So I'm a chef. Kinda a chef kinda a student. So on Monday I was told i need to make a 100 Halloween themed cookies... for Tuesday. I never made royal icing before or know what the constancy must be. Julie, Thank you so much for being one of the few sugar artists on TH-cam who actually gives a recipe for royal icing that uses egg whites. Trying to get other sugar artists to respond with an egg white recipe is like pulling teeth. It is as if there is some deep dark mystery and terror surrounding the use of egg whites! LOL! Albumin powders and meringue powders are pound for pound INSANELY expensive in a lot of areas but most people can find regular eggs or even pasteurized eggs for a fraction of the cost of the powders. I certainly understand that commercial bakers may have to adhere to a different standards due to business health codes but the everyday baker appreciates that you have included a recipe with good old fashioned egg whites. I find your channel quite informative and extremely useful due to clear,concise and complete instructions.

I translate the designs into soap, and have begun making Soap Cookies, so watching you make cookies, rolling the dough out translates clearly to soap dough. I'm working on piping soap, but for now I hand paint and hand mold all designs. I like what you said, "not a gadget" person, and except for stencils and cookie cutters, I'm not either and would rather find a way to make something with less "stuff". The stencils translate well into soap too, and liked watching you do it, which helped me. Thank you!

This is by far the best recipe out there. I tried to others and they were difficult to work with. This one was super easy to work with. I’m a beginner and my cookies turned out awesome! I did watch a video on the Consistency. The one video said it should pop off the spoon and then ribbon. I don’t remember the site or lady’s name but it worked every time!!
I accidentally left a sealed container of this icing in the back of my refrigerator for 7 months, and although it had separated into two layers when I stirred them together I found to my delight that it was still perfectly good. I suspect Julia would never have occasion to do this experiment, as she goes through this material so quickly and would never make such a absent-minded mistake!
Hi Julia I’ve made your royal icing and it came out lovely ..! My hubby got jealous and went to make some biscuits and put icing as well only he used fresh egg whites he didn’t know I had bought the pasteurised ones ,any way my question is his icing will not harden would you know why ?

Even though you admittedly made a mistake, I was waiting for you to apply your technique to a cookie :-( ..... I appreciate your honesty on that mistake, however, no one would have known but you since you weren't going to ice a cookie. I caught a glimpse of your cookies on the counter from a distance, they seem like they're very pretty. Tell your camera guy to show the cookies already completed, or show me how to do your basic design with that pink icing and perhaps white. It's a job for standing on your feet a lot for good leverage to the cookie in the counter, perhaps, but all in all, you're a Pro. Your hours of expertise no doubt have paid off for you. Usa Aquafaba (the liquid that chickpeas are soaked in) It works the same, cheap, humane, and NO RISK OF SALMONELLA! You can make it your self or buy a can or two of chickpeas (make sure they're salt free) and use the amount she said to use for the egg beaters

A lot of times bakers avoid eggs so people with egg allergy can enjoy it. This way they reach more clientele with the same product.

hi Julia, I just love, love,love your tutorials! sorry if it's been asked before..I would like to know if it's recommended to make this in advance and have it stored in the fridge. And once it's ready to be used, do I just let it sit at room temp and beat it again?

This is by far the best recipe out there. I tried to others and they were difficult to work with. This one was super easy to work with. I’m a beginner and my cookies turned out awesome! I did watch a video on the Consistency. The one video said it should pop off the spoon and then ribbon. I don’t remember the site or lady’s name but it worked every time!!

thank you, I'm now making Halloween icing decorations using royal icing.
I accidentally left a sealed container of this icing in the back of my refrigerator for 7 months, and although it had separated into two layers when I stirred them together I found to my delight that it was still perfectly good. I suspect Julia would never have occasion to do this experiment, as she goes through this material so quickly and would never make such a absent-minded mistake!

Hi Julia I’ve made your royal icing and it came out lovely ..! My hubby got jealous and went to make some biscuits and put icing as well only he used fresh egg whites he didn’t know I had bought the pasteurised ones ,any way my question is his icing will not harden would you know why ?
Thanks Julia yes god knows what he did lol,the only thing different he says is used normal egg whites and mine were pasteurised I don’t see why that would make a difference though ,anyways hi from Australia 🙂

Wow, Julia ~ you're really smart. You're able to remember your icing craft from one step to the next, from one bowl's consistency to the next. Even though you admittedly made a mistake, I was waiting for you to apply your technique to a cookie :-( ..... I appreciate your honesty on that mistake, however, no one would have known but you since you weren't going to ice a cookie. I caught a glimpse of your cookies on the counter from a distance, they seem like they're very pretty. Tell your camera guy to show the cookies already completed, or show me how to do your basic design with that pink icing and perhaps white. It's a job for standing on your feet a lot for good leverage to the cookie in the counter, perhaps, but all in all, you're a Pro. Your hours of expertise no doubt have paid off for you. It's does not taste like egg? I always make my royal icing with the powder one, but it not has that 'glue' feeling, but I'm worry about the taste or an after taste, thank you, you are a goddess 😘

Raw egg whites aren't bad, but raw flour is, so it's still not the best idea but I think flour still isn't THAT bad

Usa Aquafaba (the liquid that chickpeas are soaked in)
It works the same, cheap, humane, and NO RISK OF SALMONELLA! You can make it your self or buy a can or two of chickpeas (make sure they're salt free) and use the amount she said to use for the egg beaters
mahoraner niall my husband is allergic to chick peas. I would never have thought to have him ask about a frosted cookie. Thanks for the info.
