How to make keto vegan cheese crackers (with oat fibre option)

    INGREDIENTS
    ---------------------
    (Makes about 30 crackers, 5cm diameter)
    Flour options and cold water required:
    100 almond flour (3-4 tbsp water)
    -----------------
    100g lupin flour (5-6 tbsp water)
    ------------------
    60g coconut flour (5-6 tbsp water)
    ------------------
    Or blend with oat fibre
    70g almond flour, 30g oat fibre (4-5 tbsp water)
    ----------------------
    70g lupin flour, 30g oat fibre (6-7 tbsp water)
    ----------------------
    40g coconut flour, 20g oat fibre (6-7 tbsp water)
    The following ingredients are the same for all flour options:
    1/2 tsp baking powder
    1 tsp Xanthan gum
    50g grated vegan cheese
    A pinch of salt
    2 tbsp oil (I use olive oil)
    Cold water (see quantity above)
    DIRECTIONS
    ------------------
    1. Mix all dry ingredients (bar oil and water and cheese) together in a bowl.
    2. Pour in oil and cold water and mix/knead till it forms a dough. Incorporate the grated cheese in the dough and mix well.
    3. Roll out the cracker dough with a rolling pin or tortilla press (regular cracker thickness). Cut out with a cookie cutter or a knife. And lay the cracker dough on a greased baking tray.
    4. Prick the crackers with a fork and brush a layer of oil on top.
    5. Bake in a 170C/325F preheated oven for 10-15mins on the first side, flip over, and bake the 2nd side for 5-10mins. Till both sides of the crackers are lightly golden brown.
    Leave to cool and enjoy x

    I made this twice last week. 2nd time I added nutritional yeast and used a mexican blend cheese. I also rolled it out thin and added sesame seeds to the top. It is fantastic!

    My favourite Heavenly Fan recipe to date! 💜 I KNEW it was going to be good so I made a double batch! I combine 1 recipe of the coconut flour with 1 recipe of the almond flour plus I also added a couple of tablespoons of nutritional yeast, a teasoon of onion powder plus some fresh rosemary. I brushed with avocado oil instead of olive oil. Adding different herbs and spices is going to be lots of fun ... I'm already thinking about Italian/pizza seasoning .. or chilli flakes .. the texture of the almond flour and coconut flour is delicious! I used the 5cm round cookie cutter but will try squares next time to save time. Thank you Fan for this delicious recipe that is going to be a staple! I'll be buying you a coffee 💜

    I made these crackers today and it was amazing! I used parmezan instead of mozzarella and wheat bran instead of oat but it tasted cheezy and great! It’s been a while since I had crackers due to diabetes and it feels so good to satisfy your cravings!

    I made the oat fiber option twice using first almond flour and the lupin flour ( sweet white) the second batch. First batch was my favorite tasting just like wheat crackers and the second batch was a little bitter by themselves but tasted fine with cheese slice. Will make again with spices.

    Not even keto but I was given coconut flour by a family member and I love to make my own snacks, so I tried this on a whim today and it worked so well!
    I used regular cheese and the oatfiber + coconut flour option and it's so good and made alot more crackers than I thought thank you!

    Wow, thank you for the recipe! I will try and replace the oat fibre with peanut powder. I love peanut flips, a German specialty, I bet your crackers will taste quite similar. I will give an update after my peanut attempt… 🥜

      @@pamelap.123 Unfortunately I have to report that it did not work! 🙁 I exchanged 30 grams of the almond flour for powdered peanuts and added some allulose. The dough was very sticky and the crackers did not get crunchy after baking, maybe because of the allulose. Anyways, one could not taste any peanuts in the crackers. Since they were not crispy at all, I have only eaten a few so far, might even throw them out… 😏

    Hi, Love your videos! I made some keto almond based flour crackers the other day ( not you recipe but will be trying it soon!) the edges came out a little too brown ( almond flour curse) and the middle was under cooked, so I cut the oven off and let it drop to about 250 degrees and left the undercooked crackers in there for a few hours to purge the moisture out and those came out pretty good! LOL kinda like a dehydrator method

    Just made these but I used regular mozzarella and used whey in place of water (leftover after making paneer, which is my staple). I missed a step (oil on baking sheet and on top of the dough) but they still turned out well. Looked a little dry because of this but enough oil and cheese in the dough they weren't dry and very good, very pleased that I've tried. Next time I will be sure not to miss the step. Usually not big on recipies and start doing my own thing but I need to add more variety in my food option, and in keeping plantbase + gluten free + low carb is not easy without relying on the channel like this. This was simple and very happy that I tried, no doubt I will make these regularly and I don't have to risk a discomfort by eating things that don't agree with the body, thank you Fan. 🙂

      I use the app Carb manager. You can create recipes using the exact barcoded scanned item you're using as ingredient and it will work out your exact macros per item. I love it. Super easy. This recipe depends MASSIVELY on which vegan cheese you use. Some solid ones are pretty low carb whilst others which have a lot of potato starch in are a bit heavier on carbs. Sorry this is so long after you asked the question. X

    hello. Im looking forward to trying this recipe in the next few days. Im wondering if you have experimented with freezing some of the dough ( for later baking..i live alone and dont want to have a lot of crackers sitting about ) OR experimented with freezing the baked crackers. Almond flour is expensive and i am hoping someone else has already tried freezing.

    Might I be able to substitute parmesan cheese for the vegan cheese? And rather than baking them in the oven, what do you think of putting them in a food dehydrator for 12 hours?

    Great taste. Not as crisp as I'd like, but I only had regular cheddar. I didn't leave them in the oven to cool completely, but will try that next time. Will definitely be making them again.

    Great recipe! Thank you! I added garlic & onion powder, and a dash of monk sugar to give it more of a standard cracker taste. I also prefer mixing it with melted butter (I'm veg but not vegan).

    Thank you so much for this recipe. I made them last night-they are great!! (The only thing I did differently (because I’m lazy lol) was that I rolled out the dough into 1 big rectangle and cut straight lines for square crackers.) Btw, do you think the recipe would work using bamboo fiber in place of the oat fiber?

      Another creator that I follow “Cooking With Mel” says that you can replace Oat Fiber with Bamboo Fiber. It is 1 to 1.

    Can I use finely grated mozarella? If not then hard parmesan? I'm not following a vegan diet.

    I wish you would have not said oat, fiber because they are nasty.. I just finished them tonight. The only way I might be able to eat them is with a dip but by their self they are nasty… if I would have use just almond flour they probably would’ve turned out good
