- Join Mama Lai and I as we cook Buddha’s Delight (Lo Han Jai; 罗汉斋)! This is a vegetarian Chinese dish. Traditionally, it was eaten by Buddhist monks, though overtime it’s become a Chinese household staple- especially at Chinese New Year. There’s a lot of variations in this dish, as you can include a variety of ingredients. We show you how we do it in this video. Enjoy!

In true Chinese Mom fashion, Mama Lai doesn’t have a recipe- you have to be there in the kitchen to watch and learn!. Mama Lai freestyles this recipe and makes things up as she goes.
The key to this recipe is the red fermented beancurd (Nam Yu/ 南乳). Basically, you put oil in the pan. Wait til it's hot, and then add the ginger. Wait a few minutes. Add the red fermented beancurd. And then add garlic. That's the base that creates the yummy flavor. And then add the ingredients as you go. First stir fry the dried ones, then the canned ones, and then the fresh ones. Do this in batches. And when you do a new batch, start with the base of the ginger, red fermented bean curd, and garlic.
Add other ingredients as you go. A bit of this. A bit of that. Things like oyster sauce, rice vinegar, sesame oil, etc. Another key is to sprinkle in some brown sugar here and there to even out the saltiness.
Feel free to look up this recipe online. Other cooking blogs have it written, though you can always make your own variation.

Red dates - hong zhao
Tofu puffs
CANNED INGREDIENTS:
Baby corn
Water chestnut
Bamboo shoots
Fried gluten
FRESH INGREDIENTS:
Carrots
Napa cabbage
Snow peas
Lotus root
Garlic
Ginger
SAUCE
Red fermented beancurd (Nam Yu/ 南乳)
White fermentation beancurd
Sesame oil
Soy sauce
Dark soy sauce (Lo Chau)
Oyster sauce
Rice vinegar
Brown sugar
Chicken broth

Every family has a different Jai recipe. Jai is a daunting dish to make correctly and it’s hard to downsize the recipe for two.
When baking, I weigh and measure, but I usually eyeball when I cook. I love how Mama Lai cooks.
