw as Tartar. I did not trust the minced pork to make Mett.

    There is one rule I learnt when I was a kid! You have enough onion on your Mettbrötchen when the next town to you are able to smell the onions on your Brötchen!

    If there is something holy in germany than it is beer and Mettbrötchen. If somebody celebrates his birthday in a company we will always have a "Mettigel" (exactly translation is Mett Hedgehog). This is an unspoken rule you will never forget

    I'm from Germany and I love Mett. I was actually very impressed by you just going for it. I see a lot of people from different countrys try it but they are always very hesitant and mostly only try a tiny bit of it. I'm glad you liked it.     For everyone outside of germany currently seeing this: Freshness and food hygiene is key. Also, it has to be very lean meat and it's got to be ground very fine and seasoned with a bit of salt. After that, you can always add pepper, salt, garlic, chilli, paprika powder, whatever you want - and of course a truckload of onions.

      In general mett is far from being lean whith a fat% ranging from 24 to 28. The grinding is done different from place to place and can range from very fine to coarsely ground. I personally like it just with some onions and black pepper (since for my taste there is enough salt added already.

    The way you season it is based on what Mett you get. Some Butchers season their Mett stronger, somer lighter. Salt and pepper are always a good idea, as well as onions and butter for the Brötchen. I personally like a little grained garlic as well, but thats personal taste. However just experiment with it, you can throw most stuff on it and it will go well.

    There are a lot of rules for handling minced meat or Mett. One of them is the need to eat or cook minced meat very quickly after it got minced. Usually as a rule of thumb in less than 24h.

    Im Dutch living just 1 km from the German border. I love mett. Its actually the first thing i ate after giving birth and was allowed raw meat again.
    In the Netherlands we also eat filet american a lot, also a raw meat spread.
    I dont get the fear of raw meat. If its fresh and clean its safe.

      Selbes gilt für Berlin. Ich als rheinländer dachte, dass der begriff "Mett" standartisiert sei ;-;

      @@LastIcebear in Sachsen ist Mettwurst etwas anderes, ähnlich wie Teewurst. Auch sächsischer Leberkäse ist eine völlig andere Wurst als der bayerische Leberkäse in dem gar keine Leber enthalten ist und der bei uns Wiegebraten heißt. Auch Backwaren heißen in jeder Region anders. Deutsch ist wirklich nicht leicht zu verstehen. Das hängt auch noch mit der deutschen Teilung zusammen. Im Osten blieben die älteren Begriffe bestehen, Hackepeter ist die alte Bezeichnung dafür.

      @@automatix5 So nannte man das vor der Wiedervereinigung im Osten nicht. Das hieß Wiegebraten, war auch etwas würziger als jetzt. Jetzt liest man aber auch häufig Fleischkäse. Sächsischer Leberkäse ist eine andere Wurst, die ist auch schnittfest enthält aber Leber, die man auch schmeckt und wird dünn geschnitten auf Brot gegessen.

    Our local butcher makes some really great Mett/Hackepeter.
    In addition to salt, pepper and onions, they mix green peppercorn into it. Absolutely delicious. (Though the amount of onions is a bit low for my taste, I generally can't be bothered to add more)

    Raw fish= sushi: okay
    Raw cookies= cookie dough: okay
    Raw pork= mett: why should that be also okay
    The problem is the hygiene in america

      Parasite problems with raw fish do exist, commercially usually solved by deep-freezing. Cookie dough depends on what is in it, with eggs Salmonella is also a thing.

    In Nordrhein-Westfalen where i live i only know raw (Pork) Mett with fresh Salt and dried White Pepper on top of it plus fresh Onions.

    I saw already other youtubers reacting to "Mett-Brötchen" and they all were afraid to try it! But the reactions are all the same: "Omg, this is delicious!".
    Well, as this is a German product, be sure it's safe to eat :-) My fav. version is with salt, pepper and a some onion-rings on a roll, but it works on bread as well (I prefer "Graubrot", because Toastbrot is kind of sweet)... Greetings from Bavaria, Germany.

    In Italy or in Italian restaurants all over the world you get Carpaccio. Raw beef, not even minced just cut in thin slices and it's delicious. Japanese and many other cultures eat raw fish...
    It's just a cultural thing and it can be fun to be open to other cultures 👍

      @@annother3350 Neither is raw pork as long as the rules are followed. The number o food poisonings per capita depend far more on the quality of the raw materials and the training and control of the people who work with it. The number of food poisonings in Germany is very low compared to a world average and even to other industrialized countries. USA 60mio cases, Germany 200.000 with a quarter of the population!
      And to get the full picture - hospitals and family physician are bound to report each case of food poisoning to the public health agencies so that they can check the possible source of the contamination.

    Eating Meetbrötchen is one of my best childhood memories. In the 80th every Saturday evening my parents and I came together to eat Meetbrötchen as dinner. At this time the working week was over. Both my parents worked. Before eating everyone took a bath or a shower, what happens only once a week. For Meetbrötchen I was allowed to drink one class of Coca Cola, what was a luxury product for us. After dinner we were watching one of those big saturday evening shows like "Wetten dass?!"
    I am from lower saxony, but we eat the Meetbrötchen exactly like you did in Baden-Württemberg. Eat the meet only fresh from the butcher shop. Don't keep it a day in the Fridge. Best regards Manuel

      Hi, I tried the zwiebelMett that is in the pre-packaged tubes, but you are right, Matt is much much better when fresh and from the Metzger! I too remember getting a special coca cola drink once a week in the US, we usually had it with our Friday night dinner as a real treat!

    Mett on rolls with salt, pepper and onions. This is the standard composition. A good butcher has already seasoned the Mett itself a bit, then it tastes even better.
    One of my favourite meals, for the quick hunger between through, in the morning or in the evening.

    Some additional German food ideas, my all time Top 3 favorites: 1) Rinderroulade with Kloesse and red cabbage (best to eat in a good restaurant, takes some hours to make it yourself). 2) Soljanka soup (typical east German dish, best to eat in Berlin at Konnopke Imbiss) 3) Currywurst Spezial (sliced up sausage with curry powder, fries, ketchup, mayo (rot-weiss) onions, best to eat in the west of Germany, almost great everywhere "im Pott" (NRW).

    When I still worked at the German post office, I had to buy "Mett" every morning for my postal inspector. He needed raw meat to work at all. I also love it best with onions and salt and pepper. And please never cucumbers.

    Congrats for trying! Mett is just way jummy! A little salt and pepper and mmmmmmmmmmmmmmmmm!
    And to your american Family and Friends, don´t try it with pork filet from your grocery store! That meat is usually already dead for a few days. So get it from your local butcher. Here in Germany we have strict rules on how to make the Mett that helps keeping it safe!

    Glad you like it, next time try it with a bit of salt AND pepper. It makes such a difference! And also in my region we call Mett "Schweinemarmelade"... so "pig jam" haha! I'm always a little discusted by this term.

    i am from region around Berlin. i grow up with mett(Hackepeter) and i love it. i make Bouletten and i nibble the Hackfleisch (Mett(Hackepeter).i make other things with Hackfleisch and i can't stop myself and nibble the Hackfleisch. i LOVE it.

    I 'import' the Mett from Hesse to Freiburg. The Mett from the butcher in my aunts village has a much better seasoning than any of the stuff you can buy here. Anyway, be careful! Mett is addictive (says someone who has 2kg Mett in the freezer).

    Usually the butcher mixes in some salt and pepper. You will find out different butchers make different mett. The only thing is: eat it allways fresh on the day of purchase and never buy the industrial stuff. If you have some left over make meatballs. Mix in some onions and fry them.

      Actually the industrial stuff is very okay to eat too. Not as good as it is fresh, but there is nothing bad about it.
      I recommend the more coarse ones though.

    I am Jewish and I do not keep kosher. In 1989, I visited Munich for the Oktoberfest and I had a wonderful time. In 2018, on a safari trip in Zimbabwe, I ate a delicious filet of warthog. Because of how I do not keep kosher, wild boar meat, bacon, ham, BBQ pork spare ribs, and roast pork knuckle are among my favorite foods. But, there is no way I am ever going to eat raw pork because of trichinosis!

    There are just 2 rules about Mett: 1) Alway keep it cool! 2) Eat within 24 hours!
    I prefer it with Brötchen ("Schrippe" cuz I'm from Berlin ^^), Butter, Onions, Pepper & Salt. ;)

    Salivating just a little bit here in Florida. This was the classic "Pausenbrötchen" at my school that you could buy for 1 DM or so during the long recess at about 10 am, which would keep you going until lunch.

    I my area they don't make it just for a specific customer. They made it fresh of course but so much people buy it that they just have it.
    You can get different variations, Schinkenmett which is made from the ham of a pig, Zwiebelmett with is with onions, Jäger or Kräuermett which is with a mixture of herbs and spices.
    For tartar, you have to ask. They will made this fresh because beef it is not so often bought for raw eating like pork.

      Well, most people on this planet wouldnt recommend eating raw pork either.
      Japan has Raw Chicken Sashimi for example, not sure if i'd try that but i'm not saying anything against it. Chicken has to be at very high quality to do that, Salmonella is simething that usually comes with lower quality chicken.

      @@derpizzadieb the problem with chicken is, that even higher quality chicken comes with lot of bacteria and maybe not deadly can cause some serious trouble. pork has less bacteria harmful to humans. at least in most parts.
      im aware that many asian countries eat basically anything tho, like bats / corona. not a good idea.

    I dont know if i do it wrong but i dont use butter with Mett, Mett istelf is very "fatty" you know. -> Mett is a preparation of minced raw pork that is popular in Germany and Poland; a similar preparation is made from beef. It is normally served with salt and black pepper, and sometimes with garlic, caraway or chopped onion, and eaten raw, usually on a bread roll. At a buffet it is sometimes served as a Mettigel (mett hedgehog). It is also sold in the form of mettwurst, a spicy, raw sausage, often smoked. In Germany, laws require that no more than 35% of the mett be constituted by fat.

    i love that fact, that mettbroetchen have become a bit of an internet phenomenon!
    IMHO, ideally the mett should be ice cold, like 2-3°C, (it's to be kept below 4°C anyways), and with a lot of coarsely chopped sweet/mild onions, because the crunch and juicyness really add to the texture. for the same reason, crunchy danish style roast onions (available at almost any supermarket here) are a wonderfull topping to try, if you wanna get a little kinky.

    Mettbrötchen = the so called "German Sushi" ist totally delicious. Yes, bun, a little bit of butter ( some make it without ), fresh slices of onions, salt an pepper an it is a dream. But only fresh at the buchters. Sometimes the packed "Zwiebelmettwurst" could be kind of tasty, but mostly it lackes taste and consistency. And a dream from the past... alsmost every party during the 70th or 80th at home or in the garden had it, a "Mettigel" = "Mett-Hedgehog"
    For trying some special German things? "Blut & Leberwurst" or called "Wellwurst" ( but not "Tote Oma", thats really jikes ), Grühnkohl/Braunkohl ( when the winter comes ) and as dessert: Kalter Hund!

      Weißwurst has to be eaten the correct way (almost no body does it anymore) which is called “zutzeln” means sucking because you have to suck it out of the skin. Pressack is a good idea as well it is the stomach of the pig filled with meat and skin so that is gets a jellyish consistency and there are two varieties red and white. Guess what the red one has as coloring agent. Yes, it is blood. Both are delicious with mustard and pickled cucumbers.

    Congratulations! Mettbrötchen are awesome. I suggest trying the following German dishes:
    Eier mit Senfsoße - hardboiled eggs in a light mustard sauce served with potatos and Hühnerfrikassee, which is cooked chicken in a white sauce with peas and, as it is the right time of the year, asparagus, served with rice. Enjoy your meal!

    It’s not an everyday thing but a once in a while. Been eating it for years. I like it made like honey garlic sausage, salt and pepper. It’s addictive. I don’t put it on anything.

    Etwas, was es nur im Süden, besonders in Baden Württemberg gibt, ist Ochsenmaulsalat. Du bekommst Ochsenmaulsalat in guten Metzgereien, manchmal auch in schwäbischen Restaurants. Dazu isst man Bratkartoffeln und ggf. auch ne saure Gurke.

    "gürkchen und mettbrötchen" the ultimate german breakfast.....and you are right. A little salt in pepper the next time.if you near hamburg you have to taste "rollmops" is fisch (herring) and would complete your (north)german breakfast

    So toll das du es einfach probiert hast. Es ist so lecker...ich habe direkt Lust bekommen es mir zu kaufen. Und ja, es muss ein klein wenig gewürzt werden.

    hey sir, new and excited subscriber :) i used to like mett, but gotten anxious eating it for the reasons you have mentioned. only from a trusted butcher if any. keep them clips coming and stay healthy in these troubling times.
