Hi from Queensland. This looks like just what I need asap!! Is it stable enough for a tiered chocolate cake so it doesn't start to melt in humidity please? Also should I use Copha and butter or just butter? Thank you for the real time tutorial. 👏🏼👏🏼👏🏼
Hi Ruby! The cake cream is amazing! It is very stable and will work great for you, we LOVE it! Like all things, nothing is humidity proof unfortunately, however the cake cream is quite stable. We would still recommend keeping the cake in the fridge until serving as the weather/humidity can defiantly melt the cake cream just like any other icing if left out for long periods of time. We recommend using butter with the cake cream as per the instructions on the recipe 😊 You could always make your own swiss meringue buttercream from scratch and add in Solite/Bakels shortening rather than butter to make it more stable as well if you had a favourite recipe.
