The "bloody" bone marrow is from not soaking it, or not soaking it long enough, in salt water. The salt water will remove the blood, or most of it, depending on how long you soak it. You should soak it overnight, then you get that beautiful white marrow.
You are both correct and incorrect, it was not brined long enough to remove the blood from the bone marrow prior to cooking. It was also not fully cooked since fully cooked unbrined marrow becomes greyish black never red.

A bloody looking bone marrow is completely fine as long as it's cooked to the proper temperature. If you don't brine your marrow it will always have a pink/red bloody look. If you want the good looking white bone marrow, you need to brine it in salt water for 12 hrs.

I love lengua tacos! I have not had tripas tacos in a long time (they are the small intestines of cow, I think they can have goat and pig too but I’ve only had beef) I love the flavor that is organy, but kinda sweet, the texture is chewy outside but kinda creamy inside. I know it sounds weird but it’s sooo good!
