    Hello from an avid fan and fellow Austinite! I just turned 21 yesterday and began my whiskey journey at a local restaurant you may be familiar with called Jack Allen's kitchen. They only serve local Texan food and drinks, so I ended up going with a Balcones Baby Blue young bourbon as per your recommendation to start with something more friendly than a smokey scotch style whisky. I know my palate is severely underdeveloped but just for fun I tried to give it some tasting notes.
    Nose - wow that's sweet
    Palate - Holy shit that's sugar water. maybe some banana and vanilla but hot damn
    Finish - I think i just gargled liquid jolly ranchers. Where's the nearest CVS? I need a toothbrush
    I was delighted to come home, find your vault episode where you tasted it, and discover I wasn't far off the mark at all! I can't wait to get my hands on something a little bit more nuanced. I'm thinking of picking up a bottle of monkey shoulder or hibiki harmony soon.
    Time for a question! This is pretty specific to the Austin area, but where do y'all prefer to shop for whiskey? I.E. what retailer has the best combination of price and selection? Feel free to stick to national chains so it's more applicable to those who don't live here.
    Always excited to see a new video pop up each morning, and I'm looking forward to visiting the distillery as soon as it's up and running.

      My closest liquor store did not have the Hibiki Harmony unfortunately, so I ended up with a bottle of Monkey shoulder. Even after my first smell and sip I realized why people love whiskey so much. The difference between this and the Baby Blue is staggering, and from the nose to the finish it takes you on a journey. I was certainly not expecting to see that much of a difference not only between the two whiskeys but even between the nose and the palate of the monkey shoulder. I can't quite identify what i'm tasting on the tip of the tongue when I first take a sip, but whatever it is I love it. The dominant smell and flavor for me is vanilla, with undertones of orange and the wood I remember chopping for campfires as a kid. The finish is so smooth it almost wafts away. Just this bottle has gotten me excited to branch out and experience the whole range of flavors possible in the whiskey world.

    This is one of my favorites. A cool note about Chateau Montelena that was not in the video is that the winery is famous for having one of the winning wines at the "Judgement of Paris," in 1976, which was the first time that California wines were internationally recognized as being better than wines from France.

    Hey you MB's! Love the content. Every day after work I pour a glass of whiskey and watch your newest upload. Question.....can the taste of the whiskey change as the level of juice inside the bottle gets lower? Sometimes I feel like mine does....but maybe I'm imagining that. Love the vids!!

      It definitely can! It's usually not dramatic if it happens over months, but if you wait years, it can be very noticeable.

    I have a question regarding the 3rd gravitating body concept. Does this concept apply to blending as well? To create a magic and interesting blend, can you do that, with two cohesive malts and add a third that doesn't belong, but fits? Does it take at least three different styles, to create a unique blend, or are two enough? I'd imagine if you blend aberlour with laphroaig you can tell the two from each other, but if you add a dash of Talisker (my favorite distillery) you'd blur the lines between the two originals, and create new depths in the blend? Hope you can follow the idea!

    Sitting on the porch watching the rain and sipping away. I was wondering if there are foods that help to enhance the flavor profiles? As in, would a chocolate bar or an apple or some other snack add girth to a drink?

    I appriciate the attempt to pronounce Meath. You were really close - its more like "Me" "The", where the 'e' in "The" is soft, i.e not "the" pronounced 'thee'. When said quickly as one word it Meath with a soft ending (similar to 'with'). Few quick facts about Meath;
    It is a mainly suburban and rural county in Ireland, which often serves as a communter towns for people working in Dublin, less than an hours drive away. It is also home to The Hill of Tara, the historical location of the King (Rí - pronounced 'Ree') of Celtic Ireland and the home of Newgrange, a neolithic stone tomb famous for its 'chamber of lights' on the winter solstace and which predates the Egyptian pyramids (built around 3200 BC)

    You guys seemed to like the Brabazon more when y’all did the trio tasting with the Teeling a few months ago. I’ve had the same experience with whistlepig thought it was spectacular one night then good not great about a week later. Does that happen to y’all a lot?

    How long does an open whiskey last? I've heard that you shouldn't keep it more than a few months once open but with all those whiskeys on the wall that has to be false. What is a rule of thumb yall suggest?

      Yeah, it's unavoidable. We wrap bottle tops in perafilm to try to keep the evaporation to a minimum.

      If you drink a bottle in less than 3 months, you have nothing to worry about. A mostly full bottle will will last you years. half full at least a year. less than 1/4 and you have a few months before the evaporation becomes a problem.

    Have you guys tried out the Glenfiddich experimental series at all? I had the IPA and was fairly disappointed, only because I was expecting more Hops in the taste. Other than that it was decent bottle.

    What controls the alcohol level in whisky during the distillation and aging process? How do they get the bottles to the desired percentages?

      distillation is actually the process of evaporating alcohol out of a "beer" or low ABV wash. As you heat it up, alcohol evaporates before water, goes through a cooling tube, and condenses/collects in a container. it comes off the still high 80's ABV and drops over time as you strip the alcohol off finally ending somewhere in the 20's.
      The cuts are made on this spirit to collect the best parts, average abv is determined and water added before it goes into the barrel as needed to proof it down. After it's aged, you can add water again to get the taste where you want it before you bottle it.

    Teeling single malt is my go to whiskey when i'm relaxing. The only problem with it is, the bottle doesn't last long enough.

    After tasting the Barbazon I kept for myself, I agree. I love Teeling, and I think the Barbazon is great example of their experimental approach. But I gotta say - it's nowhere near the 1915 & 1916 we tasted!

    If your hiring i will work as your whiskey book keeper. i will work for meager drams and promise to do a good job. i promise not to steal any bottles..... only borrow for educational proposes.i will also keep a count of all the glasses that Rex has in his office and send him numerous hateful emails to return them to the vault cleaned dried and demand a tax with reoccurring interest of whiskey drams to replenish his moochyness. please hire me i will sleep in the corner of the vault.
