I made these a couple of days ago and my husband could not stop himself from eating almost all of them. A few changes I made (some of them I'm not sure if Jamie did but just didn't mention): - I used vegetable oil instead of olive oil because the latter doesn't do too well with high heat - I preheated the oil in the oven for about 10 minutes before putting the potatoes in - I made sure to get some of the preheated oil on all surfaces of the potatoes before they went in - I turned them over halfway through (before mashing them slightly as Jamie does) They were seriously the best roast potatoes I've ever had in my life. Something my mum used to do was gather up the pieces of potato that fall off when you shake them (so shake them in a pan instead of a colander) into a flat-ish ball, and roast that along with the whole potatoes. You get a really really nice chef's treat ;) Also, if you're in America and don't have access to Maris Piper potatoes, Idaho Russet Burbanks work really well.

My husband isn't a big potato fan, but kept coming back for more. He said "I've never tasted roast potatoes this good before! What did you do?" I said "I listened to what Jamie Oliver said to do, and I did it!!" This is the new staple/go to potato in our house forevermore. So much gratitude to you Mr. Oliver; my food guru. X

Love this! Best thing about this is the technique of squashing it down for more contact with the pan, I think that's what makes this perfect. You can put whatever type of oils you want, but the squashing thing makes all the difference!

I spent three weeks ministering in Kenya back in November and if you order roasted potatoes this is what you get, of course a lot in Kenya still has the British influence. We had these potatoes along with a venison tenderloin. I used the Rosemary and Sage as well. It was wonderful! Here in the United States we have a potato called the Yukon Gold which is really wonderful, and worked really nicely for this recipe!

I have been making this recipe for years and I absolutely love it. My dad was watching Jamie Oliver as I was growing up and today he influences my cooking a lot. He inspired me to plant my own herb garden. I LOVE IT!
Well I tried this today, it's great! And you don't have to use any herbs or spices actually to make it delicious. First boil them 10 min, then put it in the form with oil in it and turn them few times, use salt and pepper, then put in the oven for 20 min, then turn potatoes on the other side to make that crunchy surface on both sides (cuz it wasn't as the Jaimie's one if you don't oil it all over the place). Wait another 10-15 min and they are ready. Next time I'll try to cook it on the foil to keep the dishes clean :D

I've already tried this recipe with butter and it was delicious. Our friends loved it and what I loved the most is the crispiness of the potatoes combined with the herbs makes it super tasty! Definitely my way now on to bake potatoes. ❤

Made these last night with the exception that I used peeled baby red potatoes and lemon juice instead of vinegar, and they were incredible. Possibly the best potatoes I've ever had. The only complaint I had was that I didn't have more.
since i live in dubai we dont have a lot of options when it comes to potatos so i just picked what ever available and i cooked it using this recipe ! i couldnt get the same golden crunch but god the taste is beyond amazing i added minced garlic as a personal touch but the but rosemary taste gave it a whole different taste !! defiantly going to check the other recipes !! amazing u never u turned us down !!
I add grated garlic and a variety of seasoning to the oil or butter in which the potatoes roast. You'll have that wonderful crunch along with that almost ecclesiastical explosion of flavour in your mouth.
Tried it this morning with my toaster oven, it was only a bit crisp (probably would've been better if I used the oven), but garlic, lemon, and paprika worked really well. Good recipe.

Just like you Jamie I also boil the potatoes just like my Nan always did for blindingly good roasties, makes a world of difference to the potato being fluffy and crisp. Have you done a video on making Yorkshire puddings? A roast beef dinner isn't right without some of those.

NOT true for the olive oil. it endures temperatures till 210C and it doesn't release any cancerous stuff, so olive oil >>>> all the other ones.
Refined olive oil can be used at temperatures of up to 210 degrees Celsius. It's extra virgin olive oil that has a low smoke point.
