Southern Smothered Chicken & Gravy

  • Boneless chicken thighs floured and browned off. A rich, flavor pack onion gravy is made with the browned flour bits. Chicken is braised in the gravy until fall apart tender.
    Remove the bone from four to six skin on chicken thighs.
    Season with a chicken dry rub of choice.
    In mixing bowl combine and mix well the following:
    1 1/4 cup all-purpose flour
    1/2 Tsp salt
    1/2 Tsp black pepper
    1 1/2 Tsp Garlic Powder
    1/2 Tsp Onion Powder
    1 Tsp Paprika
    1 Tsp Oregano
    1/2 Tsp Chili powder
    Dredge the seasoned chicken thighs in the seasoned flour mix.
    Heat a couple of tablespoons of high smoke point cooking oil in skillet or large pot.
    Lay thighs down, skin side down and brown the flour a few minutes on each side over medium heat.
    Once skin side is browned well, turn and brown the other side.
    Remove chicken thighs and set aside.
    Pour off all the oil, leaving behind a few teaspoons and any browned flour bits.
    Toss in a medium onion, rather roughly cut. Hit with a pinch of salt and pepper. Sautee a minute or two.
    Add two cloved chopped garlic, slide onions and garlic to the side and add two tablespoons of butter.
    Add two to three tablespoons of the seasoned flour to the butter, combine.
    Add a pinch of red pepper flake.
    Allow flour to cook a minute or two.
    Add two cups of chicken broth or stock to the roux and onions, whisk well to combine.
    Bring to a gentle simmer, mix to ensure roux is well incorporated with the broth.
    Add 1/2 cup heavy cream, stir into the broth/roux mix. Allow to come up to a gentle simmer.
    Taste and adjust seasoning if needed.
    Lay chicken bank into the gravy, spooning the gravy on top of the thighs.
    Cover and bake 400 for about an hour.
    take out after 30 minutes and move the chicken around a bit and spoon the gravy on top again
    Allow to cook a few minutes, sprinkle with some parsley. Enjoy

    Love the taste test! Going B ex-tree good I know it! This gets a regular south Louisiana regular folks approved approval! Can’t wait to cook this all the way down to the squash. Was planning a family thanksgiving at the camp (90 people in my family) but it fell through cause lots of them going out of town to be with their own children. Not a problem though cause now I wonder what was I thinking! Lol! That’s a lot of cooking! Hope Tennessee valley is doing good also!
