    Ingredients for the Roast Potatoes:
    2 1/4 lbs (1kg) floury potatoes - such as Maris Piper or red-skinned Rooster potatoes
    1/2 cup (120g) lard or duck fat (use vegetable oil instead for a vegetarian version)
    1 tsp Maldon salt
    1 tbsp fresh thyme leaves

      Me too! And while shaking the potatoes I add oregano, garlic powder, onions power, paprika and thyme. That really makes a difference as well!

    I don’t understand why this lady is getting so much bashing on her potatoes. I’m a cook and not a chef but understand how food works when combined together. I’m Eastern European and grew up on Lard, goose and duck fat as well as bacon fat. My mom cooked like that from back home. I live in Canada and people don’t cook like that. Olive oil is the healthiest but has a high smoke factor so I add butter as well. I came to her platform cause I love crispy roasted potatoes and not always turns like so. I like that she preheats her tray with lard or whatever fat you want then put your potato into tray. Restaurants don’t season potatoe with salt when it’s deep fried or put into lard cause it will spark everywhere and it’s actually softer or soggy potatoe, so I’m going to try not salting while baking. This is her platform and she can do as she pleases and if someone does not like it close it and move on. Some people like being critical but not knowing how to cook. Get your own TH-cam Chanel and see if you can do better. Cooking and talking and watching at the camera and try not to mess up, what do you think can you do that including me. It’s expected to get criticisms but do we as people have to be so mean. This is not politics. You did good dear lady . I wanted to try making cabbage rolls eastern Europe’s way but need a good camera and good provisions. 👏🏼🙏

      It's a shame that many people don't realise how stable and healthy lard, goose fat, and tallow are. We've been brainwashed into thinking that man-made seed oils are good for us, when in fact the opposite is true.

    Great roasties! One thing I add, or at least do, is to leave the potatoes to cool a little after par boiling and shaking. It removes the steam and hence water for an even more crispier roasties with either lard, olive oil etc. Thanks for all you videos!

      I do this too! What I seem to do differently though is salt and pepper while cooking or just after. Because like fries I want whatever I put on to stick to the potatoe. It seems like other people aren't concerned with that

    I also like to add a dash of baking soda in the water while the potatoes are boiling-- this disperses on their exterior, and gets them to brown more quickly when you throw them in the oven!

      ​@@ChubiceOfChunckle20a small amount, not even a teaspoon. It does a similar job that pectolase does to fruit. Semolina is good to add also when tumbling before roasting.

      You think the carbs/sugars in the potatoes are healthy? And lard is far more stable - doesn't oxidise - than any seed oil.

    I used olive oil for a healther option and they turned out really well.
    Do rinse your potatoes once peeled and season with salt and pepper before putting in the oven.

      Olive oil is not good for high heat. Prefer RICE OIL.

    Just made these and had to grab my phone ( while still eating them). They are sooo good. I used Canola oil because that's what I had. The crunch then the soft surprise in the middle, perfection. Also salted them in the colander with a piece of butter , stirred it around😋.

      poly-unsaturated vegetable oil is hydrogenated plant oil more similar to diesel fuel, it kills your cells via lowering their ability to transpire oxygen through their walls. A pretty important function.

    No salt added in the water when boiling definitely not right I’m afraid always add salt to the water before boiling
    Plus once boiled and fluffed up pepper and a bit more salt
    I always put butter and olive oil to heat in the oven gives the patatoes and amazing Flavour and sprinkle matzo meal over them before going in the oven

    Didn't have lard so I used a tablespoon of butter, three to four tablespoons of olive oil and three tablespoons of garlic butter/ lard.
    Add a pinch of dried oregano, pepper, paprika, onion flakes, garlic power, salt, rosemary and thyme.
    First I under cook the potatoes in water then drain.
    Then I added all the ingredients.
    I mixed the dish in the oven half way through about 15 mins and cooked on broil for another 20 minutes while stirring three times.I added three more tablespoons of oil.
    It had the wow factor.
    Nice and crispy and extremely flavorful.

    These look like the potatoes we used to order at a restaurant we used to live near in LA. Definitely will add a squeeze of lemon and minced raw garlic to them to try and fully replicate.

    Boil them until just about to break. Pop them in the fridge for an hour, then put them in the oven and turn twice. I use groundnut oil. My late mother used beef dripping and they were delicious.

      As an englishman I always wonder what an english accent must seem like. As an essex guy I think my voice would sound nothing like a Geordies or Scousers but american would go "english' i guess we're the same with americans apart from OTT Boston accents or southern I'd just say america

    One really important thing- the baking tin MUST be well seasoned. A lot of the crisping comes from thermal radiation from the hot tin. If it's shiny, shiny metal, that doesn't radiate heat at all well. You need a properly seasoned black or deep brown surface from dry baked-on oil. It will kinda work if it's shiny, but it won't be nearly as good.

      @@xorosho2013 I checked and my sources say that PTFE has an emissivity coefficient of 0.92, whereas oiled seasoned pans should be about 0.95, so it's nearly as good.

    Lard is the correct way, but the traditional method uses enough lard to half fill a medium pot. You then deep fry those part boiled potatoes to make the tastiest, crunchiest roasters you've ever tasted. The lard will solidify once it cools, then you can re-use it for another day. Stunning chips too.

    I add a chicken stock cube to the water to boil the potatoes,it gives them a delicious flavour!

    Amazing! Thanks for doing the conversions, it’s time saving & considerate of you! I have trouble getting Lard, when I see it, I’ll get it & freeze. There’s no substitute for these potatoes & for Yorkies!

    I watched to see how your method differs to mine. Not greatly. I also use Maris Piper, peel and cut them to size. However, rather than boil them, I part cook them in the microwave, covered for 5 minutes, draining half way through. I use beef dripping in the oven rather than lard, but timing/turning is similar. I've not tried the shaking though. Must try that.
