  • We're making a DELICIOUS grilled fish from Egypt called Singari, using my Mother in law's recipe. It's got an amazing Garlic and Cumin marinade, that packs a load of flavour into the fish. I'll show you how to butterfly the fish, to increase its surface area, then show you how to marinade and grill it to perfection.

    Ingredients:
    1.5-2.5kg Whole Fish - I recommend Seabass or Seabream for this and you should get them about 750g each in size, ask your fishmonger to butterfly these. If using Fish fillets, reduce the marinade by half for 6 whole fillets (1-1.5kg of fish fillets).
    Marinade
    8 Cloves Garlic
    6 Tbsp Lime/Lemon Juice or 3 limes
    2 Tbsp Oil
    1/2 Tbsp White vinegar
    2 Tsp Salt
    1.5 Tsp Cumin
    1/2 Tsp Black pepper
    1/2 Tsp Ground coriander
    1/4 Tsp Red chilli powder
    1 Green chilli
    50g Fresh Coriander small bunch
    Topping
    1 Carrot
    1 Onion
    1 Tomato
    1 Lemon
    1 Green chilli
    Directions:
    1- Deseed your green chilli and slice into a few smaller pieces. Remove the tough stems from the coriander.
    2- Add all the marinade ingredients to a blender and blend into a slightly chunky paste
    3- Place your fish on an oven tray, and spread a few tablespoons of the marinade all over the insides of the fish. If making a whole fish, make slits in the sides and fill these with the marinade. Allow to marinade for 15 minutes
    4- Slice your Tomato and Onion extremely thin (about 1mm) and grate your carrot finely. Slice the chilli into thin rounds
    5- Add the Tomato, Onion, Carrot and chilli to a bowl with a few tablespoons of the marinade. Mix until well combined.
    6- Add some of the topping onto your fish (or into the slits) covering the entire thing in an even layer of the vegetables
    7- Preheat your oven with the grill (broiler) set to high. Place the tray under the oven and cook till the fish flesh is tender and cooked through. It took about 16 minutes for my medium fishes

    I forgot to mention that you can definitely cook this on a charcoal grill for added flavor. Just make sure to use a grilling basket to hold everything in place, and you'll be rewarded with a smoky delicious grilled fish. I hope you give it a try!

    I made this for me and my father (both Australian, and the only people in my family who like seafood) along with your fisherman's rice recipe and they were both incredible. I think my dad called it delicious 9 or 10 times while eating it.       It's actually just now that you mention that, I'm realizing that almost all of his recipes are fairly easy and not very intimidating. Maybe it's just his presentation, but it also seems a lot of delicious Middle Eastern cultures have managed to create culinary traditions that are so intricately she wonderfully flavored without being overly complex to make 😀

    I always use "no cut" gloves whenever using my mandolin. Better safe than bleeding all over the food.

      Most people have little idea of the damage those things can do... Having worked in kitchens for a long time, I've never seen worse injuries than those caused by a mandoline... ALWAYS use the hand guard.

    Can confirm the Swissmar Borner V-Slicer is great! I also keep a Benriner around for the rare occasions when I need TRULY paper thin vegetable slices, but 95% of the time, I reach for the V-slicer. And you can’t beat that safety grip!

    I absolutely love singari! Always order it where ever I go. Usually here in Cairo it has a slightly different recipe than Alexandria but all variations of this dish are amazing!

    I made this yesterday for dinner it was so delicious, i made it with Haddock tho and I could have finished it all my self but the only think stopping me is that I have limited space in my stomach 😆. Cant wait to try your other recipes especially the pitta and shawarma. thank uuu

    I just tried this recipe with milkfish and it was a hit with my family. I actually liked it too despite me having that gene that unfortunately makes cilantro taste like soap. The grilling certainly subdued its strong flavour and it blended well with the other ingredients.

    Very good instructions as usual! I don't know of any fishmongers where I live but I'm sure this recipe would work fine with a fillet. The flavors look intense.

      Oh it definitely will work well with fillets. We get tilapia from Costco and this is our quick weeknight fish meal.

    The mandolin is amazing for making homemade veggie chips fried or in an air fryer. Try doing sweet potatoes and beets

    That looks really tasty . Could you use the same sort of topping and marinade for butterflied chicken breast ? Pork chops ? lamb ? Or would you suggest slightly different ingredients for these meats ?
