Dill Rice with Black Eyed Peas & Chicken (LUBIA CHESHM BOLBOLI) - Cooking with Yousef

  • Hi friends, today we are making something extremely delicious and a joy to make. Colorful, tasty, and a real treat for family and guests. You have lots of ways to make this your own, so feel free to add more or less of anything, use lamb instead of chicken or even add raisins, etc. The dish is called Lubia Cheshm Bolboli). (لوبیا چشم بلبلی) which is Dill Rice with Black Eyed Peas.

    Ingredients List:
    2 1/2 Cups Rice
    1 1/2 Cups Black Eyed Peas
    One Bunch of Fresh Dill 100grams
    2 Tablespoon of Dried Dill (or you can use all dried or all fresh)
    4 Quarters of Chicken (leg and thigh but its up to you)
    2 Small Onion
    3-4 Cloves of Garlic
    1 Teaspoon Salt
    1 Teaspoon Black Pepper
    1 Teaspoon Turmeric
    2 Bay Leaves
    2 Small Cinnamon Stick
    Liquid Saffron
    Cooking Oil

    Hi Chef Yousef!
    I am a subscriber and I love your recipes.
    In my diet, I need to eat whole carbohydrates. This means I can eat brown rice, but not white husked rice. Is it possible for me to use brown basmati rice without the husks removed, and make traditional Persian rice according to your recipes?
    Should I make any changes? Will it still taste good?

      Same process, should work ok. I’ve never tried mixing it with traditional Persian food so I can’t comment on that combo but I say, go for it!

    Wouldn't be better not to rinse the rice with dill n peas
    To save the taste and aroma?
