My mind was thinking about Mughlai paratha for 3-4 days now .. TH-cam algorithm and Ranveer brar ne sunn li .. sending you lots of love from Kolkata ❤️
Makes me nostalgic, have grown up eating "moglai parota"(as we bengalis call it) from nukkarwali shops as well as from Basanto Cabin during college days...even today when we visit my city ,this item always remains at the top of our must eat list. Thanks a lot chef❤️
Bosonto cabin, anadi r parota all gone now. Basking in their past glory. Forget about the shop outlook, the main thing, "taste" is gone forever. Just another oil dripping no taste over hyped and unhygienic place, the old owners are just minting money with their past..
You can do a bengali cabin series including the recipes of 1) Dimer Devil(egg devils with mutton keema feeling)(maybe bengali fried version of nargisi kofta😁) 2) mutton kobiraji 3) brain chop from Mitra cafe 4) chicken afgani and paratha 5) chicken stew with bread 6) Fish diamond fry 7) fish roll @chef ranveer
Thank you so much chef, for rekindling my nostalgia. "Moghlai Porotha" brings out so many fond memories from my college days. Back then, I used travel Shyambazar (A busy Northern neighborhood in Kolkata) for my tuition classes. Our Sir used to take 3 hour long sessions, hence, by the end of the class we'd be left starving. So, me & bestie rushed to this cabin (near Gol-Bari, Shyambazar) for feeding our hungry souls. "Moghlai Porotha" were our usuals, apart from occasional 'egg chicken kathi rolls' or 'chicken chowmein'. They used serve the porotha with Aloo'r torkari (usual potato curry), kasundi (bengali mustard sauce), ketchup, salad (assortment of julienned cucumbers, beetroot, onions, carrots). We used to sit on those tiny roadside benches, and devour every crumb of it. Life was simple back then.
in my country Singapore it is called murtabak and serve with ketchup wali cucumber. and gravy (chicken curry, dacha, fish curry anything) a and the way they make roti thin its fun to watch .
Mughlai Paratha has been one of the dishes I love a lot, since I had it for the first time in one of the cabin restaurants 20 years ago ...♥️ Some memories afresh. ..... Thank u sir ..
Ranveer my food magician.. you bring tear in my eyes.. my father used to bring mughlai parota for us and he loved to eat that. Now he is no more. And we stopped eating mughlai parota... thank you yaad dilane ke liye..stay blessed

The love, passion and appreciation that #RanveerBrar has for the #Kolkata food culture are so evident in his cooking. One of the few top chefs who truly appreciates its beauty.
It is really popular in Dhaka, Bangladesh too. Although ingridients vary here. We mainly use eggs, onions and green chili as stuffing. Some restaurants use semolina too. As an old Dhakaiya, I absolutely love it. I have very fond memories of the dish. I have been your regular viewer for quite a long time. Take love. Hope that you will visit our country one day. 🇧🇩

Thank you Ranveer to remind me one of my hometown delicacy when I am far away from Kolkata. Just one point, in most of the Kolkata cabin restaurants serve this paratha with aloo sabji and salad (onion, carrot, cucumber and beet root).
orange/yellow Bread crumbs is basic item for mughlai paratha. Crumbs, onion, chilli, salt is basic mixture. Apply crumbs on paratha and drop egg liquid on it and mix. close paratha and fry. ready to eat with dry aloo sabii, salad, sause.
My mother makes world best mughlai Bengali food is incomparable Too good to be described in words Thank you for showcasing Bengali food also on your channel

Now Moglai Parota is abundantly available as a street food of Kolkata especially at the Lunch hour in the office areas. While watching the dough making of Moglai Parota I saw a a street chef adding eggs in the dough. After asking the reason behind it, he replied it helps hand stretching the dough to the thinness of a paper. Can it be true?
Regards.
Yes it does help, but it is still really optional.
Yes, it helps in streching to as thin as possible. This technique is also used while making Malabar parotta

Main bardhaman se hoon. Aur ise dekhne ke baad I feel realy proud to myself. Thanks ranbeer bhai to give us the real knowledge and background of all foods.
Thank you Ranveer to remind me one of my hometown delicacy when I am far away from Kolkata. Just one point, in most of the Kolkata cabin restaurants serve this paratha with aloo sabji and salad (onion, carrot, cucumber and beet root).
U add flavourful spices but more deliciously nostalgia too in the food. Takes special love for food . ☮️
orange/yellow Bread crumbs is basic item for mughlai paratha. Crumbs, onion, chilli, salt is basic mixture. Apply crumbs on paratha and drop egg liquid on it and mix. close paratha and fry. ready to eat with dry aloo sabii, salad, sause.
Nothing beats freshly made, but I'm thinking about bringing a big stack of these on a road trip, yum yum!
"Moglai Porota"..❤❤❤❤❤.
