  • Yakisoba is one of the most recognizable Japanese street foods, and just the smell of the spiced sweet and savory sauce caramelizing around the noodles evokes memories of red lantern lit matsuri (祭り), or festivals. It’s usually made on a giant steel griddle called a teppan(鉄板), but for my Yakisoba Noodles Recipe, I’ve worked out a way to get that smoky teppan taste at home.     Makes 3 servings
    INGREDIENTS
    230 grams fresh yellow noodles (such as ramen, or Chow Mein)
    2 teaspoons vegetable oil
    100 grams pork belly (or bacon, thinly sliced & chopped)
    100 grams onion (~1/2 small onion, sliced)
    100 grams cabbage (~2 leaves, chopped)
    60 grams carrot (~1/2 carrot, julienned)
    2 tablespoons Worcestershire sauce
    1 tablespoon ketchup
    1 tablespoon oyster sauce
    1/2 tablespoon honey
    ¼ teaspoon white pepper
    1 tablespoon vegetable oil
    Aonori (for garnish)
    Benishoga (for garnish)

    I went to this 626 Night Market (Asia-inspired night market in LA) And had a small plate of Yakisoba and it HAS to be one of the most delicious things I've ever had. The noodles were firm and not too crisp, and whilst I'm no fan of egg it was seasoned beautifully, and pulled the entire dish together into a blissful meal. Whilst it was greasy and made in around five minutes, it was still heavenly and I wish SO badly to try it again, literally never stop thinking about it, and seeing you make it with so much patience and thought makes me wonder how much BETTER it could taste, I hope I can make this one day, Asian culture is beautiful beyond comprehension and I regret how quick I scarfed it down, hhhh I wish I had savored it

    That looks amazing!! Reminds me of obon time! I grew up in Japan and spent summers with my Obaachan in Goto in Kyushu. Loved it!😊 P.S. the bloopers are GREAT!!🤣

      Thanks Theresa! Yea that's like the height of omatsuri season, the sounds and smells of summer festivals still get me kind of excited, even if it's off in the distance😆 I spent my summers on the other side of Kyushu in Miyazaki.

    Hi Marc! Yakisoba is so delicious! Thanks so much for this video. I used to make yakisoba at home. Maybe it's all wrong, but I would use chicken or tofu instead of pork (just personal preference) and of course lots of veggies. I still enjoyed it! The aonori is always so yummy, too. Thanks for sharing a laugh with the bloopers at the end. And your t-shirt is great! Have a good week ahead. :-)

      Hi Erin! It is, isn't it? You're very welcome! There's nothing wrong with using chicken or tofu for yakisoba, honestly we use just about everything in it in our household and it's a good way to clean up odds and ends in the fridge. Hahahah you're the first to notice the shirt. I got it on a food tour I went on last month, and I'm not usually into wearing branded stuff, but I liked the message😁

    Made this recipe for family dinner night. I have to feed four hungry men, so sometimes it's hard for me to scale. Lol. But I really liked the flavor of the sauce. I think we needed a better pan for the carmelization. But it was delicious!! Oh and that it was so fast! Thanks for another great family dinner! Colleen

      Hi Colleen, glad you liked the sauce. This doesn't scale very well unless you can get your heat source to scale with the recipe. Here in Japan it's usually made on a flattop griddle (like a blackstone) when it's made in large quantities.

      @No Recipes Definitely agree. We used two pans but I still think it wasn't hot enough. The meat got crispy, but I don't think the noodles caramelized enough. Will definitely make again though

    The bloopers are adorable.
    I've always been more into lo mein as I like my noodles moist. But recently I made some fried noodles and actually liked it. I'll try your sauce next time.

      Thanks Nat! The heavy bottomed pan trick also has the side effect of keeping the noodles moist. Normally to get the brown crust to form you have to fry the heck out of the noodles, which can makes them kind of dried out, but because the pan is so hot, they brown quickly on the outside while the inside is still tender and moist.

    Very great recipe, my favorite Japanese restaurant closed so I had to find a good yakisoba recipe for omusoba. But apparently, they used also some soy sauce in their mix.

      You're welcome! Japanese soy sauce (i.e. regular Kikkoman, not usukuchi) would work best. It's sometimes called "dark soy sauce" but this very different from Chinese dark soy sauce.

      Thanks Mindy’s Mom! I don’t always have enough of them to warrant a reel, but I’ll try and add them in at the end when it makes sense. As for the griddle, I picked it up on Amazon (the Japanese site), it’s made by a Japanese company(Ikenaga) so not sure if it will be available on the US site.

      Mindy's Mom Sister, there is a company, Lodge, which makes cast iron pans. They make a round cast-iron griddle pan here in the USA. You might look in online and see if it is similar to what you would like. Best wishes to you, sister, and I hope you are having a good Mother's Day!

    The char on a flat top doesn't add smokey flavor, it adds a charred flavor, which is a some bitterness. Love your recipe! Just a heads up, it feels like you're yelling into the mike a little bit compared to the other sounds being so low. Cheers!

    What brand Worcestershire sauce did you use? I used Lea and Perrins, which made the sauce very vinegary using your recipe.

      I can't remember, but I probably used Kagome or Bull Dog (Japanese Worcestershire sauce tends to be more savory). In my more recent recipes I've gotten some Lea and Perrins, but I use a 1:1:1 ratio of Worcestershire sauce to oyster sauce to ketchup.

    Hey Mark, do you know where to buy (or make) aburaage? I've been to G-Mart and several Asain markets in Charlotte and I haven't found any even before the pandemic. My wife lived in Japan before we married and she loves inari, so I'd love to learn how to make inari for her.

      Hi Zachary, while frying tofu is simply a matter of draining and frying it, making aburaage (with the pocket in the center for Inari) is pretty challenging, I've tried it on several occasions and have yet to get it right. If you live in an area without a Japanese supermarket your best bet might be to order canned inari wrappers like this: amzn.to/3ey5LPU on Amazon.

    For yakisoba, put the fried ingredients on the noodles, sprinkle it with water, steam it, and if it becomes brown, season it with sauce, pepper and salt.

      Hi Sascha, it won't have quite the same flavor but you can substitute 2 teaspoon of soy sauce and 1 teaspoon of sugar which should give you a similar balance of tastes.

      I'm not sure what you mean by seafood teppan. Do you just mean cooking seafood on a teppan? If that's the case there's not really any specific technique for a teppan as it will cook like most other pans, except that it has very good heat retention. I have lot of seafood recipes on my website, so you can search for the specific type of seafood you want to learn how to cook.

      I’ve thought about it but I always run into a wall thinking about the format to make the video for yakiniku as well as dishes like shabu shabu and sukiyaki. As they’re all kind of cook as you eat dishes.

      Hi Ray, if you have a wok burner or a high output gas burner then it's a great option. If you're using a regular western-style stove, you'd probably be better off doing it on cast iron. The idea with a wok is that it provides a lot of heated surface area, but the flames need to come a good way up the sides for it to be effective. A large cast iron pan can be heated until very hot and it has enough mass that it will retain the heat even after food has been added.

      If you have a gas burner that can put out enough BTU's to properly heat a wok (the flames should come up the sides of the wok), that'll work really well, but in my experience most home burners in the West don't cut it, and using a large flat frying pan or griddle tends to work better on these stoves as that's what they were engineered to heat.

    Hello, What kind of meat would you recommend for replacing the pork?
    My husband can't eat pork. He loves pork, but he can't eat it for a few years without trouble later.
    Is any meat OK or do you really recommend a certain type of meat.

    Hi Marc, I tried out some of your recipes and I realy like them. As I live in europe we don't measure with tsp, cups and so on. And as the measure spoons are very often not calibrated would be great to use grams instead. Or would this be to much work for you? PLS let me know.

      Hi Andrea, I'm glad to hear you've been enjoying my recipes! Regarding measurement systems, I don't think this is an issue of location. Cups, teaspoons, milliliters, etc are units of volume, where as grams, pounds, etc are units of mass. They measure two different things. You can't just take a unit of volume and convert it to a unit of mass. In the US most people use units of volume to measure almost everything, but it would be an equally big mistake to measure everything in units of mass. All of my volumetric measurements are in US cups, so 1 cup is equal to approximately 240ml (but you can't just convert that to 240 grams unless you are measuring water). A teaspoon is 5ml, and a tablespoons is 15ml. I know it's probably not the answer you were looking for, but I hope it helps.

      Oyster sauce is added for salt, umami and a bit of sweetness, there isn’t a great 1:1 replacement, but if you want something with a similar taste profile you could make my garlic noodles sauce, or you could substitute about half the amount in soy sauce, with a bit of sugar added. Have you tried checking Asian supermarkets or online?

      A wok has the same advantages of using a teppan (good heat retention, more surface area). The only caveat is that most western burners don't put out enough BTUs to properly heat a wok. Using a wok on an underpowered burner would be a bad choice because it won't heat evenly (i.e. you'll get a hot spot at the bottom of the wok but the sloping sides won't heat up).

    I tried this out today with soba noobles. But IMHO the sauce it's to mild with buckwheat noodles and it will not realy work for me. The sauce needs to be more spicy. What do you think? Seems buckwheat takes out the flavour. Sorry for my bad English but I can't
    explain it in a better way.

      The name Yakisoba means "Fried Noodle". Usually Soba refers to Buckwheat noodles, but the "Soba" typically used in this dish are Chinese-style wheat noodles.

      Hi Andrea, the word "soba" means buckwheat in Japanese, and traditionally all long thin noodles were made with buckwheat. This is why the term "soba" was used as generic term for all long thin noodles (udon is typically thicker). For example, ramen used to be more commonly known as "Chuka-soba" or "Chinese noodles". Yaki-soba is another example, and it is not supposed to be made with buckwheat noodles. Yaki-soba is made with alkaline wheat noodles (a.k.a. ramen noodles). The addition of a strong base to the wheat flour changes the texture of the resulting noodles making them more chewy and they resist getting soggy when cooked. Buckwheat soba noodles tend to absorb liquids like a sponge and are not well suited for dishes like this.

      @@andreaherzog-kienast9343 I have a recipe for Yaki-udon which is similar to do this dish but there are a few differences that make it better suited for the thicker noodles. As for soba, they tend to work best in old dishes (like salads) because boiling them once and then cooking them again changes their texture in a bad way.

      Yaki soba is the Japanese version of Chinese fried noodles and is not made with buckwheat noodles. It's made with Chinese-style noodles (such as ramen). The word "soba" means buckwheat, but it was also used to describe any long thin noodle historically. This is why the original name for ramen is "chuka soba".

Apparently white pepper takes on the smell of sweat and manure when it's old, or has been improperly processed: www.bonappetit.com/story/white-pepper My recommendation (as with black pepper) is to get the whole peppercorns and then grind it yourself.

    Why did you started amplifying the cooking sounds in the more recent videos? This style was way better and I don't have to fight to hear you speak amidst the annoying chopping and cooking sounds.

      Hi Lunayen, I'm not "amplifying" the sound, but I did get a new secondary camera (which has a better mic) as well as a new external mic on my main camera a few weeks ago. This may be difference you're noticing. It's certainly not the intent to make the instructions hard to hear, so I'll take a closer look at the audio mix, but I don't expect the cooking sounds to go anywhere as I have received a lot of positive feedback about the clearer sound.

      @@NoRecipes When buying a single product accounts for 99 percent of the finished product, it's a suggestion on how to prepare that product, not make it.
      This is like those pasta recipes that say 1. Buy Spaghetti 2. Buy Sauce 3. Boil in pot, drain, cover 1 with 2 instead of just laying out the actual ingredients and ratios for the noodles/sauce.
      At BEST, this would be a recipe for SEASONING/SAUCE that can be used on noodles... it is however NOT a "Noodle Recipe" as titled.
      Most chefs and cooks alike have the flour/oil ready on hand to make noodles and it doesn't take more than 10 minutes to do, which is often shorter cooking times than trying to rehydrate that dehydrated crap from the grocery store, yet a "noodle recipe" video wants you to buy noodles? Then what is the point? This is a recipe for seasoning that can be used on noodles and not a "noodle recipe"

      @@davejay6855 Thanks for explaining. If I'm hearing you correctly, I think the confusion is in the name. "Yakisoba noodles" are not a type of noodle, it's the name of a specific dish (which this is the recipe for). The noodles used to make yakisoba are called "ramen noodles" (the type of noodle).
