    I went to Xi'an Eatery with my daughter for Father's Day. We went back to Burwood today for lunch at a different restaurant.
    This vid is local for me. I grew up in Rooty Hill and now live around the corner from Doonside.
    I also went to a Phillopino bakery today for the first time and an ensaymada👌

      I grew up in Rooty Hill too, lots of Filo's in Rooty Hill, Plumpton, Kingston Estate, Oakhurst. Good times playing basketball in Kingston. Great memories for me. No longer there but now around the Pendle Hill area.

    the highlight of lechon is the crispy skin.The version of lechon in my city we use gravy sauce made of liver or we use mang tomas sauce instead.

    Lime, lemon, or the more popular in the Philippines, calamansi, usually comes with these Filipino dishes because some dishes may become a little bit salty for others, so squeezing some will naturally tone down the saltiness. Depending on who eats, they can adjust it to how salty they want it to be. However, if it's not available, rice is always to the rescue, they blend with the saltiness, so yeah, we love rice😂 (But many Filipinos simply love the sourness, no reasons added😉)

    You should try pork sisig and grilled pork in Lazza in Marrickville and Beef Kare kare with steamed rice in Inigo’s in Bexley.
    I like the tinapa rice too but this is like salted fish rice.

    Filo Lasa in Parklea Markets is a true hidden gem!! I reckon it tastes even better than the other known filo restos in Sydney! Defs a must try 🙌🏻

    I suggest you try the best burger in Western Sydney located in Marsden Park Business Park, called "Burger Point" with a filipino taste, be early because it is always a long queque, they serve chickens wings as well

    Great now I want pancit palabok. The orange sauce is basically like a shrimp/pork based sauce with annato powder for colouring, thickened with slurry.

    In the Philippines we usually cook lechon from prep to actual cooking in less time and we cook the entire pig. Usually the pig is slaughtered early in the morning before the sun rises and stuffed with spices and rest for a few hours. They’ll spit roast it so it will be ready by lunch or dinner. They also wipe the skin with a mixture of coke, soysauce and spices. They say it’s to make it crispy but idk if there’s some truth to that. Gives the pig a brownish color before roasting though.
    The advantage of the normal method is you’ll experience the authentic lechon skin. Its very brittle unlike the usual lechon they sell outside the country. The advantage of how sydney cebu lechon the flavor permeates through the whole piece of meat. In the ones where the whole pig is roasted the parts away from the belly tends to be bland specially in really big pig.

    Starlight bakery is super near me, like 2mins drive haha. A Team near Mama Lor I reckon is a tad better. Sydney Cebu lechon is legit and true to the cebu style of lechon.
