Yo siempre uso dos. Para mi es mas facil porque el flood (lo con que rellenas la gallleta) a veces se va afuera de la galleta. Cuando usas 2 consistencias, uno mas espeso por el borde, y uno mas liquido para rellenar eso ayuda que la forma de la galleta sale mas Bonito y para mi se va mas rapido. Y es facil a hacer 2 consistencias porque sacas suficiente icing para los 2, colorias todo, sacas un tercer y lo pones en la bolsa, eso va ser tu icing del borde y con el resto en el tazon, pones un poco mas agua para que sea mas liquido y eso es para rellenar. Thank you! For the nest I use a soft peak, so if you lift the icing up out of the bowl the tip or point of the icing will slump over. You don't want it too stiff or it doesn't stick to the cookie well, but stiff enough it holds the piped shape.
You can use airbrush colour instead of gel as its a lot more liquid and should work fine without any added liquid. I have never tried using water, but I'm not sure if it would work as well because it might be absorbed too much by the crumbs. You could try a small amount bake the crumbs after in the oven at a low temp to crisp them up if they end up too wet.
I know some people have used a touch of water and if it gets a bit too wet they'll bake it a little on a cookie sheet. Or you can try using liquid food colour or airbrush colour! And I think it could definitely be done I'm a mixer!

Vodka, or high proof alcohol evaporates quickly so then it doesn't leave the crumbs wet. If you use water it will be absorbed by the crumbs and will stay wet longer and water/moisture eats away at dried royal icing! Same thing when people paint on cookies or use gold accents, people almost always use vodka or high proof alcohol to do those

I use eveclear, but vodka works too. Anything that is high content alcohol and is clear
