Goan Sorpotel | Sorpotel Masala Recipe

  • A dish can't scream "GOA!" louder than this! Sorpotel is a Goan favorite - a feast staple that is enjoyed with sannas, pilafs and even plain rice and breads! Traditionally, the recipe calls for nearly all portions of pork, but I've skipped out the offal (it's simply a personal preference). Apart from that, the recipe for the 'Sorpotel masala paste' and the cooking are what are commonly practiced in most Goan households :)

    Ingredients:
    To boil the pork meat:
    1 and 1/2 Kg pork, boneless (use meat cuts as desired; I skipped the offal)
    2 cups of Water
    1 teaspoon Salt
    1/2 teaspoon Turmeric powder
    For the masala paste:
    15 Red Kashmiri Chilies
    15 Red Bedki Chilies
    20 Peppercorns
    18 Cloves
    1 heaped teaspoon of Cumin seeds
    3 inch piece of Cinnamon stick
    1 and 1/2 inch piece of Ginger
    20 Garlic cloves
    8 tablespoons of Vinegar (preferably Goa toddy vinegar)
    For the Sorpotel gravy:
    300gms or 3 large onions, finely chopped
    30gms tamarind soaked in hot water
    6 Green chilies, slit
    2 tablespoons of Palm jaggery
    Salt for taste
    1 teaspoon Sugar

    Liked your step by step procedure. I have enjoyed eating at my relatives homes. I have not tried myself.
    Just a question, Why do we need to add jaggery to sorpotel?

      Hello, Rose :) Thanks for you kind words💫
      The jaggery is for slight bit of sweetness. The sorpotel is a sour paste since it is vinegar based. There is salt and spices that are added and the sweetness from jaggery helps to ‘round up’ all these flavours. Plus, palm jaggery has a dark colour so that ultimately affects the final colour of the sorpotel.
      All this said, you may skip it, if not available, and simply add sugar (add little at a time, adjusting as per your taste buds😊)

    Looks Lovely, only add little more Goan vienegar whilse grinding in the mixer,if the mix is grinded on the grinding stone, instead of tamrind juice.

    what can i use instead of bedki chillies.. i dont get them here so can u tell what can i replace those chillies with..tell me if i can use normal chilli powder and how many tablespoons of red chilli powder is equal to your 15 full bedki chillies?.. pls advise me . thankyou

      Belly works well as it will have about 45% fat. Without fat it is no fun !!

I really want to make an authentic Goan Sorpotel, I have nice memories of my Nana making it for me as a child. Is there an alternative for the Bedki/Byadgi Chillis please?       @@elizabethf3647 You can use regular hot chilles instead of bedgi. bedgi are medium hot so use accordingly. you can skip bedgi and instead increase both kashmiri chillies and pepper by 50%

      The addition of cumin and cloves has been demonstrated in the video; as for Cardamom, I don't use it for sorpotel.

    Every Goan has a different style of cooking I use tomatoes and liver also, it's good.

    What is offal? I don't have palm jaggery. Can I use the normal jaggery which u get in Mumbai stores. No goan toddy vinegar can I use white vinegar or sugar cane vinegar. I am very happy that u have not used liver. This is the first time I will be cooking pork sorpotel

      Hi, Philomena, so glad to see your interest in preparing Sorpotel!
      Offal is the collective term for all the internal parts/organs of the meat (eg. Liver). Thanks for appreciating the absence of liver :)
      If you don't have palm jaggery, no problem, you can skip that and instead use about 1 tablespoon of sugar. (Tip: sugar sweetens more than jaggery; put little, you can add more if needed after tasting, if you put more you can't undo it!)
      And you can use white vinegar, it's alright; I haven't tried sugar cane vinegar so I can't comment on that.

    Is it necessary to add tamarind water.... can't we make it without that

      It's best if you can get some tamarind, because it helps the gravy get a slight degree of thickness (and also I pacts taste). But if not available, then you may need to increase the vinegar.

      Hello, Patricia! The range of spicy would depend on the heat of the green chilies. Red chilies will give just enough; the green ones will increase it. So, be careful as there are different varieties of spicy green chillies. The ones I used were medium spicy.

      Thanks for sharing that, Lavina, I consider it a healthy practice to broaden my learning to the many different approaches to cooking a particular dish✨ The elimination of tamarind is understandable, since the vinegar does give sufficient sourness, yes; we add it still for the subtle sweetness it possesses :) Green chilies are to give it the pungent heat💫
