How to make GREAT Indian CHICKEN CURRY (5 Essential Tips)
You can make any Indian chicken curry great if you follow 5 simple tips. Cooking Indian isn't magic and it isn't scary. You just need to trust the process.
Ingredients:
4 Tbsp (60ml) neutral oil
2 inch piece cinnamon
5-8 green cardamom (whole pods)
4 cups (900ml) finely diced yellow onion
1 Tbsp crushed garlic
1 Tbsp grated ginger
1 tsp (5ml) paprika
1 Tbsp (15 ml) coriander powder
2 tsp (10ml) cumin powder
1 tsp (5ml) turmeric
1 tsp (5ml) kashmiri chili powder
1 tsp (5ml) kosher salt
1 tsp (5ml) fenugreek leaves (kasoori methi)
1/2 tsp (2.5ml) garam masala
4 Tbsp (60ml) tomato pasatta
2 lbs (900g) boneless, skinless chicken thighs cut into big bite size pieces
1/2 cup (125ml) no-sodium chicken stock or water
3-4 green chilies - chopped (jwala or finger hots are best but you can substitute jalapeno
a handful of diced cherry tomatoes
cilantro to garnish

You need yellow split peas (chana dahl) in this also. Half and half with the masoor dahl. Also, take a a small can of chunked pineapple and dump it in at the end with all of the juice. This should actually be a sort of sweet and sour curry. Try it and you will be happy I mentioned it.

It is Lalahs brand Madras curry powder and it is available at pretty much every Indian grocery store where I am. If you can’t find it locally Amazon is probably your best bet.

I'm Indian and this is dreadful. It misses the point of important steps like browning onions and gets most steps out of the right order (like adding tomatoes first). Also, "curry powder"? WTF, bro? This isn't the 1990s! You can get genuine Indian spices in most of the world now.

@@shawnkay5462 - the one you are referring to uses a quick and easy tikka marinade. This one is a little more involved.

I'd love to see you do a video about hing, I never know how to use it right, and then the curries taste a little weird (and my kitchen gets stinky).
A very little bit goes a long way. Try a literal pinch (like 1/16 of a teaspoon) when you bloom spices for your next tarka dal. I suspect it is an acquired taste (and smell). I grew up with it so it tastes like home to me...

Romain, as always an excellent summary of the main points. Just a couple of points from me: 1. I was introduced to boiling the onions for about 10min in a curry / chicken stock before reserving about 300ml of the onion liquid (I normally cook for two people) and blending the onions. They are sweetened in this process. 2. I don't add water to my garlic ginger paste just the extra oil that I cook in (i.e. Rapeseed) and I've recently tried another suggestion of adding fresh coriander before blitzing it. 3. Have fun creating your own curry spice mix. I use the following combo: • 3no tbsp. Commercial Mild Curry Powder • 3no tbsp. Coriander • 2no tbsp. Cumin • 2no tbsp. Paprika • 2no tbsp. Turmeric • 1no tbsp. Garam Masala 4. Kasoori Methi is something that should never be omitted, it's like bay leaves in stews. 5. Chicken thighs taste way better than breasts. Keep going boss man!

I've been making a hamburger based lazy "bulgogi" with apricot jam for a while now (I think the original recipe used a pear, and pears just aren't pantry staples here). So yes, I know, that apricot jam goes FANTASTICALLY well in stuff like this and I'll be picking up some ribs at the store this weekend to give this a go.
