You could add any kind of cheese. Also before battering put in fridge for about 30mins and it helps them from falling apart

Two suggestions
1. Instead of corn starch try superfine semolina (it's a healthier option) If you have coarse semolina put about 1/2 cup in a dry grinder and run 3-4 short pulses.
2. Try using finely chopped Fenugreek/Dill Leaves.
3. For the vegetarians instead of egg dip the potatoes in thick yoghurt before coating with whole wheat bread crumbs.

Когда в школе учились, то через дорогу был магазин, около магазина постоянно бабушка продавала пирожки. С картошкой, капустой, повидлом и сгущенкой. Окна класса выходили как раз на этот магазин. Мы постоянно смотрели когда придет бабушка, как только она приходила, отпрашивался кто-то один из нас и шел покупать почти на весь класс (предварительно скидывались все одному человеку). У бабушки было две большие сумки и они опустошались буквально за 5 минут. Потом учитель это узнала и просила ей тоже покупать пирожки. Даже один раз сама бегала за пирожками на весь класс пока мы писали контрольную))) Вот так!))) Si chiamano CROCCHE', tipicamente siciliane: ma si friggono completamente immersi nell'olio, in apposita friggitrice. Di solito hanno forma cilindrica non più di 2 dita
