I was planning on making the the sponge and assembling the night before and doing a crumb coat before refrigerating/ storing the buttercream to then fully coat next morning - would this work? Beautiful cake thank you. I probably cannot justify buying those size tins for occasional use, plus storage space. I could buy one tin and make half the recipe but will do a google search as I have smaller square tins that might work for the volume of batter 😁. I love watching you bake.
I hate asking about substitutions but is there any way i could substitute the glucose syrup? I would assume honey or maple syrup would have too strong a taste. (I just get headaches from glucose syrup is all)
I just made this cake. It was far too sweet for my liking. The chocolate ganache was overly sweet and the buttercream cream when followed your recipe to the tee, was still gritty and extremely sweet as I added more cordial as advised by you to make it looser. Should have just added water instead.

Corn syrup would work. But also you can get away with leaving it out. The ganache may split a little but not the end of the world :)
