I love this video and I've got so much to share with you 😁 I'm 52 and have been baking like ummm forever! 😂 So the COOLEST trick for getting TWO parchment paper circles, the EXACT same size for both pans is SO simple once you get the hang of it. You'll never do it any other way, again! Let me see if I can explain it, without having to shoot a whole video of it. Hahaha Okay so let's say you have two small 6 in pans like in your video, for example. Pull out 12 inches of parchment paper. Fold it in half so that when you stick your pan on it to trace it, you can tell there's two layers of paper underneath. Next, after you draw the circle, pick up the folded paper and fold it again so that your fold goes directly in the center of that circle, so you only see a half circle now, with the ink out where you can still see it. Now fold that in half again to where you only see one quarter of the circle, and then fold it again so you see 1/8 of that circle. I don't know if you know what I mean, but what you eventually end up with, is only having to make one cut. You're basically going to take that smaller square you now have, and you're going to hold the corner tight between your thumb and fingers (that is literally the middle of both of those circles) and you're going to come just a couple inches out from that point you're holding, and you'll make one cut going from the bottom side to the topside and you'll basically have a piece of "pie shape" leftover when you make the single cut. Now, if both of us have done this right, me explaining it and you picking up what I'm throwing down... You should unfold those 2 pieces of paper in your hand, and they'll be two identical sized circles! It's okay if it's a little big you can always fold them back into a pie shape and then cut off a little more from the "crust" side edge! If it's a little smaller than you understand not to cut so close to the point. If your cut was too scalloped or curvy, you'll get a shape like a flower. It's all good😂 Another thing I would not do is put the cake in the refrigerator because you're putting a warm cake in the fridge it's going to cause condensation and you're going to get a really wet sticky cake! I use a KitchenAid stand mixer as well. I hear that your paddle is hitting the bowl. There's a real quick adjustment you can make with a screwdriver underneath the KitchenAid head. It will quit hitting the bowl. Grab a flathead screwdriver and look up the video. It's super easy and you can fix it. I make buttercream with the whisk attachment because it makes it really really light and fluffy!! It incorporates much more air. I also use powdered sugar so it's not as gritty. I also use heavy whipping cream instead of milk with my buttercream but I don't have all those beautiful farm fresh ingredients like you, so that might not matter one bit! 😆 Oh and one last thing, you may want to look up how to "crumb layer" your cake. Once it's cool, obviously, you just put a real thin layer of buttercream all over and you expect it to get dirty because it's picking up all the crumbs. It's also called "dirty icing." After you get that real thin coat on and you've captured all the loose crumbs, that's when it goes in the fridge! It doesn't have to stay in long maybe 10 minutes or so. Now you pull it out and you can be rougher with it and you can use a flat knife or even a bent paper plate or bench scraper to spread on the rest of the buttercream and you won't be able to see a single crumb! It'll be a perfect photo finish😊 All those things are game changers! Gosh I wrote a small book here, but I just got done making a from scratch German Chocolate cake and I saw your video and I had to watch. It's 1 in the morning so I should probably go to sleep since I have to get up at 7 a.m. to make sure the "automatic" chicken door correctly opened😂 I love watching the whole family grow. I've been a fan for years. I finally am going to the homesteaders of America Conference next month! Maybe I'll FINALLY meet y'all. Night ⭐ Love from Hamilton Ohio, Shandy! ❤ (This is how they taught us to cut circles in school and trust me, eventually it will be second nature and you won't need to draw you won't need to think you'll just grab a piece of parchment paper and start folding it and cut a pie shape out of one of the corners like it's second nature)
Well done, Lily! Your cake was so perfect, it didn't even need a crumb coat! As an experienced baker, I would usually use a silicone spatula to apply a very thin layer of icing to the entire assembled cake to keep the tiny crumbs from getting in the finished product. Using a separate silicone spatula to dip out the icing helps to keep the bowl of icing clean. Then, after the crumb coat, the icing goes on easier. But that is one thing you didn't need in your cake - it turned out beautifully and it looks like everyone enjoyed it, too!
