Its quite some time since i learned this in school (Around 30 years ago) so if im wrong im sure someone can correct me. Fallow is a term where a field is left alone, ploughed, but not planted so that it could restore its nutrients. Basically lets say you have 3 different crops and 4 fields, you would use something called crop rotation, so you would move each crop around to the next field and rotate the crops through the 4 fields each year, but one field would be left fallow for a year to replenish its nutrients. Im not sure its a thing anymore with all the chemicals we use now. But anyway thats what used to happen as far as i remember.
You are correct. In this game, you see the three colored (coloured) blocks next to each crop type. That represents three types of nutrients that each crop will deplete from the ground. The bigger the block, the more nutrients that are used up that season by that crop. Sunflowers use up the most and really need a fallow season right after. Leaving a field Fallow in this game restores the nutrients to 100%. So two example crop rotations over a four year period would be Potato-Wheat-Hemp-Fallow and Sunflower-Fallow-Sunflower-Fallow. I'm digging this series! Such an interesting game.
MrJohnMDay today we can use (not sure the english term) green fertilizer. Its a crop that help your field regenerate. All beans like crop are good for that.

I think the queues you can do on fields are for what you want each field to do each year - so you don't have so much seasonal micromanaging a la banished. Fallow also means leaving a field alone to replenish nutrients.

I did not know this because I don't do anything workwise with the farming industry, fortunately I read other people's comments and sometimes learn something. An Oxen is a castrated steer strictly for work purposes, such as ploughing. I have seen what other people do with this game, mostly order cows and usually one or two bulls, and maybe a couple of Oxen. By ordering just Oxen there is no way to produce more cattle, unless you buy them. Still very entertained though!!!

Remember when you said there was no point to having a cowshed worker with no cows? they would have stored water and cut/stored hay for the cows you eventually would have... instead, you had nothing for your cows when they arrived, and you see how that goes.

Could it be used as hay? Yes it could. Is it ever used as hay? No fir the exact reason you just said. After it is harvested the stems and stalks are used to make straw used for animal bedding. Way to valuable to make animal feed out of it. So no wheat is not hay.

(If it's literally the only plant matter available, it could be used that way. Not that it should be.)
