I think it’s just preference because sometimes my mom use pineapple juice too. My mom said using apple or pineapple juice makes the liquid taste better with a little sweetness than vinegar, vinegar has a smell and sour taste according to my mom.
Just go to the Asian grocery and bought the soybean flour, add water and filter it then you ready to go. I did that and you reduce over 50% work also skipped many steps.
