    Christmas means candy making and when you make toffee, it will make you everyone’s favorite! What's so great about toffee? Well, it's rich and buttery with just the right snap and then finished with chocolate and toasted pecans. I make many batches around Christmas because it seems to disappear. Now you can too!

    INGREDIENTS
    - 1 cup salted butter
    - 1 cup sugar
    - 1/2 tsp salt
    - 2 tbsp corn syrup
    - 6 oz semi-sweet chocolate chips
    - 1 cup chopped toasted pecans
    - 1 tsp vanilla extract
    INSTRUCTIONS
    Butter a 9×13 baking sheet pan. Set aside.
    Have an instant-read thermometer ready or fit saucepan with a candy thermometer.
    In a heavy-bottom four-quart saucepan, combine butter, sugar, salt, and corn syrup. Over low heat, bring to a boil, stirring slowly. Continue to boil until the mixture reached 290°F. It will be a light amber color and smell like caramel and butterscotch.
    Remove from heat, add in vanilla, and pour into the prepared baking sheet pan. Let cool for one minute and sprinkle with ¼ cup chopped nuts over the entire mixture. Sprinkle with chocolate chips. Let sit until melted, about two minutes. Spread the chocolate evenly with an offset spatula. Sprinkle with remaining chopped nuts. Let cool completely, about four hours.
    Once cooled completely, break into desired pieces. Store in an airtight container in a cool place for up to one month. If in a warm climate, store in the refrigerator.

    I made this about an hour ago, I was sure I had done something wrong when I was making the toffee. The temperature just hung around 240 degree F and would not move. I resisted turning the heat up or just giving up, your instructions covered all this so I continued to stir. When the temp change happened, it happened quickly. This is so delicious, I couldn't believe the rich toffee taste. Thank you so much for the wonderful, detailed instructions you give. I will be making this again, the next batch will be for gifts.

    This is one of my favorite recipes. I sometimes substitute almonds and for those that can’t tolerate nuts, plain is just fine.

    I am married 33 yrs now & have always referred to myself as a "Domestic Coordinator" as opposed to a 'home maker' since I know nothing of construction/lumber etc., but you are like the 'Houdini' of Domestic-Bliss, though!!!

    My mom always made toffee. She would break it in small pieces and dip each piece in chocolate (your way is way less time consuming!).anyway, years ago I asked for the recipe and failed my first couple of batches. In my directions, it says, “If it starts to separate, don’t panic, just keep stirring and it will come back together” and it does. But if adding corn syrup helps, that’s what I’m doing next. I haven’t made it in awhile, but it’s definitely a favorite!! BTW, I made my third batch of Butterhorns since thanksgiving, took them to work, and the staff RAVED about them. I’m a nurse and it’s nice to have special treats during this crazy time. I’ll have to try the toffee for them next. Thanks for all you do!!

    I love English Toffee too.. my mom and i would make it for Halloween and Christmas.. we'd use bittersweet chocolate - well they didn't really have a lot of dark chocolate chips back in the 70s (yep kid of the 70s and early 80s here) and for Halloween we'd add orange flavour to the choclate and crushed candy canes to the Christmas ones...

    I've made this toffee over n over again. It's the best recipe for toffee out there. Soo easy, n boy is it expensive 2 buy at a store. Never realized how easy n cheap it was 2 make. The store's r robbing people that buy it. Truly.

    Great video! I was obsessed with candy-making as a kid. I discovered how to make toffee “accidentally” when trying to make taffy. I didn’t have all of the ingredients required for taffy so I improvised the ingredients and I also ended up overcooking the batch. I was amazed that it turned out tasting like a Heath bar. Haha. Great presentation, sir, and very easy to follow!

    My children are allergic to nuts. I am wondering if I can substitute pretzels for the nuts? Maybe use unsalted butter to counteract the extra salt of the pretzels?

    Howdy, came across the channel while looking for a great recipe for toffee. I am definitely going to try this soon. One observation, may have been mentioned before, but in the video you mention salted butter as you prefer the flavor, but in the description it shows unsalted. Not being picky, just thought you might like to know. Gathering ingredients today.

    Skip the corn syrup (replace with water.)
    This gives a better crunch.

    love almond Rocha! I have a couple of questions: I have tried a few different candy thermometers that did not give me the correct temperature , so most of my attempts to make almond Rocha have failed. Would you suggest a candy thermometer that works? Also, I live at 4,000 feet above sea level. Will the temperature be higher or lower when the toffee sets? Or is it the same temperature anywhere?

    Help! I made this toffee (tastes amazing) a few days ago, and I woke up this morning to little blooms!!! I don’t know what I did wrong??? I used Ghirardelli’s bitter sweet chocolate chips. I put them on a few minutes after I poured my toffee. I did notice the chocolate didn’t seem to set all the way even after several days.

    How much salt would I add if I only have unsalted butter? Also, wouldn't it be delicious to sprinkle a small amount of flaked sea salt on top with the pecans? I may try that on one side as a test. Side note: I love salted caramels. 😁 Subscribed!
