Fenugreek Seeds - 3 table spoon
Fennel Seeds - 1 table spoon
Cloves - 5 to 6 pieces
Nigella seeds - 1 table spoon
Salt - 3 table spoon
Red Chili powder - 3 table spoon
Turmeric powder - 1 table spoon
Split Mustard Seeds - 1 table spoon
Asafoetida - 1 table spoon

सौंफ - १ चम्मच
लोंग - ५ से ६ टुकडे
कलोंजी - १ चम्मच
नमक - ३ चम्मच
लाल मिर्च पाउडर - ३ चम्मच
हल्दी पाउडर - १ चम्मच
राइ की दाल - १ चम्मच
हींग - १ चम्मच

Edible oil - 4 table spoon
Capsicum (chopped) - 1 (200 gm)
Pickle Masala - 3 table spoon
Amchur powder - ¼ tsp

Is this a northindian pickle masala? Today on Gujarati food channel for south indian karela aachar she puts more of rye kuria n less of methi kuria chillipowder n hing as methi is bitter..confused
Yes Maria ji, this is a North-Indian recipe.
Also, Hing, Methi kuriya and Rye kuriya blend-in and lose their bitterness when the masala is mixed in heated oil. Especially over about 4 to 5 hours the pickle becomes absolutely delicious! :)
