This is a whole new level of Education, I was just sitting reading some "food adjectives" until I found this video and "oh Woow" haha "Creamy, fruity,crunchy, tender."..every video is a "lesson" ,I love it!
I live about 3.5hrs away and have vacationed in that area all my 54yrs. I'm such a Seafood-A-Holic, I eat everywhere from Chef Keith's "Catch Restaurant" just East of I-40 on Bus17 (Market st.) and others a lil further south in the Monkey-Junction shopping area of Wilmington, all the way down the Crystal Coast through Carolina Beach and Kure Beach.
A lil trivia for ya. @ 29:20 OMG!! Mark got such a great drone shot!! Ok, Ya see that body of water?? That's Carolina Beach Lake. It's actually the closest natural fresh-water lake to an Ocean in the WORLD!! I think it's only 650ft/200meters from the Atlantic Ocean.
I love how Mark doesn't just eat the food, he celebrates the people and stories behind every dish. He helps make hard-working, passionate people, whose effort probably goes unnoticed by most, feel like rockstars. Such a great episode.

Soft shell crab is my favorite food and this is the greatest representation ever. Love soft shells piccata style with capers and lemon. As soon as the season opens I make sure to get some. I have to say I am jealous of Mark.

If you visit NC you may not want to leave. Moved to Raleigh from San Diego 8 years ago and it is a state that has everything and people are very welcoming and friendly. So many people have moved here from all over the country in recent years its incredible. Beaches, Mountains, community, and great food!

It's amazing how Chef Keith supports his own natural growers of the seafood world, and then for him to locally make dishes out of it. So, with that being said, it was the perfect name for his restaurant called "CATCH". I respect this because it's a beautiful thing. I also lived in Kinston, North Carolina for 7 years and traveled with my father to Wilmington one time maybe twice but didn't even know anything about this restaurant so I'm thinking about taking a trip.🙂🙂🙂

Being from Delmarva. Where we specialize in crabs every kind of way. I have never really liked soft shell crabs. But, after this video and watching Chef Keith's take on the soft shell. And learning about the way they are harvested. I have more respect for the dish. And I'm looking forward to giving them another try. Looking at it in a different light. From.a different angle.

As an NC native you def also need to see the outer banks when you come here as well (the chain of barrier islands protecting the sound from the ocean) Fun fact! Ocracoke island is on the 3 places left in the world where you can see truly wild horses frolicking on the island it’s very beautiful.
I’ve been to North and South Carolina and I love Charleston, but Wilmington is now on my list to visit. I love the NC BBQ especially the pulled pork with the signature mustard vinegar based sauce.

Being from Delmarva. Where we specialize in crabs every kind of way. I have never really liked soft shell crabs. But, after this video and watching Chef Keith's take on the soft shell. And learning about the way they are harvested. I have more respect for the dish. And I'm looking forward to giving them another try. Looking at it in a different light. From.a different angle.

I've never seen a fried full-crab sandwich like that, it looks amazing. Props to Mark for wearing his white shoes on that mussel island, doing it for the content.
Soft-shelled crab is spectacular. Probably my favorite type of crab. If you ever get the chance I recommend you try it.
@@slappytheclown4 I'll definitely try them next time I see them available. I'm so used to getting a bushel of Maryland crabs with Old Bay on a bed of newspapers with mallets and the whole deal, haha.

I’ve been to North and South Carolina and I love Charleston, but Wilmington is now on my list to visit. I love the NC BBQ especially the pulled pork with the signature mustard vinegar based sauce.
