AsalamOAlaikum, I saw both your recipes of paya, I have learnt cooking from my father. Your recipes are almost the same except few things, my dad never used yogurt, citric acid, kalonji, ajwaine, kari pata and badyan. Rest all the same. And they turn out very thick n yummy. And we enjoy it with naan or kulcha. I would like to know that why u use yoghurt and citric acid? As per my knowledge it will bring sourness (khattapan) in the flavour. Is there any other reason?
Khataas is a very important part of all DESI recipes. but what to be used???? Tomato, yogurt, citric acid, lemon juice or amchoor powder????. Depends upon the recipe. We can use either Yogurt or citric acid for Khataas in Paya.

meena Shrivastav It is same as Bada paya, but in addition of Bda paya I added Shank meat also. If you are in India, Bada paya is Buffalo feet, and bong is Buffalo Shank.

Bada suna tha par humko bataya gaya that ki bada is beef aur beef se door raho.Lekin hum issi dish ko goat meat ke sath banayenget. Apki juban bahut saaf hai. Video se adhik apki boli sun kar maja aya. You are the best a chef who takes no short cuts in his recipes. Allah apko khoob tarakki de.

MASALAH INGREDIENTS
Fried Onion: 100 gm
Yogurt: 300 gm (If Not two sour then add 1/4 tbsp of citric acid or 4 tbsp of lime juice)
Oil: 1 cup
Garlic Paste: 3 tbsp
Ginger Paste: 3Tbsp
Salt: 2 tbsp
Red chili Powder: 1.5 tbsp or to taste
Kashmiri chili powder: 2 tbsp
Haldi: 1 tbsp
Jyfal Powder: 1/3 tbsp
Javetri Powder: 1/3 tbsp
Kala Zeera. 1/2 Tbsp.
Ajwain: 1/2 tbsp
Ginger Powder: 1 tbsp
Klonji: 1/2 tbsp
Basic Garam Masalah: 1tbsp during cooking and 1 tbsp to spread after cooking

Salam sir , I have a question for you, last time when i cooked bong paye I added kaacha atta diluted in water, at the end ,rest of the recipe was same as yours. Now l want to make bong paye again for Eid , so I want your suggestion. Is it unnecessary, or I can do it,The taste of the dish was very good.I love your channel because your recipes are really good and authentic. AsalamOAlaikum, I saw both your recipes of paya, I have learnt cooking from my father. Your recipes are almost the same except few things, my dad never used yogurt, citric acid, kalonji, ajwaine, kari pata and badyan. Rest all the same. And they turn out very thick n yummy. And we enjoy it with naan or kulcha.
I would like to know that why u use yoghurt and citric acid? As per my knowledge it will bring sourness (khattapan) in the flavour. Is there any other reason?
Khataas is a very important part of all DESI recipes. but what to be used???? Tomato, yogurt, citric acid, lemon juice or amchoor powder????. Depends upon the recipe. We can use either Yogurt or citric acid for Khataas in Paya.

We never remove it. My mother never removed so I follow her. But its a part of Paya and very tasty.

meena Shrivastav It is same as Bada paya, but in addition of Bda paya I added Shank meat also. If you are in India, Bada paya is Buffalo feet, and bong is Buffalo Shank.

Bada suna tha par humko bataya gaya that ki bada is beef aur beef se door raho.Lekin hum issi dish ko goat meat ke sath banayenget. Apki juban bahut saaf hai.
