This soup has nothing Italian about it, it’s actually Spanish. Do obviously have no clue who introduced tomatoes to Europe, the Spanish. They brought tomatoes from Central and South America. So many dishes were brought to Italy by the Aragon reign when they ruled Italy .
I always hate to throw away the last third my hard loaves of French or Italian bread. Yay! Now I have a recipe to use them in. I'll check out your ribolitto recipe too.

With respect, the prep time on the recipe is WAY off. It would take 5 minutes just to gather the ingredients, let alone prep them. Perhaps "5 minutes" is a typo. It seems to me it should be between 15 and 25 mintues.
The true recipe does not use onions nor crushed red peppers. You should sautee the garlic cloves that are cleaned and smashed a bit and then you are to TAKEN those cloves OUT of the olive oil. Then add the fresh basil to the oil, being sure that the dried so as not to splatter... The Tuscan bread should be cut in thin slices when it is a bit old but not yet dried out. Then crumbled into the pot. I learned this recipe from my Florentine mother-in-law. Your recipe hear looks pretty good but you also missing the vegetable broth needed. Anyway, you have a different version of a Tuscan dish. Pappa means in the end it should be more like baby food consistency.
