I watched your video earlier and i saved it on my playlist. Your pickle is very much like the one my mother used to make many years ago . She was from Durban South Africa though not of Indian origin but she was famous for her Indian food. I have been to the Supermarket and bought the ingredients and now I'm going to have a go. Thanks for sharing your knowledge I appreciate it . I'm subscribed.
Hi, Vinegar acts as a preservative and flavoring agent, but in Indian pickles or achaar as we call, uses oil and salt which helps in preservation, spices add in the flavors. Hence, vinegar is not added.

Question: there isnt much sunlight right now, could I use full spectrum terrarium lightbulbs instead? what is the mechanism behind the exposure?
Skip the sunlight -- go directly to refrigeration -- it still works out beautifully.

Yes please, wash your vegetables well and dry them well too before using.
