Perfect Pork Loin Wrapped in Prosciutto with Roasted Potatoes

  • Even picky eaters love this dish. This roast is luscious enough to serve for special dinners, and easy enough to make for weeknights. The recipe is below. Enjoy!
    Pork Loin Wrapped in Prosciutto with Roasted Potatoes
    Serves 4-5
    Preheat oven to 350℉
    2- 1/2 pounds boneless pork loin roast
    1/4 pound prosciutto (pancetta works too)
    Salt and pepper to taste
    5 to 6 sprigs of rosemary
    1/3 cup extra virgin olive oil
    3 medium cloves of garlic, chopped
    2 pounds of Yukon gold or russet potatoes, peeled and cut into in large pieces
    Season the pork loin by drizzling with extra virgin olive oil, salt and pepper. Next, mince a teaspoon of fresh rosemary needles and 2-3 cloves of garlic. Distribute the oil, salt, pepper, rosemary and garlic evenly over the pork loin. Place Kitchen twine on your work surface. Next, place the prosciutto over the twine, place the pork over the prosciutto to completely cover the roast and secure with kitchen twine. Tuck the rosemary sprigs under the twine.
    In a large casserole or roasting pan place 3 tablespoons of the olive oil and, over medium-high heat, brown the meat on all sides.
    Meanwhile, in a large bowl season the potatoes with salt and pepper and any remaining garlic.
    Add potatoes to the pan containing the pork roast. Toss the potatoes every 20 minutes to brown them evenly.
    When the internal temperature of the roast reaches 135℉ (about 40 minutes), remove to a serving platter, remove the kitchen twine and tent the roast with foil. Remove pork to a platter or sheet pan. Cover the roast with a piece of foil large enough to cover the roast. Allow to rest for 15 to 20 minutes before serving.
    Serve with potatoes and au jus.
