Search up classical or Spanish guitar. I recommend Ana Vidovic's rendition of Recuerdos de la Alhambra. Also LOTS of instruments are used, wanna ask at which timestamp specifically?
I'm no musical expert but the instruments I am hearing in the early themes are Spanish flamenco guitar, cajòn, castanets and some type of a horn. The later era's transition into a full orchestra sound with violins, violas, cellos, bells and maybe a piano. The flamenco guitar and castanets are the instruments you hear the most from.
I think the ancient version uses a vihuela. The medieval one uses hurdy gurdy, spanish guitar and tambourine. The industrial replaces the hurdy gurdy for a clarion and orchestral arrangement for strings, and the atomic uses hybrid orchestral with synth strings and percussion.
