    Granulated sugar 2 ⅔ cups
    Water ⅓ cup
    Corn syrup ¼ cup (could try honey or golden syrup
    Unsalted butter 1 pound/4 sticks
    1. All ingredients in the pot
    2. At a low temp - stir till butter is melted
    3. Turn up to medium-high - DON’T STIR - for 10 min or until the thermometer reads 300’
    4. Whisk Slightly to mix
    5. Pour into a buttered sheet about 15 x 10 (jelly roll size)
    6. Wait 30sec then sprinkle with sea salt or finishing salt
    7. If there is burned sugar on the bottom of the pot you can boil water in the pot to work it off

    Granulated sugar 2 2/3 cups
    Water 1/4 cup
    Corn syrup 1/4 cup
    Unsalted butter 1 pound or 4 sticks
    Start with low heat and then up to at 300 F

      ty as the link is broken. And I think he said 1/3 cup of water, but it's like a caramel, which you can do dry, but this would help for the butter as well. I'm also using home made Golden syrup instead of corn as I feel it's better. I also hear you can use honey too or instead.

    Thank you for answering my conundrum! I made two batches of toffee and both times the butter separated from the toffee just before pouring into the cooling pan. Next time I'll try combining the sugar and butter at a much lower temperature.

    Just did this recipe with my son exactly like the video showed and it worked great. The final product was a touch soft side but I think our candy thermometer was a little off. There are some videos on toffee floating around which are completely wrong, especially with too much stirring and having the toffee break. Do this one instead, it worked great.

      if I wanted to make a lot of bark I would just dump chocolate chips on top of it while it was still hot enough to melt them, and spread them around a bit. Then add the nuts. Why melt chocolate and add to cooled toffee? I guess if you wanted to make extra stuff to clean or "use" the toffee in different ways like he did here, you could do that.

      @@recoveringsoul755 I don't think spreading things on cooling down toffee would be a good idea.
      Since it would makes area that you disturb cool faster, that means the toffee would also have more chance to breaks.
      Just sprinkle them and left it untouched like what thomas said is okay though.

    Thank you thank you thank you! Toffee is my favorite candy besides just plain chocolate and I'm always going to the locally owned ice cream store to get a mix that has ice cream & Heath bar in it but they charge an arm and a leg and I always think I could just buy the heath bar. But I would rather just make it myself and then have pieces whenever I want and put in as much as I want. Woohoo!

    I made Toffee for xmas and after pouring it onto the cookie sheet. I sprinkled it with nuts and melted chocolate. I gave 1/2 of it to my neighbor and they loved it. This was before the covid pandemic.

    Handsomely demonstrated. Is fudge just toffee with more butter added? and why do people call sauces of caramelised sugar with butter 'caramel sauce'? should it be toffee sauce if butter is added? and how is butterscotch sauce different to toffee/caramel sauce?

      I can answer one of those - butterscotch is made with brown sugar, instead of white sugar

    Well, this was a mistake. This video came up as a suggestion while I was watching some desert videos. Oddly, I was planning to make more toffee today for a few people I missed at Christmas- I saw the Martha Stewart seal so I took a look. I’ve made toffee many times before, several from the Martha Stewart site and have never had any problems so I thought I’d give it a shot. I’d settled on a recipe that I liked a lot as a go to. That one said to boil until 280 degrees, it didn’t use water, it started with getting the butter melting first and then adding the sugars, it said to stir often. I’ve never had butter separate and I’ve never had sugar scorch and I’ve never had toffee taste like molasses. All three happened here. I have no more unsalted butter, I have no car to run out to get some- and hello- butter is expensive for fixed income seniors. When you find a recipe you like stick to it. Life Lesson #0524.       The humming noise is the fan on the cheap portable cook top. It stays on until the cooktop cools. I used to own one. Better quality ones like my new one are silent.

    The recipe link isn't going to the right recipe, and I can't find this recipe on Martha's website. Also, the one ingredient you mentioned but you don't give an amount of, the corn syrup. How much are you using?

    Hey Thomas, I love your videos! I was wondering if you have ever tried making chocolate from scratch? I have an allergy to one of the ingredients that is most commonly added to most store-bought chocolates so I have to buy a special (EXPENSIVE) brand. I love chocolate and I heard there is a simple way to make it from cocoa powder, without coconut or soy (both I'm allergic to). I'd love for you to solve this on #kitchenconumdrums

      HI!, go to you tube- allrecipes - make dark chocolate bars../. Melt coconut oil , sweetener(your choice) dry coco powder(I prefer Hershey's because it is what I grew up with) melt on low heat pour! Candy making (even if you screw up ) always puts a smile on kids faces-They will enjoy and love you for trying

      He just said he was allergic to coconut, so not a good recipe for him!!
      I think it's very difficult to make your own chocolate, it takes special ingredients like cocoa butter, cocoa solids etc. and I don't think you can just go to a shop and buy those. But I feel your struggle, I'm lactose intolerant and all I can eat is a few of the dark (milkfree) chocolate bars :-(

    You didn't make it very easy to find this recipe from the link you shared.. at least I can't find it. You also on the video, which I understand is 3 years old now, didn't say how much karo syrup.
